Crisp colourful veggies and beans are tossed together with some serious flavour from Jalapeño peppers, lime, cilantro and cumin!

Santa Fe Salad

olive oil

limes

cilantro

tsp cumin

salt

(19 ounces) can black beans (rinsed and drained)

red bell pepper (diced)

red onion

(12 ounces) kernel corn (I used fresh cooked corn from cob)

jalapeño pepper (seeded and finely diced)

In small jar mix together oil and lime juice.

Add cilantro, cumin, salt and pepper and shake well.

Mix together black beans, red pepper, onion, corn and jalapeño pepper.

Toss together dressing and salad ingredients.

Serve this crowd-pleasing, fresh, vibrant, and healthy Santa Fe Salad for your next special occasion, lunch, or a quick and healthy weeknight dinner.

extra-firm tofu (drained)

Bragg's liquid aminos (or Tamari, or coconut aminos)

cumin

onion powder

paprika

garlic powder

oregano

Cayenne pepper

Romaine lettuce (chopped)

can of black beans

avocado (chopped)

cherry tomatoes (cut in halves)

sweet corn kernels

red bell pepper (chopped)

red onion (chopped)

cilantro leaves (chopped)

lime (juiced)

maple syrup

onion

garlic (minced)

Place the tofu cubes in a large bowl. Toss them with Bragg's liquid aminos, cumin, paprika, garlic powder, onion powder, dried oregano, and cayenne pepper. Allow the tofu to marinate for at least 10 minutes.

Heat oil in a large, non-stick skillet over medium heat. Add tofu cubes, and cook until brown and crispy on all sides. Turn off the heat.

To make the dressing, mix lime juice, olive oil, maple syrup, cumin, green onions, garlic, and salt in a bowl or jar.

To assemble, place chopped lettuce on the base of the serving platter. Top with black beans, avocado, cherry tomatoes, bell pepper, onion, and cilantro. Drizzle with lime dressing right before serving. Enjoy!

Wow! I don’t know why I’ve never thought of adding tofu to a taco salad! This recipe is so delicious and normally we would load up on cheese and sour cream... not necessary with this flavourful recipe!! Thanks for sharing!

This is sooo good, and the tofu is the star! I am going to start making batches of it just to keep in my fridge to snack on.
