lb. pig ears

pork

onion (minced)

soy sauce

black pepper

ginger (minced (optional))

chili flakes

garlic powder

lemon (or 3 to 5 pieces calamansi)

butter (or margarine)

chicken liver

water

mayonnaise

salt

egg ((optional))

Pour the water in a pan and bring to a boil Add salt and pepper.

Put-in the pig’s ears and pork belly then simmer for 40 minutes to 1 hour (or until tender).

Remove the boiled ingredients from the pot then drain excess water

Grill the boiled pig ears and pork belly until done

Chop the pig ears and pork belly into fine pieces

In a wide pan, melt the butter or margarine. Add the onions. Cook until onions are soft.

Put-in the ginger and cook for 2 minutes

Add the chicken liver. Crush the chicken liver while cooking it in the pan.

Add the chopped pig ears and pork belly. Cook for 10 to 12 minutes

Put-in the soy sauce, garlic powder, and chili. Mix well

Add salt and pepper to taste

Put-in the mayonnaise and mix with the other ingredients

Transfer to a serving plate. Top with chopped green onions and raw egg.

Serve hot. Share and Enjoy (add the lemon or calamansi before eating)

Bring to a boil, skimming scum that floats on top. Lower heat, cover, and simmer for about 50 minutes to 1 hour or until meat is tender. Remove from heat and drain well, discarding liquid.

Over a hot grill, grill pork for about 7 to 10 minutes on each side or until crisp and slightly charred. Or arrange in a single layer on a baking sheet and broil in a 450 F oven for about 4 to 5 minutes or until nicely charred. 

Remove from heat, allow to cool to touch, and chop meat.

In a large bowl, combine chopped meat, onions, chili peppers, calamansi juice., and liquid seasoning.&nbsp;

And liver spread and gently stir to combine.&nbsp;Season with salt and pepper to taste.

To serve, transfer to sizzling hot plates.&nbsp;

How to Make Authentic Kapampangan Sisig using Pork Face

How to Make Authentic Kapampangan Sizzling Sisig

Filipino Crispy Tofu Sisig cooked with an aromatic blend of onions, garlic, peppers, and chiles. This is a hearty vegan take on the Filipino Kapampangan classic! It’s delicious savoury and spicy with a bit of sourness and hint of sweetness.Perfect with rice or sinangag (Filipino Garlic Rice)!

Filipino Crispy Tofu Sisig (Vegan)

400 g extra firm tofu

Neutral oil (for frying)

tbsp vegetarian mushroom oyster sauce (or stir-fry sauce)

tbsp calamansi juice (or lemon juice)

tsp sugar

vegan butter (or neutral oil)

onion

tsp minced garlic

red bell pepper (diced)

bird’s eye chiles (siling labuyo,

chilies

g fresh shiitake mushrooms or other mushrooms

1/2-1 tbsp vegetarian mushroom oyster sauce (or stir-fry sauce,

Soy sauce (to taste, if needed)

butter

More calamansi juice or lemon juice

Sinangag ((Fried Garlic Rice) or Steamed Rice)

You can watch the video below.

Drain excess water out of the tofu. I usually do this by wrapping them with some paper towels and placing a plate on top of them but you can also opt to use a tofu press.

Afterwards, I sliced the tofu into small 1/2-inch cubes. The smaller the better—so if you can slice even small, that’d be better.

Preparing the Tofu

Mix all the sauce ingredients together. Feel free to adjust to your taste.

Sauce

Heat your large pan over high heat. Add some oil to coat the surface of the pan.

When hot, add in the tofu cubes. The tofu cubes should immediately sizzle when you add them in the oil. Sprinkle some salt over the tofu cubes.

Leave the tofu cubes to cook over medium high until golden brown, around 4 to 5 minutes. You may beed to flip them over if pan-frying them. Repeat until all the sides are golden brown and crisp.

Remove the tofu from the oil then set aside. Drain the excess oil form the pan. I have this container with a strainer on top that I use to store my oil. Since tofu are very neutral, I can still use this oil for another 1-2 times.

Cooking the Crispy Tofu

Add in 1-2 tbsp of oil or vegan butter on the same pan. Alternatively, you can cook the sisig directly  on a cast iron pan/sizzling plate. Over high heat, sauté the onion for 1 minute.

Add in the garlic, then sauté for another minute.

Add in the chiles and peppers and cook for 1-2 minutes until tender.

Add in the diced mushrooms and cook for 1 minute over high heat.

Afterwards, add in the crispy tofu.

Pour in the sauce mix and lower to medium high heat. Mix well.

Taste the sisig then season with more vegetarian mushroom oyster sauce and soy sauce, if needed.

Mix everything together and leave to cook over medium heat for 1 minute.

Add in the vegan mayonnaise and give everything a good mix until the mayonnaise has beautiful coated the tofu.

Sautéing

Turn off the heat and serve while hot on a sizzling plate, if you’d like that whole experience.

