Easy Shepherd's Pie Recipe

lamb (or beef)

onion

garlic (minced)

vegetables

tomato soup (or mushroom soup)

Worcestershire sauce

salt

basil

black pepper

potatoes

cheddar cheese (shredded)

Preheat oven to 400°F.

Cook lamb or beef, onion and garlic over medium heat until no pink remains.  Drain any fat.

Stir in soup, mixed vegetables, Worcestershire sauce, salt, basil and pepper. Spread into the bottom of a 2 qt casserole dish.

Spoon mashed potatoes overtop and top with cheese.

Baked 25-30 minutes or until bubbly.

Shepherd's pie is traditionally made with a ground-lamb filling, but we make ours with ground beef. The sauce is really simple and flavorful, but the best part is the insanely fluffy mashed potato topping. The whole dish is pretty much the definition of comfort food.

Bulletproof! I’m a rookie in the kitchen, and this has been a hit every time I’ve made it! I added a beef bouillon cube to the beef mixture to kick it up with some thyme, and I added some green onions and cheddar on top of the mash to spice it up a bit. To each their own but this a great foundation to follow! Thanks!

Actually, if you use ground beef instead of lamb it's called Cottage Pie.
I've always used ground beef. I added Worcestershire sauce because it adds a great flavor. Also used frozen peas and carrots. Since this is a recipe using beef I used beef stock not chicken, also added a little Knott beef bouillon for the extra richness. 
It was very tasty. We probably have Cottage Pie once every few months.

I used vegan beef and added soya cheese on top still 10/10 though.

Great recipe.  A little bit of history, if you make it with Lamb it’s called Shepherd’s Pie and if using beef, it’s called Cottage Pie.

We thought this was very good, but I do agree with others that it could use a little more flavor. I followed the recipe to the T, and might consider the following next time ... Add a T of worcestershire sauce, replace chicken broth with beef broth and perhaps use a full C, as opposed to 2/3 -- the liquid didn't make much gravy in my dish. That's it. It was nearly perfect!

I would definitely omit the thyme.  1 tsp. Overwhelming.  Otherwise would have been good. I think the Worcestershire makes sense.

we usually just use instant potatoes, beef mixed with corn and cheese for on top of the potatoes. It is still really good.

This was really good - easy to follow instructions. The fam loved it! I did add a few dashes of worchestershire and a glug of red wine to the broth mixture.

Amazing recipe!! I agree it was a bit bland on its own but I spiced up the potatoes with garlic powder and added some tomato paste and worcestershire sauce and it was perfect!! Will make again!

Delicious!  Added garlic powder when cooking beef, a dollop of tomato paste and a splash of Worcestershire and sprinkled a little shredded cheese on top.

Shepherd's Pie Is The Definition Of Comfort Food

Shepherd's pie, the British casserole of minced meat and vegetables topped with buttery mashed potatoes, delivers perfection in every bite. This version features extra-rich and creamy mashed potatoes and a hearty, carrot- and pea-studded meat sauce, made ever so slightly in the style of a classic Italian ragù.

Classic, Savory Shepherd's Pie (With Beef and/or Lamb) Recipe

For the Mashed Potatoes:

(1.6kg) russet potatoes (about 4 large), peeled and cut into 1-inch pieces

(85 grams) unsalted butter, cubed

For the Meat Sauce:

(360 milliliters) homemade chicken stock

gelatin

(30 milliliters) vegetable oil

yellow onion (about 14 ounces; 400 grams), diced

carrots (about 8 ounces; 225 grams), diced

celery

garlic, minced

tomato paste

(240 milliliters) dry red wine

bay leaf

(15 milliliters) Worcestershire sauce

(5 milliliters) Marmite (optional)

(15 grams) all-purpose flour

(225 grams) frozen peas

salt and black pepper

To Assemble:

(360 milliliters) heavy cream

Parmigiano-Reggiano cheese, for topping (optional)

For the Mashed Potatoes: Set cubed potatoes in a colander and rinse under cold water until water runs clear. Transfer to a large saucepan and cover with cold water by at least 2 inches. Season water with salt until almost as salty as the sea. Bring water to a boil over high heat, then reduce heat to medium-low and simmer until a knife easily pierces potatoes with no resistance, 10 to 15 minutes. Drain potatoes in colander, then rinse with hot running water for 30 seconds. Transfer potatoes to a large bowl.

