Pan-Fried Shanghai Noodles (Vegan)

Shanghai noodles (the thick ones)

sesame oil

shiitake mushrooms, sliced

baby bok choy,

soy sauce

coconut aminos

In a medium saucepan, bring about 2 quarts water to a rapid boil. Add Shanghai noodles and cook for about 3 minutes. Check the noodles. You want the outside of the noodles to be soft but still a bit firm on the inside.

Remove the noodles from the heat, drain, and rinse under cold running water. Stir a few drops of oil into the noodles to prevent them from sticking together.

Heat up sesame oil in a large nonstick pan, a wok, or a cast iron skillet over high heat. Add mushrooms and bok choy. Saute until the bok choy starts to wilt, about 2 minutes.

Switch to medium heat. Add cooked noodles to the pan, followed by dark soy sauce and coconut aminos. Stir fry everything together until the noodles get an even brown color. Serve immediately!

Scallion Oil Noodles (葱油拌面)

300 g / 0.66 lb scallion/spring onion ((roughly 1 bundle))

g / 0.11 lb red shallot

soy sauce ((or

tbsp dark soy sauce

tsp sugar ((or

noodles

Cut the scallions into 10cm (4") segments. Make sure the white parts are kept together and the greener parts are put in a separate pile.

Use a cleaver to gently slap the white scallions.

Slice the red shallots.

Pour oil into a wok or pan and add the white part of the scallions, the red shallots and ginger in. Bring the heat up to medium.

Let the aromatics gently fry for 3 minutes or until golden, then turn off the heat and use chopsticks to remove them from the oil. Discard the aromatics.

Add the green parts of the spring onions in and turn the heat up to medium. Fry for 3 minutes or until they start to change color, then use chopsticks to remove them from pan. You can save the cooked scallions to use as a garnish.

Transfer the oil to a heatproof jar or container. Use it for any future savory recipes.

Bring a pot of water to a boil and cook the noodles for 10 minutes or until al dente. When ready, drain in a colander and run under cold water until cool. Let it rest as you work on the sauce.Note: Different varieties will have different cooking times, so make sure to read the packet instructions or test the firmness as it boils.

Combine the light and dark soy sauce and sugar in a pan and turn the heat up to low-medium. Let it simmer for 20 seconds, then transfer into a heatproof jar or container.

To serve, add 2 tbsp of the spring onion oil and 1 1/2 tbsp of the cooked soy sauce in a bowl.Note: The amount you add it entirely up to your taste preference. Ideally, start with less and put more as you go. As Grandma always says: "You can add more salt if you need, but you can't take it away once it's added."

Put the noodles into the bowl and stir until mixed well.

Garnish with the fried green scallions and serve as is!

Shanghai Noodles are a quick and easy Chinese stir-fry with chewy noodles, tender pork, crisp bok choy, and a savory sauce. Ready in 15 minutes!

Shanghai Noodles

oz Boston Butt ((or pork tenderloin, pork belly))

shiitake mushrooms

baby bok choy

garlic

green onions

servings Shanghai thick noodles ((or udon noodles))

tbsp neutral-tasting oil ((divided))

tbsp Shaoxing wine ((or mirin, dry sherry, water, etc.))

tsp sugar

tsp dark soy sauce

chicken bouillon powder

Black pepper ((to taste))

MSG ((optional))

Cut the pork into bite-sized pieces and transfer to a mixing bowl.

Add the soy sauce, Shaoxing wine, sugar, and cornstarch. Give it a good massage. Cover and marinate in the fridge for 10 minutes.

Marinate Pork

Thinly slice the mushrooms. (For more texture, you can tear them by hand into large chunky pieces instead.)

Cut off the ends of the baby bok choy and separate the leaves.

Finely chop the garlic cloves. Thinly slice the green onions, separating the whites and greens.

Prep Vegetables

In a small container, combine the soy sauce, oyster sauce, dark soy sauce, chicken bouillon powder, sugar, black pepper, and MSG (if using). Mix well and set aside.

Make Sauce

Bring a pot of water to a boil. Add the noodles, and cook according to the package instructions. Once the noodles are cooked, drain and set aside.

In a large wok (or pan), heat 1 tablespoon of oil over medium-high heat. Once it’s nice and hot, add the marinated pork, spread it out, and let it sear undisturbed for 1 minute or until the bottom turns golden brown. Flip the pork, add the mushrooms, and stir-fry for 2 to 3 minutes or until the pork is cooked through. Remove everything from the wok and set aside.

Add the remaining 1 tablespoon of oil to the same wok. Add the garlic, and white parts of the green onions. Stir-fry for 30 seconds or until fragrant.

Add the drained noodles and stir-fry for 1 minute, or until every noodle is coated in the aromatic oil.

Add the baby bok choy and stir-fry for 30 seconds. Add the pork and mushrooms back into the wok, pour in the sauce, and stir-fry for 1 minute, or until everything is evenly coated.

Divide the noodles into serving plates and garnish with the green parts of the green onions. Enjoy!
