Steak in the Instant Pot is great with potatoes cooked all at the same time! Tender sirloin and vegetables for dinner have never been easier to make.

Steak in the Instant Pot

1-2 lb steak (ours was sirloin)

onion (sliced)

beef broth

onion soup mix (or packet of gravy mix)

tbsp steak sauce

tsp minced garlic

small/medium potatoes (russet,

salt and pepper (to taste)

cornstarch (+ 3 tbsp cold water)

olive oil (or butter)

Put pot on saute and add olive oil with steaks. Sear on outsides. Remove and deglaze the pot using 1/4 c of broth. Slice onion and put on bottom of pot.

Season steak with salt, pepper and anything else you desire and place on top of onions. Try to overlap the least possible.

In a bowl whisk together rest of your broth, onion soup mix/or package of dry gravy mix, steak sauce and minced garlic. Pour this over your steak.

Cut potatoes into quarters and place inside pot on sides of steak. Sprinkle salt and pepper on potatoes.

Close lid and steam valve and set to high pressure for 5 minutes. (NOTE: timing will vary depending on how thick and large your pieces are and how well done you like them but this has been perfect for us)

Allow to naturally release steam when done, this will take about 15 minutes.

Remove steak, potatoes and onions and set pot to saute if you want to thicken sauce.

In a bowl whisk together cornstarch and water until smooth. Once it is boiling add this in and stir for 1-2 minutes so it thickens. Turn pot off and pour this sauce over potatoes and steak.

Cut Slits (usually 3-4) in top of roast and stuff with garlic cloves

Season both sides with salt and pepper

Heat up Instant Pot on saute mode with half a stick of butter. Saute on both front back and sides until lightly brown. Next, Place Roast on Trivet Rack

Mix Seasoning packet and pour over roast or make your own beefy onion sauce, or you can use the onion lipton packet mixed with water.

Add sliced Onion on Top

Add 1 Cup Water to Pot

Set Pot To Manual High Pressure for 35 Minutes with a natural release. This is for medium with a slight pink inside. If you want more pink, you may reduce the time 5 minutes or so.

Cover the slow cooker and cook your roast on low heat for 3-5 hours. (The thickness of your roast will directly impact cooking time. If your roast is thin (under 2 inches), expect it to cook quickly (it may even cook in 2 hours). If it is thicker, it will take longer.

In not using an in-roast probe thermometer, check the roast after 2 hours, and again every hour by inserting a thermometer into the center of the thickest part of the roast. (Better yet, if you have an in-oven probe thermometer or a sensor thermometer for your slow cooker, you can set it for 130F.) You are looking for an internal temperature of 130F for a medium rare roast (of 140F for a medium roast).

Remove the peel, ends, and roughly slice the onion. Place the onion in the bottom of the slow cooker.

Coat the roast on all sides with onion soup mix.

Cook on low for 8-12 hours. Once done, remove any excess fat and discard. Then shred the pot roast.

Separate the onions from the juices. (It doesn&#39;t have to be perfect) Remove one cup of the juices and mix into the shredded roast.

Then add 1 cup of the juices into a sauce pan and whisk in 1/4 cup of flour. Cook over medium heat for 1-2 minutes or until it thickens.

Slow whisk in remaining broth and simmer on low until the gravy reaches desired thickness
