Brooke & Jeanna in the Kitchen - Salmon Cakes

Lemon Garlic Salmon Cakes are an easy-to-make recipe that is full of so much delicious garlicky, lemony flavor. These patties can be enjoyed as an appetizer or the main dish.

Lemon Garlic Salmon Cakes

salmon can use canned (see notes))

salt

pepper

breadcrumbs

paprika

shallot (* minced)

garlic (* minced)

lemon zest

eggs

extra virgin olive oil

Preheat oven to 425°F.

Season the salmon fillets with salt and pepper and place in a baking dish. If there is skin, make sure to place the fillets skin side down.

Bake for 10-15 minutes, or until the salmon easily flakes apart with a fork.

Shred the salmon and place in a large bowl with the breadcrumbs, paprika, shallot, garlic, lemon zest, and eggs. Mix until well combined

Form 12 evenly sized salmon cakes by taking a handful of the mixture and squeezing it into a tight ball. Flatten slightly until it's about a 1/2-inch thick and shape the edges into a circle.

To cook, heat the olive oil in a large skillet over medium heat. Cook the salmon patties for about 4 minutes, then flip and cook for an additional 3-4 minutes or until fully cooked through.

This Salmon Cakes recipe is made with simple pantry ingredients like canned salmon, mayonnaise, and breadcrumbs. They're pan-fried until golden and crispy on the outside and tender in the middle. A quick and easy lunch, appetizer, or weeknight dinner.

Salmon Cakes with Canned Salmon

can salmon (drained well)

mayonnaise

Dijon mustard

breadcrumbs (plus more if needed)

garlic (minced)

onions

black pepper

oil (for pan-frying)

chives (for garnish)

Drain the salmon and add it to a large bowl, then break it apart with a fork until evenly crumbled. Discard any large pieces of skin or bone if preferred.

Stir in the mayonnaise, egg, Dijon mustard, breadcrumbs, garlic, green onions, salt, and pepper. Fold everything together just until the mixture is evenly blended and holds together when squeezed.

Scoop out portions of the mixture and shape them into 8-10 evenly sized patties.

Heat the oil in a large skillet set over medium to medium-high heat until the oil shimmers. Arrange the salmon cakes in the skillet and cook for about 3-4 minutes on each side, or until deeply golden and crisp. Work in batches if needed to avoid crowding the pan.

Remove the salmon cakes from the skillet and garnish with chopped chives. Serve immediately with lemon wedges and your favorite dipping sauce.
