This hearty Cheese Tortellini Soup combines Italian sausage with cheese tortellini in an easy broth with tomatoes, onions, garlic, arugula and Italian herbs and seasonings.

Tortellini Soup

Parmesan Cheese

Brown the Italian Sausage in a Dutch Oven or stockpot over medium heat.  When it is almost fully browned add the onion and cook until the sausage is done browning and the onion has softened.  Turn the heat to low and add the garlic, basil, oregano, parsley, thyme and crushed red pepper; cook for 1 minute stirring constantly.

In a small bowl whisk the tomato paste with about 1/2 cup beef broth. Add the vegetable broth, remaining beef broth, fire roasted tomatoes and thinned out tomato paste.  Increase the heat to medium low and simmer for 3-4 minutes.

Add the cheese tortellini and simmer for 10-15 minutes or until the tortellinis are cooked to your desired tenderness.  Remove the pan from the heat and stir in the arugula.  Add salt and pepper to taste.  Sprinkle each bowl with 1-2 tablespoon freshly grated Parmesan cheese.

Oh my word!  I made this for dinner last night and it was AMAZING!!  I added some garlic powder and about 1.5 tsp of Balsamic vinegar to mine as well.  My boyfriend was blown away by how GOOD it was!  This is going to become a staple menu item in my house!

Sausage Tortellini Soup - Slow Cooker

lb Italian sausage

tomatoes

chicken broth

carrots,

celery sticks, chopped

white onion, chopped

salt and pepper

spinach

packet cheese tortellini, refrigerated

heavy cream

On the stove, cook the sausage with onion for about 7 - 9 minutes or until the sausage is fully cooked. Remove any excess grease. Add to the slow cooker. Add in all the remaining ingredients EXCEPT heavy cream, tortellini and spinach (keep cold for later).

Cook on LOW for 7-8 hours or on HIGH for 4-5 hours.

20 minutes before serving add in the heavy cream, tortellini and spinach and set crockpot to high heat, cook for 20 minutes. Stir lightly.

Serve hot and enjoy!

Simple and delicious! I used lo sodium Better than Bouillon rather than box or can broth and frozen tortellini because the grocery store I went to didn't have the fresh. Also a mixer of arugula and spinach. This one is a keeper!

Sausage Tortellini Soup

olive oil, (divided)

(150 grams) finely diced yellow onion, ((~1 small onion))

(145 grams) peeled and finely diced large carrots, ((~2-3 carrots))

garlic ((~3-4 cloves))

unsalted butter

(33 grams) all-purpose flour

Italian seasoning

(460 grams) half and half (or heavy cream)

salt and pepper, (to taste)

Parmesan cheese, (to preference)

TORTELLINI: See Note 2. If you&#039;d prefer to cook the tortellini separately, start it now. Bring a large pot of water to a boil. Season the water with salt, generously (I add 1 teaspoon to every 4 cups). Add tortellini and cook according to package directions, minus 1 minute. Remove, drain, and run under cold water for 30 seconds.

SAUSAGE: In a large pot over medium-high heat, drizzle 1 tablespoon olive oil and then add in the sausage. Cook and crumble the sausage until browned. Transfer the cooked sausage to a paper-towel-lined plate and dab with another paper towel to blot the grease. Set aside.

VEGGIES: Keeping the pot at medium-high heat, add in the remaining 1 tablespoon olive oil along with the diced onion, and carrots. Season with salt and pepper, (I add 1/4 teaspoon each.) Sauté, stirring occasionally, for 5-7 minutes or until the vegetables are soft. Add the garlic and sauté for one more minute, stirring occasionally. Add in the butter and allow to melt.

STOCK: Once the butter is melted, whisk in the flour and cook, stirring constantly, for 1 minute. Slowly add in the chicken broth or stock, whisking to combine. Continue cooking, stirring occasionally, until the mixture reaches a simmer. Reduce the heat to medium-low and allow to simmer and thicken for about 5-8 minutes.

