Cream of Sardines with Smoked Salmon and Capers

canned sardines in olive oil

Laughing Cow cheese

extra virgin olive oil

mineral water

mustard

salmon

capers

shrimp (optional)

red piquillo pepper (sliced)

baby spinach leaves (fried)

pickles (sliced)

Purée all ingredients (less oil) until smooth.Then add a little olive oil (as you would make a mayonnaise)Strain well and refrigerate for 2 hoursServe the chilled cream pate within an empty sardine tin or a small decorative dish.&nbsp;Garnish with decorative ingredients and serve accompanied with small bread toasts.&nbsp;

Sardine Pâté (Paté de Sardinha)

sardine

unsalted butter,

½ medium onion, diced

parsley,

lemon

salt & pepper,

tomato paste (optional)

Add all the sardines minus the olive oil from the can in a food processor. Set aside olive oil in the can.

Add juice of lemon, diced onions, chopped parsley, butter cubes, and tomato paste (optional) to the food processor.

Pulse for a few seconds until roughly combined, add a spoonful of olive oil from the can and continue to pulse. Pause and taste the spread, then add salt and pepper to taste. Add more olive oil if the consistency is too thick. Keep pulsing until you get a smooth texture adding more olive oil as needed.

Serve with toasted bread or crackers.
