Spicy Sausage Pasta

olive oil

lb smoked sausage

onion

chicken broth

(10 oz) can Ro-Tel tomatoes and green chiles, Mild

heavy cream

oz penne pasta

Monterey Jack cheese, shredded

Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.

Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.

Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted, spotty brown, and bubbly.

I found this on pinterest a few years ago and it easily became a favorite meal in our family. Its quick to make I love it is a one pot wonder. I always have to make a double batch bc it is that popular and just that good. Its what's for dinner tonight and I always suggest it when people say they are in a rut and need something new. This is my second recipe review EVER and I am 56yrs. old. This was a VERY tasty quick, one pot meal that I made today. I followed this recipe exactly as written and it turned out mighty tasty for sure. My only problem with the whole thing was that it wasn't spicy enough for me. However, this  is SO versatile and excellent as a base recipe . After my first bowl I sprinkled some Tony Chachere's Original Creole seasoning on my second bowl and it was even better. Of course I will be making this again but I will add peas, broccoli or green peppers to it for a veggie flair as well as my Tony C . for an added kick. My friend suggested adding shrimp to the combo for a little Cajun twist which sounds great. Overall I gave this 4 stars because it truly is good as is and it is a great starting point for anything you might want to add in.

A quick and easy weeknight meal that everyone will love!! It’s made all in one pot and dinner will be on the table in less than 30 minutes!

This rich and creamy pasta dish tastes just like mac &amp; cheese, but is loaded with pieces of Italian sausage!

Cheesy Sausage Pasta (one pot)

Italian sausage links

onion (finely diced)

milk

chicken broth (or water)

penne

cornstarch

garlic powder, sugar, paprika, and pepper

cheddar cheese (shredded)

gruyere cheese (shredded)

parmesan cheese (shredded)

salt & pepper

In a large pot over medium heat, brown Italian sausage and onion.

Add milk, broth, and pasta to the pot along with the sausage and onion. Stir in the cornstarch and seasonings and bring to a boil.

Once boiling, reduce the heat to a simmer and cover, and cook for 10-16 minutes or until the pasta is tender. Check the pan frequently and add more water or broth as needed.

Once the pasta is tender, remove the pot from the heat. Remove sausage from the pot and slice.

Stir the cheese into the pasta until melted. Stir in the sliced sausage and serve.

An easy dinner made with only a few ingredients, this Sausage and Peppers Pasta is filled with tons of flavor from Italian sausage, fresh bell peppers, and tomatoes.

Sausage and Peppers Pasta

lb penne pasta (or other short cut pasta)

extra virgin olive oil

sausage

bell peppers (I like colored), seeded and diced

onion, diced

(28 oz) diced tomatoes, undrained

(8 oz) tomato sauce

Italian seasoning

salt

black pepper

red pepper flakes

Parmesan cheese, for topping

Bring a large pot of water to boil. Salt generously, then add the pasta. Cook until al dente. Drain and return to the pot.

Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the sausages and fry until browned on all sides and cooked through. Remove from the pan to a cutting board. Let the sausages cool slightly, then cut them into 3/4” to 1” pieces. Set aside.

In the same skillet, add the bell peppers and onion. Cook until softened, about 2-3 minutes. Add the garlic and cook an additional 30 seconds.

Add the diced tomatoes and tomato sauce, the sliced sausage, the Italian seasoning, salt, pepper and red pepper flakes. Stir it all together and simmer on low for about 15 minutes.

Pour the sausage mixture over the cooked and drained pasta and stir to combine.

Serve topped with freshly grated parmesan cheese.

Creamy Apple Gouda Sausage Pasta

Boil a large pot of salted water on the stove over high heat. When boiling, add the pasta and cook to al dente.  Reserve 1-2 cups of pasta water before you drain the pasta.

While the water boils, heat a large skillet or saute pan over medium heat and add the Italian Sausage. Brown and then remove and set aside on a plate with a paper towel to soak up the extra grease.

return the pan to the heat and add the onions. Cook for 4 minutes and stir continuously until the onions begin to brown.

Add the garlic and the apples and butter. Cook until the butter is melted and well incorporate. Stir continuously so the butter doesn&#39;t burn. Simmer for about 1 minute once the butter has melted.

Add in the flour and mix into the apples and onions to coat. Then add 1 cup of chicken broth and deglaze the pan by scraping the brown bits.

Let them simmer down and then add another cup of chicken broth and the sprigs of fresh thyme.

Add in 3/4 cup heavy cream. Mix well and let the sauce simmer for about 5 minutes on low heat.

Add the sausage back in and simmer 2 minutes. Then add in 1 cup of pasta water. Mix well.

Add in 1/2 cup smoked gouda cheese and mix well. The cheese will melt into the sauce while you mix. If the sauce seems too runny, you can let it simmer for a few minutes to reduce the liquid.

Add in the pasta and mix well to combine. Top with additional fresh thyme, sea salt and pepper to taste and a little more gouda cheese. Enjoy!

Oof I feel like this recipe had so much potential. Everything smelled amazing, the sauce tasted great, and then the pasta water was added. I should have known when the recipe called for pasta water. The recipe suggests using 1-2 cups, that seemed excessive so I used 3/4 of a cup and it was still too much. It completely watered down the sauce and got rid of the great taste it had prior. The recipe also doesn't specify how much pasta to use (I used about 12 oz) but I think in the future if I used 8 oz and didn't water down the sauce it would be enough to cover the noodles without absorbing all of it.

This was so yummy! And I love that it's basically a one-pot meal!

Reduced-Fat Red Pesto

Single Cream

Non-Stick Spray

Salt

Finely dice the onion and bring a saucepan of salty water to the boil.

Heat a spray of oil in a separate large pan and add the onion over a low-medium heat. De-skin the sausages by making a shallow cut lengthwise down one side of the sausage with a sharp knife and pulling the skin off. Add the de-skinned sausages to the pan and break up with a spatula. Alternatively, you can use your fingers like they are scissors and pull around 2.5cm of sausage at a time out of the casing and into the pan. Increase the heat and cook for around 5 mins until cooked through.

Meanwhile, tip the pasta into the boiling water.

Add the garlic Italian seasoning, basil and paprika to the sausage pan, followed by the tomato purée and pesto. Stir to coat, then pour in the cream and a ladle of pasta water to thicken.

Leave to simmer for a few minutes until it thickens, then add the cooked and drained pasta, along with some extra pasta water to loosen it up if necessary.

Share between three bowls and top with chopped basil and parsley.
