Shawarma Marinade

meat

olive oil

lemon, juiced

garlic,

honey

½ tsp ground cumin

½ tsp smoked paprika

cinnamon

ginger

oregano

turmeric

cayenne pepper

Kosher salt

black pepper

Mix the shawarma marinade

Add the olive oil, lemon juice, garlic, honey, cumin, paprika, cinnamon, ginger, oregano, turmeric, cayenne, salt &amp; ground black pepper to a bowl. Whisk to combine.

Marinate

Pour the shawarma marinade over your meat or veggies of choice. Marinate for at least 6 hours or for up to 2 days.

Grill

To marinate the shawarma meat: you'll need 2 tablespoons olive oil + 1 tablespoon white vinegar + 1/2 teaspoon salt. Allow chicken to marinate for 10-20 minutes and 1 hour to 24 hours for beef. First, you need to collect the spices. I don’t recommend adding any extras such as chili flakes as that will change the flavor and you’ll end up with a different spice blend.

You can either collect ground spices and just mix them, or collect whole spices and then grind them. It depends on what you have available.

Easy Shawarma Seasoning

Add spices to a mixing bowl and stir to combine.

Store in an airtight spice jar for up to 6 months.

Shawarama Seasoning

In a medium-sized bowl, combine all the spices and mix to combine.

Store in an airtight container in a dry cool place for up to 6 months.

Use as a marinade, rub, or seasoning!  To make a marinade, combine 1/4 cup shawarma seasoning, 1/4 cup olive oil, and 1/4 cup lemon juice.  Whisk together and marinate with 2 lbs meat of choice.  Marinate for 1-24 hours.

Grilled Chicken Shawarma

plain Greek yogurt divided

tsps Organic Shawarma divided

lemon juice

tsp sicilian sea salt

chicken breast

cucumber

lettuce leaves

pita pockets halved

step 1

Mix 1 cup yogurt and 1 teaspoon Shawarma Seasoning in small bowl. Cover and refrigerate until ready to serve. 

step 2

Mix oil, lemon juice, remaining 1/4 cup yogurt, remaining 4 teaspoons Seasoning and salt in small bowl. Reserve 2 tablespoons of the mixture; set aside. Place chicken in large resealable plastic bag or glass dish. Add marinade; turn to coat well.  Refrigerate 1 hour or longer for extra flavor.

Remove chicken from marinade. Discard any remaining marinade. Grill over medium heat 6 to 8 minutes per side or until cooked through (internal temperature reaches 165°F), brushing with reserved marinade.

Slice chicken into thin strips. Serve in pitas with cucumber, lettuce and yogurt dressing.
