Asian Salmon with Mixed Vegetables

Combine the soy sauce, brown sugar, hoisin sauce, ginger, garlic, lime juice and sesame oil in a small saucepan; bring to a boil. Once the sauce comes to a boil, lower the heat to medium and simmer for 10 minutes or until sauce has started to thicken. Remove and discard pieces of ginger and set the sauce aside.

Preheat broiler. Line a sheet pan with foil, coat with cooking spray. Place the salmon fillet on one side of the pan; season the salmon with salt and pepper and lightly brush with the hoisin glaze. On the other side of the pan, place the mixed vegetables. Spread the vegetables out into one even layer. Season the vegetables with salt and pepper and spray them with cooking spray.

Place the pan under the broiler - broil for 10-15 minutes or until salmon and vegetables are cooked (mine took 12 minutes). Remove the pan from the oven and brush more glaze over the salmon. Drizzle glaze over the vegetables to taste and then toss to coat. Garnish with sesame seeds, lime wedges and green onions. Serve the salmon and vegetables with steamed rice, with any extra glaze on the side for dipping or drizzling.

Preheat the oven to 400F and place 2 tbsp of the butter on a rimmed baking sheet. Place the baking sheet in the oven as it preheats.

Melt the remaining butter in a small bowl and whisk in the garlic, parsley and lemon zest.

Remove the pan from the oven when the butter is melted and add the cauliflower florets. Sprinkle with salt and pepper and toss to coat in the butter. Bake 10 minutes.&nbsp;

Remove the pan from the oven and make space for the salmon filets. Sprinkle with salt and pepper, then drizzle with plenty of the garlic butter.&nbsp;

Bake another 10 to 12 minutes, until the fish is opaque and flakes easily with a fork. How long will depend on how thick your filets are.&nbsp;

Put the potatoes on a large baking sheet and toss them with 1 tablespoon of oil, Italian seasoning, ½ teaspoon of salt, and ½ teaspoon of pepper. Roast for 30 minutes, or until they are almost fully cooked. 

Remove the pan from the oven and push the potatoes to the side. Add the salmon fillets to the middle of the pan and season with one of the salmon seasonings options. Add the asparagus to the pan and toss with the remaining teaspoon of oil and ¼ teaspoon of salt and pepper. Top the asparagus with lemon slices and put the tray back into the oven. 

Continue to bake until the salmon is cooked (140 degrees Fahrenheit), about 8-10 minutes.

5-Ingredient Sheet Pan Salmon

Preheat oven to 400°.

Add potatoes to a large bowl. Drizzle with 2 tablespoons Italian dressing and season with salt and pepper; toss to coat. Arrange potatoes cut-side down on a rimmed baking sheet and roast until potatoes are tender, 20-25 minutes.

While the potatoes roast, trim green beans and place in the same large bowl used for the potatoes. Drizzle with 2 tablespoons Italian dressing and season with salt and pepper; toss to coat.

When potatoes are tender, remove from oven and preheat broiler to high.

Arrange salmon in center of baking sheet with potatoes and add green beans. Drizzle remaining tablespoon Italian dressing over the salmon and season with salt and pepper. Squeeze lemon halves over entire baking sheet and, if desired, slice lemon slices and add to baking sheet.

Broil salmon, green beans, potatoes, and lemons 10 minutes, or until salmon is no longer translucent but still moist in center and green beans, potatoes, and lemons are lightly browned. Serve with tartar sauce, if desired.

Szechuan Salmon With Scallion Green Beans 

Szechuan Sauce, without cornstarch (divided)

salmon (2 thick pieces)

green beans (or asparagus)

scallions, split in half lengthwise then cut to the length of green beans

shiitake mushrooms (optional) or sub another mushroom

cornstarch

Stir together the Szechuan Sauce ingredients (leaving the cornstarch out)

Place green beans and scallions mix these together), mushrooms and salmon on a parchment-lined sheet pan. Spoon half of the Szechuan sauce over the salmon and veggies and toss the veggies in the sauce.

