A single serve, Chocolate Chip Cookie in a Mug for those times when you are craving a warm gooey, freshly baked cookie, but don't want to bake an entire batch. You can quite literally go from zero to dessert in minutes!&nbsp;

Chocolate Chip Cookie in a Mug

/ 15 ml water

vanilla extract

flax seed

salt

sugar

/ 32 g / 4 tablespoons all purpose flour

baking soda ((bicarbonate of soda in the UK))

dairy free chocolate chips

To a mug, add the oil (or drippy nut butter), water, vanilla, ground flax, salt and sugar. Stir them up, then add the flour and baking soda. Stir together until everything is combined. Don't over-mix it. Then add the chocolate chips and stir gently again. If you used nut butter instead of oil, you might find that it's a bit too stiff to stir. If so add a teaspoon or 2 of water to loosen it up slightly.&nbsp;

Smooth the top out a little then place the mug in a microwave and cook on high for 45 seconds. Leave to stand for 30 seconds to 1 minute before eating for optimum cookie texture.&nbsp;

Bake for 14-16 minutes. The cookie is done when the edges are turning golden brown, but the center may stay a bit gooey and soft. Let the cookie cool completely on the pan so that it sets.

Single Serve Pumpkin Cookie

oat flour

tbsp coconut sugar ((or monk fruit

tsp baking powder

pumpkin

tbsp pure pumpkin purée

water

tsp vanilla extract

chocolate chips ((optional, but recommended))

Preheat the oven to 350°F and line a small cookie sheet with parchment paper (or simply spray with cooking spray).

While the oven preheats, combine all of your cookie ingredients (except the chocolate chips) in a small bowl and mix until smooth. Add in the optional chocolate chips and stir again to combine.

Place your cookie dough batter onto your prepared cookie sheet and smooth it out into a cookie shape. Bake at 350° for 15-20 minutes (I usually do about 18 minutes).

Remove your cookie from the oven once baked and drizzle with melted chocolate (optional). Enjoy!