FINISHING SOUP: Return the cooked sausage to the pan, along with Italian seasoning, (if using frozen tortellini, add it in here), and salt and pepper (to taste, I add about 1 and 1/4 teaspoon salt and 3/4 teaspoon pepper). Add in the coarsely chopped spinach, and half &amp; half or heavy cream to the pot. Stir and then simmer on medium heat for about 3-5 minutes or until the spinach is wilted (and the tortellini is cooked through, if using frozen).

SERVE: Serve immediately with lots of freshly grated Parmesan and a crusty baguette, if desired. If tortellini was cooked separately, add spoonfuls of cooked tortellini to individual bowls. Store tortellini and leftover soup separately to avoid pasta bloating.

Add the sausage meat to a large soup pot (if using whole sausages, take the sausage meat out of its casings and crumble it into the pot). Sauté over medium-high heat, stirring occasionally, for 7-10 minutes, or until the sausage is browned all over.

Take the sausage out of the pot and set it aside on a paper towel lined plate. Leave about a tablespoon of the fat in the pot (drain any excess).

Add the onion and celery to the pot and cook for 4 minutes or so, then add the flour and garlic and cook for a minute, stirring constantly. 

Add the chicken broth slowly and stir until the flour has completely dissolved. 

Add the canned tomatoes and Italian seasoning to the pot. Also add the sausage back in. Increase the heat to high and bring the soup to a gentle boil. 

Once it's boiling, add the tortellini and reduce the heat so it's gently simmering. Cook for 5 minutes.

Stir in the cream and cook for another 5 minutes.

Stir in the spinach and season with salt &amp; pepper to taste.

Heat a large heavy pot to medium heat with 2 tablespoons of olive oil and add the sausage.  Cook the sausage until browned while breaking it up into small pieces.  Once brown, remove the sausage with a slotted spoon to a plate and set aside.

To the pot, add the remaining olive oil along with the onion, celery, carrot, fennel seeds, and a pinch of salt.  Cook until soft while stirring every so often (about 7-10 minutes).  Add the garlic and cook for another 2 minutes or until fragrant.

Add the tomato paste and cook stirring frequently for 5 minutes.  If the paste starts to burn lower the heat and add a touch of water to the pot.

Add the flour and cook for 2 minutes, stirring constantly.  Next, add the wine and turn the heat to high.  With a wooden spoon scrape the bottom of the pot to dislodge any browned bits. Once the wine has reduced by half (about 1-2 minutes) add the cooked sausage, chicken stock, and Parmigiano rind.  Bring to a boil.

Once boiling, lower the heat and simmer for 10 minutes. Add the cream and simmer the soup for another 10 minutes.

Add the tortellini and cook until tender (about 3-5 minutes) then remove the pot from the heat.  Taste test the soup and adjust salt and pepper if required.  Stir in the parsley and basil.

Serve in bowls with grated cheese and crusty bread.  Enjoy!

Heat olive oil in a large, high-sided pot over medium heat.  Add crumbled sausage.

Cook for several minutes over medium heat, stirring until the sausage is cooked through. Drain all grease. Sprinkle with Italian seasoning and paprika.

Add peeled and cubed sweet potato, minced garlic, red pepper flakes, and tomato paste.

Add 6 cups of water.  Note: You don&#39;t need to use chicken stock as the sausage imparts lots of flavor to the soup.

Bring to boil.  Mix everything well, ensuring the tomato paste dissolves.

Once the soup is boiling, reduce to simmer (a visible boil), cover the pot with a lid, and cook for 15 minutes until the potatoes are cooked through.

Add tortellini to soup in the pot, cover with a lid and boil for 10 minutes over medium heat.  Note: Use the cooking time indicated on the tortellini package as your guide.

Add spinach right in the end, stir in until it slightly wilts.

Remove the soup from heat.  Add the cream and stir it in.

Season with salt and more red pepper flakes (add spice especially if you did not use spicy sausage).    Top with fresh thyme.

Important note: No salt might be necessary if the sausage is very salty. Use your judgment about whether to add salt or not based on how salty the sausage is.   If the sausage is not very salty, season with salt to taste, about ¼ teaspoon of salt or less.