Using a potato masher, food mill, or ricer, mash potatoes with butter. Press surface smooth, then press plastic wrap directly against surface to prevent a skin from forming. Set aside until ready to assemble.

Meanwhile, for the Meat Sauce: Place stock in a 2-cup liquid measuring cup, sprinkle with gelatin, and set aside.

Heat oil in a large Dutch oven over high heat until shimmering. Add half of ground meat and cook, stirring and scraping bottom of pot, until well browned, 6 to 8 minutes; use a potato masher or large whisk to break up meat. Add remaining meat and cook, breaking up with masher or whisk, until reduced to small bits, about 3 minutes; lower heat as necessary to prevent scorching. If meat has rendered an excessive amount of fat, use a metal spoon to ladle most of it out, leaving just a few tablespoons in the pot. Add onion, carrots, celery, and garlic and cook, stirring and scraping bottom of pot, until just beginning to soften slightly, about 4 minutes.

Add tomato paste and cook over medium heat, stirring, for 1 minute. Add red wine and bring to a simmer over high heat. Cook, scraping up any browned bits, until almost fully evaporated. Add reserved chicken stock, thyme, bay leaf, Worcestershire, and Marmite, if using. Sprinkle flour over ground meat in pot, then stir in. Bring to a simmer, then reduce heat to low and simmer until sauce is reduced and thick, about 20 minutes. Discard thyme sprigs and bay leaf. Stir in peas and season with salt and pepper.

To Assemble and Bake: Adjust oven rack to center position and preheat oven to 425°F (218°C). Before assembling, heat cream in a large saucepan until simmering. Add potatoes and stir gently until completely incorporated. Season with salt and pepper. Potatoes are now ready for assembly.

Set a 9- by 13-inch baking dish on a foil-lined rimmed baking sheet. Add meat sauce, being careful not to fill more than halfway. (You might not need all of the sauce, depending on the exact size of your baking dish.) Top with mashed potatoes, spreading them with a spatula to cover surface completely. Using spatula, create a dappled pattern on top of potatoes. Sprinkle with grated Parmesan cheese, if using.

Transfer to oven and bake until top is browned and casserole is fully heated through, about 20 minutes. For deeper browning, place casserole on a rack set about 6 inches under a hot broiler for the last few moments of cooking. (Monitor closely to prevent potatoes from burning.)

Let stand 15 to 20 minutes before serving. Casserole can be assembled, wrapped with plastic, and refrigerated up to 2 days. Reheat in a 350°F oven for about 35 minutes, then use broiler to brown top.

Vegetarian Shepherd's Pie

Make the mashed potatoes: Peel the potatoes. Boil them until fork tender (you want them to mash easily). Drain, mash, and mix in yogurt and butter. Season to taste. (You can also use the Instant Pot method which is quick and easy! That&#8217;s what I do.)

Make the veggies

In a large oven-safe pot, heat the oil over medium heat. Add shallots and sauté until fragrant. Add mushrooms, carrots, and whole herbs (you will pull the herbs out later). Sauté until carrots are softened.

Step Two Make Veggies

Make the gravy

Add tomato paste and flour to the pot and stir. Pour in the red wine (sizzzzle) and scrape all the browned bits off the bottom of the pan. Let the wine cook out for a minute or two. Slowly add the broth, stirring it in until a gravy starts to form. Season with salt. Simmer over low heat to get it thickened even further.

