This chicken salad is so good! I added slivered almonds for an extra bit of crunch, and since we are a dairy-free household (mostly), I used vegan mayo.

I made mine with red apple, apple cider vinegar and kewpie Mayo! It was very delicious thank you for this recipe!

"Delicious!," said my wife, and she's very hard to please. I left out the mustard because I'm a bit picky myself. Dill was dried, not fresh. Sorry.

Grilled Cuban Sandwich in a Hot Dog Bun

Cover the inside and outside of the buns with the mayonnaise. Fill the buns with the remaining ingredients. Press lightly on the sandwiches to close them.

In a cast iron grill pan over medium-high heat, cook the sandwiches on both sides until the cheese has melted and the buns are golden. Serve immediately.

Afternoon Tea Sandwiches (Cucumber, Egg and Cress, Smoked Salmon)

½ an English (hothouse/seedless) cucumber

white sandwich bread

Dijon mustard OR curry powder ((optional))

(5 ½ ounces) cream cheese, (at room temperature)

red onion

capers, (drained and finely chopped)

lemon juice

whole wheat (wholemeal) sandwich bread or pumpernickel bread

(7 ounces) sliced smoked salmon ((preferably Scottish style))

Peel and thinly slice the cucumber using a mandoline or sharp knife. You’ll need 36 slices. Place cucumber slices on a paper towel, lightly salt the cucumber, and top with another paper towel. Let stand for about 20 minutes to allow excess moisture from the cucumbers to be absorbed.

In a small bowl combine soft butter, herbs, and lemon zest until smooth.

Spread a thin layer of lemon herb butter on all 8 slices of bread. Top 4 slices of buttered bread with 9 cucumber slices each in even rows. Top with the remaining slices of bread, buttered side down.

Use a serrated knife to cut off the crusts and then cut the sandwiches into 4 squares/quarters, 3 rectangles/fingers, or diagonally into 2 triangles/halves.

Cucumber Tea Sandwiches:

Mix/mash together the egg, mayonnaise, mustard or curry powder if using, and salt and pepper. Divide the mixture over 4 slices of buttered bread. Top with cress and the 4 remaining slices of bread, buttered side down.

Egg and Cress Tea Sandwiches:

Combine the soft cream cheese with the onion, capers, and lemon juice and zest until smooth. Spread a thin layer of the onion-caper cream cheese on all 8 slices of bread. Top 4 slices of bread with sliced salmon, then cover with the remaining slices of bread, cream cheese side down.

Egg and Mushroom Open-Faced Sandwiches

1 (14 g) dried mushrooms

chicken broth

1 (300 g) ricotta cheese

(10 g) chives, finely chopped

lb (225 g) cremini mushrooms, cut into thin wedges

2 thinly sliced

olive oil

1 (14 oz/398 ml) lentils,

tsp (2.5 ml) balsamic vinegar

In a coffee grinder or small food processor, chop the dried mushrooms to a fine powder. Add the chicken broth. Set aside.

In a bowl, combine the ricotta with the chives and parsley. Season with salt and pepper. Set aside.

In a skillet over medium-high heat, brown the cremini mushrooms and shallots in 2 tbsp (30 ml) of the oil for 5 minutes. Add the lentils and broth mixture. Bring to a boil and let reduce until almost dry. Add the vinegar. Adjust the seasoning.

In a non-stick skillet over medium-high heat, heat the remaining oil. Carefully crack the eggs into the skillet and cook on one side only for 2 to 3 minutes or until the whites are cooked and the edges lightly browned. Season with salt and pepper.

Spread the ricotta mixture over the bread slices. Top with the mushroom mixture and an egg. Serve with a green salad, if desired.

This quick and easy egg salad is perfect for busy days or whenever you need a fast, inexpensive, delicious, and filling meal!

Easy Egg Salad

Add the eggs to a saucepot and cover with water. Place a lid on the pot and turn the heat on to high.  Bring the water up to a full boil. Once it reaches a boil, turn the heat off and let the eggs sit in the hot water (lid on) for 12 minutes.

After 12 minutes in the hot water, transfer the eggs to an ice bath or run under cold water until cool. Peel the eggs then chop them into ½-inch pieces.

Add the chopped egg to a bowl along with the mayonnaise, Dijon, relish, lemon juice, salt, and pepper. Stir to combine, mashing some of the egg yolk into the dressing as you stir.

Taste the egg salad and adjust the ingredients to your liking. Serve immediately or refrigerate until ready to eat.

Scrambled Eggs on Toast

sourdough bread (whole wheat or part whole wheat)

full-fat milk

Remember to toast the bread while the eggs are cooking, so that it is ready but still hot by the time you have cooked the eggs.

Break the eggs in a bowl, add the milk, salt, and pepper. Whisk very well to blend the eggs.

You can add the chopped herbs now or sprinkle them on the scrambled eggs before serving.

Heat the butter in a non-stick pan on medium heat and tilt the pan to coat its bottom with the butter.

Reduce the heat to medium-low.

Pour the eggs into the pan. Heat the eggs very slowly, if the temperature is too high the protein will toughen, the eggs will lose their creaminess and become dry. Leave them untouched for about 15-20 seconds or until very slightly set on the bottom.

Use a spatula to move the eggs across the pan, so that they will cook evenly into large folds of egg.

If using herbs and/or cheese you can add them now.

Move the eggs in the pan for about 1, it depends on the heat. The eggs should be mostly set, yet still slightly moist and not dry.

The eggs will continue setting slightly in the pan and on the plate, so keep that in mind as well.

If you use more than four eggs, the eggs will take longer to set. Just aim for the scrambled eggs to look like in the pictures, large set fluffs, that are still shiny with moisture, but no pools of uncooked eggs.
