This zucchini and cabbage soup is bursting with green vegetable goodness! A light but flavourful soup, it&#39;s a lovely lunch for summer or a starter for a main dinner meal in a smaller portion.

Zucchini and Cabbage Soup

olive oil

zucchini (roughly

savoy cabbage (lightly packed, shredded)

celery (diced)

onion

turmeric powder

cm fresh ginger (grated

garlic (finely chopped)

coconut milk

vegetable stock

salt

parsley (to garnish, optional)

Heat the oil in the pan, and add the chopped onion, celery, turmeric, garlic and ginger. Cook for 4-5 minutes on a low heat, stirring occasionally, until the onion is cooked through.

Add the chopped zucchini and cabbage and stir through. Cook for a further five minutes.

Add the vegetable stock and bring the mixture to the boil. Reduce the heat and add the coconut milk. Cook on a very low simmer for about 30 minutes.

Take the soup off the hob and blend with a immersion blender until smooth. If you prefer a thinner soup add some hot water.

Add the garnishes if using, and serve immediately. Enjoy!

Hungarian Savoy Cabbage Soup

vegetable oil (optional)

carrots, chopped

onion, diced

tbsp sweet paprika powder

tbsp smoked paprika

garlic, minced

potatoes, diced (about 2 cups)

vegetable broth

savoy cabbage

plant milk

flour (use GF if needed)

salt, pepper

sausages

sour cream

Heat up oil in a large pot, then add onion and carrots. Cook for 10 minutes, stirring occasionally. Use a few spoons of vegetable broth instead of the oil, if you prefer to keep this oil-free.

Add sweet and smoked paprika, and garlic, and cook for 20-30 seconds, just until fragrant. Then add potatoes and enough vegetable broth to cover. Bring soup to a boil, then simmer for 15-20 minutes.

Add chopped or thinly sliced savoy cabbage, plus the rest of the vegetable broth to cover the veggies, and bring to a boil again. Simmer for 10 more minutes, until potatoes and savoy cabbage are fully cooked.

Whisk together milk and flour, and pour into the soup. Cook for 2-3 minutes, until soup thickens.

Meanwhile prepare vegan sausage according to package instructions, then slice it.

Serve soup warm topped with sour cream and sausage slices. Enjoy!

I've been making cabbage soup different ways trying to find a recipe for an amazing cabbage soup I had at a fancy banquet and I think this must it!!! Wonderful! The paprikas does something amazing to cabbage!