Step Three Make the Gravy

Bake

 Remove the herbs. Stir in the peas, spread the mashed potatoes on top (brush with butter to be extra awesome), and bake for 15 minutes at 350. I finished mine on the broil setting for a few minutes to get it nice and brown on top.

Stir in the peas. Add the mashed potatoes.

Step Four Add Peas and Mashed Potatoes

Scoop up a hearty serving and live your best cozy life.

“Vegetable Pie” is too broad a term. There are thousands of pies out there that could be called “vegetable pie” how are people supposed to know what kind pie the author is referring to? I know both cottage and shepherds pie from before I went vegan. So I know what they are supposed to taste like. So adding the vegetarian before any recipe title is more than appropriate if not logical, I’d say ;)

They call vegetarian shepherd's pies "Shepherdess Pies" in England.

Actually, as an English grandma who’s been cooking for more years than I care to remember, I don’t think it matters one jot what you call it. I have heard it called shepherdess pie here in England, I think it could be regional. At the end of the day, so long as it tastes good, does it really matter?  Life’s too short to be shirty about the name of a dish of food.

Made this today for Memorial Day dinner.  My husband is a heart patient as well as a type II diabetic and we eat no meat, sugar, dairy and keep all fat to an absolute minimum.  He absolutely LOVED this pie!!  Thank you SO much!!

Can we use something else instead of wine?

Use leftover pulled pork in this classic comfort food recipe. Mashed potatoes, corn, peas, cheese. Whether the pork is smoked or made in a slow cooker, this recipe works great.&nbsp;

Pulled Pork Shepherd's Pie

Preheat oven to 350F.

Peel potatoes and, if they are large, cut in half. Place in a pot and fill with water. Boil until tender. Drain the water. Add the butter and milk to the potatoes. Mash until the potatoes are creamy.

Toss pulled pork with bbq sauce until evenly coated. Spread on the bottom of a 13x9 baking dish (lasagna pan).

Sprinkle frozen peas and corn on top of the pork.

Spread the mashed potatoes on top of the frozen veggies.

Top with the grated cheese.

Bake in the oven for 45-60 minutes. The cheese should be starting to brown and some bbq sauce should be bubbling up the sides.

This easy shepherd&#x27;s pie recipe (aka cottage pie) with ground beef is simple, gluten free, and uses only 6 ingredients! A cheap, make ahead freezer meal.

lbs. yukon gold potatoes

butter (divided)

whole milk (or heavy cream)

onion (diced)

1.5-2 lbs lean ground beef (or turkey)

kosher salt and black pepper (to taste)

Cover potatoes with cold water and 1 tablespoon of kosher salt in a large pot, and bring to a boil. Cook until potatoes are fork-tender, about 15-20 minutes.

While potatoes are cooking, sauté the diced onion in 2 tablespoons of the butter in a large skillet until softened (about 2 minutes). Add the ground beef and sauté until JUST fully cooked, breaking it up with a spoon into small pieces (about 5-7 minutes). Season with salt and pepper to taste. Don&#x27;t overcook it or it will be dry (see notes).

When potatoes are soft enough to pierce easily with a fork, drain, and mash with 4 tablespoons butter and the milk (3/4 cup). Season with salt and pepper to taste.

Layer ground beef mixture, frozen vegetables, and mashed potatoes in a 9x13 baking dish. Alternatively, divide the ingredients into two smaller baking dishes to freeze one (see notes).

Use the back of a spoon to smooth the potatoes, leaving some ridges, or use a fork to &quot;rake&quot; a ridged pattern into the potatoes.

Melt remaining tablespoon butter and drizzle evenly on top of potatoes.

Bake at 425° F for approximately 30 minutes, or until potatoes begin to brown. Run the broiler for the last 5 minutes for extra crispy potatoes.

We've got some lovely twists on shepherd's pie on the site, but we were missing a definitive version of this classic family recipe – here it is!

