Shrimp Lo Mein

vegetable oil (divided use)

yellow onion (thinly sliced)

carrots (shredded or julienned)

celery (thinly sliced)

green cabbage (shredded)

garlic

shrimp

egg noodles (pre-cooked)

chicken broth

hoisin sauce

soy sauce

sesame oil

corn starch

onions

salt and pepper

Heat 2 teaspoons of the oil in a large pan over medium high heat. 

Add the onions, carrots, celery and cabbage to the pan and cook for 3-4 minutes or until just softened. 

Add the garlic and cook for 30 seconds. Season the vegetables with salt and pepper to taste.

Remove the vegetables from the pan and cover to keep warm.

Pour the rest of the oil into the pan. Add the shrimp and season with salt and pepper to taste. Cook for 3-4 minutes or until shrimp are pink and opaque.

Add the noodles to the pan, along with the cooked vegetables. Toss to combine.

In a separate bowl, whisk together the chicken broth, hoisin sauce, soy sauce, sesame oil and corn starch.

Pour the sauce into the pan and bring everything to a simmer. Cook for 1 minute or until sauce is just thickened. Sprinkle with green onions, then serve immediately.

oz lo mein noodles ((cook according to package instructions))

lb shrimp ((large with tail on))

large bell pepper

carrot

broccoli

Make sauce

Into hot water add Better Than Bullion, sesame oil and brown sugar; stir to dissolve. Into the mixture, add soy sauce and set aside.

Lo Mein Sauce

Prep

Dice carrots, bell pepper, broccoli and onion into two-inch pieces. Using a hot skillet with sesame oil, cook shrimp until it&#039;s golden brown, remove from the skillet and set aside.

Using the same skillet that was used to previously cook shrimp, apply sesame oil and saute onions until golden brown. Separately, saute carrots until softened, followed by bell peppers, then broccoli. Add all vegetables back to the skillet and press garlic into the mixture.

Shrimp &amp; Sauce

Add cooked shrimp into the skillet with vegetables. Pour sauce over the ingredients and let them simmer for about 2 minutes.

Noodles

Add cooked noodles and toss everything together. Cook for a minute and remove from the heat.

Combine sauce ingredients in a small bowl and set aside.

Cook noodles according to package directions. Drain well, do not rinse.

Meanwhile heat oil in a large saucepan over medium-high heat. Season shrimp with salt &amp; pepper. Add to the pan and cook just until it begins to turn pink, about 2-3 minutes. Remove from pan and set aside.

Add more oil if needed and add coleslaw mix and bell pepper to the pan. Stirfry 3-4 minutes or until it begins to soften. Add ginger and garlic to the pan and cook 30 seconds more.

Stir in shrimp and sauce. Cook until shrimp is cooked through, about 2 minutes. Add noodles and toss well to combine.

A simple recipe to enjoy shrimp lo mein at home without having to order takeout. Packed with flavor, this Chinese noodle dish will become a quick favorite.
