Easy Shrimp Ceviche with raw or cooked shrimp that is cool, zesty and refreshing. Dip into with tortilla chips, spread on a tostada or add to tacos.

Best Ever Shrimp Ceviche Recipe

lb shrimp (peeled, deveined & tails off)

lime juice (6 large limes)

tomato (diced)

avocado (diced)

red onion (minced)

cilantro (minced)

jalapeno (seeded & diced)

Salt and pepper

If using frozen shrimp, add it to a medium bowl and cover with warm tap water. Let thaw for 10 minutes.

In the meanwhile, squeeze juice from limes and add to a large bowl. Please do not use bottled juice.

Drain shrimp and give it a gentle squeeze. Dice it and add to the bowl with lime juice.

Marinate: Cooked shrimp for 15 minutes; raw shrimp for 1.5 hours or until opaque and pink. Acid will &quot;cook&quot; the shrimp.

While shrimp is marinating, dice tomato, avocado, red onion, cilantro and jalapeno and add to another bowl. Refrigerate if making ceviche with raw shrimp. I also recommend to dice avocado right before combining shrimp with veggies to avoid brown avocado.

Add vegetables to the bowl with shrimp, stir and add salt and pepper to taste. Remember tortilla chips are salty. So I would salt after the taste test with a chip.

Serve cold with chips, on a tostada and even in tacos.

Shrimp Ceviche

lime juice ((180 milliliters))

lemon juice ((60 milliliters))

orange juice ((60 milliliters))

shrimp (peeled and deveined (454 grams))

Roma tomatoes (seeded and diced (182 grams))

red onion ((42 grams))

cilantro ((12 grams))

jalapeno (seeded and diced (22 grams))

salt

avocado (diced (175 grams))

Tortilla chips (to serve)

Combine the lime, lemon, and orange juice in a medium mixing bowl. Reserve ½ cup of the juice mixture and set aside.

Cut the shrimp into ½-inch pieces and stir into the juice mixture, pushing down the shrimp so it is covered in the juice. Cover and refrigerate for at least 30 minutes, stirring occasionally, or until the shrimp turns pink and opaque. Strain, discarding the liquid.

Return the shrimp to the same mixing bowl. Stir in the tomatoes, onion, cilantro, jalapeno, salt, and reserved ½ cup juice mixture. Cover and refrigerate for 30 minutes or up to 4 hours, stirring occasionally. Gently stir in the avocado just before serving. Serve with tortilla chips.

Mexican Shrimp Ceviche (Ceviche de Camarón)

shrimp

tomatoes

onion

serrano peppers

cucumber

cilantro (chopped plus several sprigs for garnish)

avocados (peeled, pitted and cubed)

limes (juiced)

lemons juiced

tortilla chips

Peel, devein and cut shrimp into 1/4-inch pieces.

Lay out shrimp in the bottom of glass baking dish. Pour lemon and lime juice over them and refrigerate for 2 hours. The acid from the lemons and limes will "cook" the shrimp.

Toss prepared shrimp with the remaining ingredients and refrigerate for one more hour or longer.
