Sauteed Shiitake Mushroom Recipe

Kosher salt

Remove the stems from the mushrooms and discard. Slice the larger mushroom caps in half and keep smaller mushrooms whole. In a small bowl, stir together the soy sauce, lime juice, Sriracha and toasted sesame oil. 

Heat the sesame oil in a large skillet over medium heat. Add the mushrooms and cook 5 minutes, stirring occasionally. Add a few pinches of kosher salt while cooking.

Once browned on all sides, carefully pour in the bowl of sauce and continue cooking 1 to 2 minutes until dark brown and glossy. Serve immediately.

Sautee mushrooms on medium-high heat, stirring occasionally to promote even cooking. Cook for about 15 minutes, or until the shiitake mushrooms are golden brown. Season with salt and ground pepper.

Add Green Onions

Sprinkle shiitake mushrooms with green onion and serve right away.

Sautéed Shiitake Mushrooms

Start by cleaning the mushrooms. Take a wet paper towel and gently wipe off any dirt from the mushrooms. Refrain from rinsing the mushrooms because they absorb water easily and when cooked they will turn out too chewy. Slice as desired.

In a large skillet over medium heat, heat the butter and olive oil. Once hot, add in the shiitake mushrooms. Let them sit on medium heat and do not touch them for about 3 minutes. This will create some nice caramelization around the edges of the mushrooms. Stir and cook for 2 more minutes.

Pour in the wine, if using, and cook for an additional 2 minutes. Stir in the garlic and parsley and cook for 1 additional minute.

Season to taste with salt and pepper. Serve and ENJOY!

Gravy at Thanksgiving is as essential as turkey. No matter how much you make, it never seems enough. Shiitake Mushroom Gravy has been our favorite and constant dinner companion for the past few years

Shiitake Mushrooms Gravy

all purpose flour

dry sherry

unsalted butter

shiitake mushrooms (stemmed, caps sliced)

rosemary

sodium-free chicken stock ()

heavy cream

thyme (chopped)

tarragon (chopped)

Mix flour and Sherry in a small bowl until smooth paste forms.  Cover flour paste lightly.

Melt butter in a heavy large saucepan over medium-high heat.  Add mushrooms and rosemary: sauté until mushrooms begin to soften, about 3 minutes.  (Can be prepared 3 hours ahead.)  Let paste and mushrooms stand at room temp.

Transfer pan juices to an 8-cup glass measuring cup.  Spoon off fat and discard. Add enough chicken broth to pan juices to measure 5 cups; add to saucepan with mushrooms.

Add flour paste and whisk to combine.  Bring mixture to boil, stirring frequently.  Boil until thickened to a light gravy, about 10 minutes.

Mix in cream, thyme, and tarragon.  Season to taste with salt and pepper.  Serve with turkey.

Spicy Garlic Shiitake Noodles

instant ramen noodles

shiitakes

garlic

tsp grated ginger

tsp crushed red chili flakes

tsp peppercorns

vegetable oil

black pepper

eggs (soft-boiled)

tbsp sesame seeds (for serving)

scallions (finely chopped, more for serving)

tbsp toasted sesame oil

tomato paste

mirin (or 2 tbsp rice vinegar)

tbsp oyster sauce

tsp sambal oelek (more if you like it super hot)

brown sugar

Combine the ingredients for the sauce in a small bowl.

Add water to a small sauce pan, once boiling, add eggs, boil for 6 minutes. Run under cool water, set aside.

Cook the noodles according to package directions until just al dente. Drain, reserving 1/2 cup cooking water, and run the noodles under cool water to stop the cooking.

In the meantime prepare the shiitakes: In a large skillet, heat the oil until shimmering over high. Add shiitakes, cook for 4-5 minutes, stirring occasionally. Lower the heat, add garlic, ginger, chili flakes and Sichuan pepper. Cook for 2 minutes. Add butter, stir until it melts. Stir in scallions and season with black pepper.

Add the sauce, bring to a boil and simmer for 2 minutes. Stir in noodles and 1/4 cup water. Simmer, tossing occasionally, until sauce begins to cling to noodles, about 30 seconds.

serving

Divide noodles among plates, top with a soft-boiled egg, sesame seeds and chopped scallions. Add more sambal if you can handle the heat, enjoy!