Place the sheet pan in the oven and bake, checking at 10-15 minutes ( depending on how thick your salmon is) give the veggies a toss, and checking the salmon. Continue baking until salmon is cooked through and broil if you want for the last couple minutes to give color.

In the meantime, heat up the remaining Szechuan sauce on the stove and whisk in a teaspoon of cornstarch to thicken. Pour this over the cooked salmon.

Sprinkle with toasted sesame seeds, and divide the veggies and salmon among two bowls.

Recipe was a big hit however I found the sodium level of the Szechuan sauce to be way out of control.  Next time I intend to use low sodium soy and also add a small amount of water to the recipe.

This easy Garlic Salmon with Lemon Butter and Veggies is baked on a sheet pan and ready in 30 minutes. Healthy, quick, and delicious.

Garlic Salmon with Lemon Butter

salmon fillets, (skin on)

softened butter (or canola oil butter spread)

garlic (chopped (about 4 teaspoons))

black pepper

cherry tomatoes (or grape tomatoes, left whole)

Preheat

Place a rack in the center of your oven and preheat the oven to 400 degrees F. Generously coat a large rimmed baking sheet with nonstick spray. Arrange the salmon fillets in the center of the sheet.

In a small bowl with a fork, combine the softened butter, garlic, lemon zest, 2 tablespoons chopped fresh parsley, and 1/4 teaspoon black pepper. Mash to create a paste, then rub on the salmon fillets. If desired, arrange extra lemon slices on top.

Drizzle

Place the green beans and tomatoes in a large bowl. Drizzle with olive oil and sprinkle with 1/2 teaspoon kosher salt and the remaining 1/4 teaspoon black pepper. Toss to coat, then arrange around the salmon. Drizzle the lemon juice over the top of the salmon and vegetables.

Bake

Place the sheet pan in the oven and cook until the fish flakes easily with a fork and reaches an internal temperature of 145 degrees F, about 16 to 20 minutes.* Let rest 3 minutes. Sprinkle with remaining 2 tablespoons parsley, then serve, sprinkled with additional salt and/or pepper to taste.

Baked Sheet Pan Lemon Dijon Salmon and Veggies

lb salmon filets, patted dry

olive oil, divided

kosher salt, divided

pepper, divided

lemon juice lemon

fresh thyme (1/2 teaspoon)

lb yellow potatoes, skin

baby carrots

Preheat the oven to 400F and line a large rimmed baking sheet with parchment. Add the cubed potatoes to one side of the pan and the carrots in the middle. To a bowl add the potatoes, 1 tablespoon oil, 1/2 teaspoon of salt and 1/4 teaspoon of pepper; mix to coat evenly. Place to one side of the pan in an even layer. In the same bowl add the carrots, 1 tablespoon oil and 1/2 teaspoon of salt; mix to coat evenly and place next to the potatoes. Bake for 35 minutes.

While the veggies are cooking, make the glaze. To a bowl add 1 tablespoon oil, rest of the salt, pepper, lemon juice, Dijon, whole grain mustard, garlic, parsley and thyme. Whisk until well combined. Set aside.

When the 35 minutes is up, remove the pan from the oven and place the salmon filets, skin-side down. Spread on half of the lemon Dijon glaze over the salmon and bake for 8-10 minutes. Remove from the oven, add the rest of the glaze over top of the salmon (and carrots if desired) and bake for another 3-5 minutes or until the fish flakes easily with a fork and the fat has rendered.

It doesn't get much easier or healthier than this! Perfect meal and so delicious too.  Salmon is hands down one of my favorites.  Yum!!

I make this often for weeknight dinners. The only changes I make are to use a bag of the baby yellow potatoes,  a whole bag of baby carrots and I cut back on the salt in the mustard sauce a little bit.  My whole family loves it.
