Scalloped corn casserole is a must-make for comfort food enthusiasts. From the creamy corn to the buttery crushed crackers, it's pretty darn delish.

Scalloped Corn

(15-ounce) can whole kernel corn, drained

Ritz crackers, divided

cheddar cheese, optional

butter, melted, divided

paprika

salt

black pepper

Parmesan cheese, optional

Preheat the oven to 350 degrees Fahrenheit (175°). Grease a 9x13-inch baking dish generously with butter or cooking spray. Set aside.

In a large mixing bowl, lightly beat the eggs with a whisk, then stir in the cream corn and corn kernels. Stir to combine.

Add 1 1/2 cups crushed crackers, shredded cheese (if using), 1/4 cup melted butter, paprika, salt, and pepper. Stir until well combined then pour into the baking dish, spreading it out evenly.

In a small bowl. mix the remaining butter with the rest of the crackers and Parmesan cheese. Sprinkle evenly over the casserole and bake for 40-45 minutes or until the topping is lightly browned and the filling is bubbling around the edges.

Remove the scalloped corn casserole from the oven and let rest for about 15 minutes before serving hot. Enjoy!

Preheat oven to 375F. Place rack in top third position. Prep 8x8 baking dish by spraying with cooking spray.

Mix all ingredients in large bowl until evenly distributed. Pour into prepared dish.

Bake until mostly set, but slightly jiggly in the center when moved, about 50-55 minutes.

I love scalloped potatoes, so was so excited to try this scalloped corn. It was just as delicious as I expected it to be!

Preheat the oven

Preheat the oven to 350°F with a rack in the center position. Grease a 1½-quart baking dish with butter.

Combine the ingredients

In a large bowl, combine the creamed corn, sweet corn, ½ cup of the crushed crackers, ¼ cup of the melted butter, heavy cream, eggs, sugar, granulated garlic, onion powder, paprika, salt, and pepper. Pour into the prepared baking dish.

Add the cracker topping

In a small bowl, combine the remaining 1 cup of crushed crackers with the remaining ¼ cup of melted butter. Sprinkle the cracker topping over the corn mixture.

Bake

Bake until the topping is slightly browned and the filling is bubbling, 30 to 40 minutes. Let cool for 10 minutes before serving.

This was incredibly delicious! Everyone went back for seconds. The dish went together easily as described, followed the directions as written and 10/10 will make this again. I have seley all recipes calling for "that boxed corn muffin mix." Yours is far superior. Thanks!