No-fuss shepherd's pie

sunflower oil

onion,chopped

tomato purée

Heat 1 tbsp sunflower oil in a medium <a href="https://www.bbcgoodfood.com/review/best-saute-pans">saucepan</a>, then soften 1 chopped onion and 2-3 chopped carrots for a few mins.

When soft, turn up the heat, crumble in 500g lamb mince and brown, tipping off any excess fat.

Add 2 tbsp tomato purée and a large splash of Worcestershire sauce, then fry for a few mins.

Pour over 500ml beef stock, bring to a simmer, then cover and cook for 40 mins, uncovering halfway.

Meanwhile, heat the oven to 180C/fan 160C/gas 4, then make the mash. Boil the 900g potato, cut into chunks, in salted water for 10-15 mins until tender. <a href="https://www.bbcgoodfood.com/content/test-five-best-colanders">Drain</a>, then mash with 85g butter and 3 tbsp milk.

Put the mince into an <a href="https://www.bbcgoodfood.com/review/test-best-casserole-dishes">ovenproof dish</a>, top with the mash and ruffle with a fork. The pie can now be chilled and frozen for up to a month.

Bake for 20-25 mins until the top is starting to colour and the mince is bubbling through at the edges. (To bake from frozen, cook at 160C/fan 140C/gas 3 for 1 hr-1 hr 20 mins until piping hot in the centre. Flash under the grill to brown, if you like.)

Leave to stand for 5 mins before serving.

This great-value family favourite freezes beautifully and is a guaranteed crowd-pleaser

Cottage pie

¼kg beef mince

onions,finely chopped

celery sticks,chopped

garlic cloves,finely chopped

tbsp plain flour

large glass red wine(optional)

few thymesprigs

bay leaves

1.8kg potatoes,chopped

strong cheddar,grated

nutmeg

Heat 1 tbsp olive oil in a <a href="http://www.bbcgoodfood.com/content/top-five-saute-pans">large saucepan</a> and fry 1¼ kg beef mince until browned – you may need to do this in batches. Set aside as it browns.

Put the other 2 tbsp olive oil into the pan, add 2 finely chopped onions, 3 chopped carrots and 3 chopped celery sticks and cook on a gentle heat until soft, about 20 mins.

Add 2 finely chopped garlic cloves, 3 tbsp plain flour and 1 tbsp tomato purée, increase the heat and cook for a few mins, then return the beef to the pan.

Pour over a large glass of red wine, if using, and boil to reduce it slightly before adding the 850ml beef stock, 4 tbsp Worcestershire sauce, a few thyme sprigs and 2 bay leaves.

Bring to a simmer and cook, uncovered, for 45 mins. By this time the gravy should be thick and coating the meat. Check after about 30 mins – if a lot of liquid remains, increase the heat slightly to reduce the gravy a little. Season well, then discard the bay leaves and thyme stalks.

Meanwhile, make the mash. In a large saucepan, cover the 1.8kg potatoes which you've peeled and chopped, in salted cold water, bring to the boil and simmer until tender.

<a href="https://www.bbcgoodfood.com/content/test-five-best-colanders">Drain</a> well, then allow to <a href="https://www.bbcgoodfood.com/review/best-steamers">steam-dry</a> for a few mins. Mash well with the 225ml milk, 25g butter, and three-quarters of the 200g strong cheddar cheese, then season with freshly grated nutmeg and some salt and pepper.

Spoon the meat into 2 <a href="https://www.bbcgoodfood.com/review/test-best-casserole-dishes">ovenproof dishes</a>. Pipe or spoon on the mash to cover. Sprinkle on the remaining cheese.

If eating straight away, heat oven to 220C/200C fan/gas 7 and cook for 25-30 mins, or until the topping is golden.

If you want to use a slow cooker, brown your mince in batches then tip into your slow cooker and stir in the vegetables, flour, purée, wine, stock, Worcestershire sauce and herbs with some seasoning. Cover and cook on High for 4-5 hours. Make the mash following the previous steps, and then oven cook in the same way to finish.