Kinda too salty and we used low sodium soy sauce. Would probably add more ginger next time as well. But everyone ate it! And the eggs were spot on!!

This came out really good! I used coconut aminos instead of soy sauce as I wanted my dish to be gluten and soy free. I also used gluten free udon noodles. It tastes great and I have some left over for lunch during the week. Thanks for the recipe!

This is legit the first time I ever comment on a recipe and I'm only doing it cause the first review it's very unfair. The recipe is fantastic! unfortunately I cannot find Sichuan peppercorns here, but I add some kechap manis sauce and any veggies I have (round green beans pair very nicely ) and I usually fry the egg.
I jut think that the recipe is a good base and then you go on and make adjustments according to your taste and available ingredients. Keep up the good work!

This recipe was wonderful! We replaced oyster sauce with fish sauce because we didn't have oyster sauce and it worked really well! I'm really happy with the flavor - spicy enough to make your nose run a little (but you can of course make it less spicy if you want) - but not spicy enough to not taste the flavor. Great recipe!

Loved this!! Very flavorful and delicious recipe. I made this exactly as the recipe says and it was great. Not too salty in my opinion (as a previous reviewer said) I think it's helpful to make sure you're using dark soy sauce and not light soy sauce because light soy sauce tastes saltier (if you are using light soy sauce I'd probably half the amount). I will be stretching the leftovers out with some bok choy for lunch!

This was outstanding! Threw in some thinly sliced steak, and didn’t have any Sichuan peppercorns handy, but otherwise made it exactly as directed. Super flavorful sauce, especially with a little extra sambal (the fam likes it spicy). Definitely will be making again- often!

I've been looking for that take-out flavor and texture in a recipe that is easy, but doesn't skip what makes it good. This is that recipe. Given, I did use a different noodle (soba) that wasn't the best choice, but everything else was in place perfectly. The sauce was a little thicker, slightly spicy and had amazing flavor. This Shiitake Mushroom Pasta is a simple yet sophisticated dish you can have on the table in about 30 minutes! Tender pasta and meaty shiitake mushrooms are combined with a garlicky sunflower seed cream sauce that&#039;s bound to be a new favorite! This recipe is vegan, nut-free, and easily made gluten-free. 

Vegan Shiitake Mushroom Pasta

dry pasta of choice

water

raw sunflower seeds (see Notes)

fine sea salt

arrowroot

Tablespoons vegan butter

shallots,

shiitake mushrooms, stems removed, sliced

soy sauce (or tamari)

dry white wine (a crisp and tart variety like Sauvignon Blanc)

black pepper,

lemon juice

Boil

Cook the pasta in salted water according to package directions, then drain.

Blend

In a high-speed blender combine the water, sunflower seeds, 1 whole clove of garlic, and salt. Blend on high until completely smooth. Add the starch, and blend for another 30 to 45 seconds. Set aside.

Saute

Preheat a large saute pan over medium heat. Add the butter and olive oil, and swirl the pan to coat. Cook the shallots and shiitake mushrooms for about 5 minutes or until softened. Add the garlic and soy sauce, and cook for a few more minutes or until the mushrooms are tender and no longer sizzling. Add the wine and bring to a simmer. Cook for several minutes or until the wine has reduced by about half.

Simmer

Pour the blended sunflower cream sauce into the pan, and season with black pepper. Cook for 3 to 4 minutes or until thickened and creamy. Add a squeeze of lemon juice, stir well, and taste for seasoning. Add more lemon, salt, and pepper as desired. If the sauce becomes too thick, add a splash of water.

Serve

Toss the cooked pasta in the shiitake cream sauce and serve hot.

SO GOOD!   I didn't have cornstarch arrowroot or other substitute thickener advice I found online - so I used nutritional yeast thinking the cheesy flavor of it would work and hopefully thicken a bit - not bad.  I also don't have a high speed blender so I used my cuisinart mini food processor which worked  fine. I used a locally grown/made white wine called Viognier which I figured would be good in the dish and good to have a glass of with the shitake mushroom pasta. I didn't have vegan butter so I used my housemates regular butter.  I ate it over gluten free tumeric spaghetti. My point about all this is that this recipe is versatile and came out delicious!
