savoury traybake

Slow-cooked chicken makes light work of supper. Use this recipe as a template for other prepared meats, such as lamb kleftiko with potatoes, red onions and courgettes.

Baharat chicken with lentils & onions

300 g Essential Carrots,

tsp sugar

tbsp Essential Olive Oil

240 g Levantine Table Slow-Cooked Baharat-Spiced Chicken

Essential Lentils, drained and rinsed

tbsp Essential Natural Yogurt

Step 1

Preheat the oven to 200ºC, gas mark 6. In a roasting tin, mix together the carrots, onions, sugar, oil and 100ml water. Season, then roast for 10 minutes or until softened; push to one side of the tin. Add the contents of the chicken pack to the other side of the tin and roast for 25 minutes, until piping hot.

Step 2

Five minutes before the chicken is cooked, stir the lentils through the
vegetables and return to the oven. To serve, pull the cooked chicken apart with 2 forks and stir back through the veg in the tray. Spoon over the yogurt, scatter over the mint, then divide between 2 plates.

The prunes melt into the tomatoes as they cook in this simple one-tray bake, making a sweet and tangy sauce

Sausage, prune & chickpea traybake

454 g pack 8 Essential British Pork Sausages

olive oil

Essential

1½ tsp cumin seeds, roughly crushed

garlic,

500 g Essential Cherry Tomatoes

Essential Prunes

g pack flat leaf parsley, stalks finely chopped, leaves picked

260 g Essential spinach

Preheat the oven to 200ºC,
gas mark 6 and put a large
roasting tin into the oven to
heat up. Once hot, tip in the
sausages. Drizzle with 1 tbsp
oil and roast for 15 minutes,
or until light brown all over.

Meanwhile, put the
chickpeas, cumin, garlic,
tomatoes, prunes and parsley
stalks in a bowl and drizzle in
the remaining 2 tbsp oil.
Season and stir to coat. Add
to the tray with the sausages
and return to the oven for
a further 10 minutes, or until
the sausages are cooked
through, the juices run clear
and no pink meat remains. 

Step 3

Add ½ the spinach with
a splash of the apple juice
from the prunes and return
to the oven for 1-2 minutes,
until wilted. Repeat with the
remaining spinach, then stir
through to combine. Scatter
with parsley leaves to serve.