If using a sizzling plate or cast iron pan, you can simply heat this over direct heat. Once hot and smoking, turn off the heat add 1/2 tbsp of vegan butter until melted. Add in the cooked sisig into the sizzling pan.

Squeeze with some more calamansi or lemon juice, if you’d like. Enjoy with rice or singangag (Filipino Fried Garlic Rice)!

CRISPY TOFU SISIG ala Max's | Vegan Filipino Recipe

Sisig is probably the most famous Kapampangan dish ever! Get this easy Sisig recipe from grilled pork belly! Crunchy and spicy just the way it should be.

Sisig recipe using pork belly

pork belly (- sliced about half-inch thick)

salt and pepper

lemon (or 3-4 kalamansi juice)

chili peppers (- minced or 1/4 tablespoon chili flakes)

Season pork belly slices with salt and pepper. Let it marinate for at least 30 minutes.

Grill pork belly and chicken liver until well done. Pork skin should be crispy.

Once grilled, chop the pork belly and chicken liver into small fine pieces.

In a bowl, combine the chopped meat, onions, lemon juice and chili pepper. Season with soy sauce and pepper.

Warm it in a pan with a bit of oil if desired. Alternatively, heat a sizzling plate and add a some butter or margarine. Add the Sisig and serve while still sizzling hote.

This recipe was delicious! I added a couple tablespoons of mayo to add some creaminess. So easy and tasty!

Hi neighbour! I grew up in Olongapo City and have been living all my adult life in the US. Yikes...I'm almost 40 and it seems like forever ago! I always just go to Kabayan stores that has "turo-turo" or small carinderia inside the store and would always buy a large to-go container of it whenever I crave it! In fact, my bf and I just got back from a Kabayan store and finished eating a bowl of rice and sisig! Haha!

I always knew sisig is very easy to make, but I get discouraged. I'm afraid I might mess it up. Your blog and videos has been a huge help! Your entire page has been a comfort for me whenever I miss home cooking and my late mum's cooking. I even learned how to make fresh lumpia wrappers because of you!

My only question is how one grills chicken livers? Seems like some “work arounds” would be needed to keep them from falling in the coals (I don’t consider gas actual “grilling”).

I combined this with another recipe and it turned out perfect.  Here the the additional items:
crushed ginger
coconut milk
butter
Mayonnaise

With the left overs I made some stuffing and mix it together.  More Yum!

I use the pork lechon head for my sisig. scrape all the meat in the lechon head and used the ingredients above.

Filipino sisig recipes for all occassions

Easy Sisig Recipes

Lady’s Choice Mayonnaise

Knorr liquid seasoning

lemon lime soda

white vinegar

whole peppercorn

Thai chili pepper (chopped)

onions

cooking oil

extra firm tofu (diced)

red bell pepper (chopped)

luncheon meat

tuna (canned)

Combine all Sisig seasoning ingredients in a bowl. Mix well until smooth. Set aside.

Make lechon kawali sisig by boiling the pork belly with whole peppercorn and dried bay leaves in 6 to 8 cups of water for 50 minutes or until tender. Remove from the pot and let it cool down. Rub it with 2 teaspoons of salt. Deep-fry the pork belly until golden brown and crispy. Chop into serving pieces. Combine a quarter of the sisig seasoning ingredients with 2 tablespoons of liver spread. Put the chopped pork belly, thai chili pepper, green onions, and red onions in a mixing bowl and then add the Sisig seasoning mixture. Toss until well blended. Serve.

Make the crispy tofu sisig by deep frying the tofu until golden brown and crispy. Drain the oil and set aside. Arrange fried tofu, bell pepper, thai chili pepper, green onions, and red onions in a mixing bowl. Add a quarter of the sisig seasoning. Toss until evenly distributed. Serve!

Make the luncheon meat sisig by deep frying the luncheon meat until golden brown and crispy. Drain the oil and set aside. Arrange luncheon meat, green onions, and red onions in a mixing bowl. Combine Sisig seasoning with 1 tablespoon liver spread and add it into the bowl. Toss until evenly distributed. Serve!

Make the tuna sisig by heating butter in a pan. Add drained canned tuna. Saute for 2 minutes. Season with salt and ground black pepper and let it cool down. Combine tuna, bell pepper, green onions, red onions, and the remaining sisig seasoning. Toss. Serve. Share and enjoy!

Pork belly sisig is a tangy and savory Filipino dish, made to be enjoyed and shared with a group. Pair with an ice-cold drink and serve as a snack or as the main dish!

Pork Belly Sisig

~1 lb pork belly,

onion, chopped

garlic cloves, smashed

tsp black peppercorns

Water, just enough to cover the pork belly

unsalted butter

red onion,

garlic cloves,

-2 Thai chilies, minced

tbsp liquid seasoning (can also use soy sauce)

tbsp oyster sauce 2

chicken or pork liver, finely chopped 3

Salt and pepper,

Red onions, chopped

Green onions, chopped

Thai chilies, chopped

Calamansi wedges

unsalted butter,

In a pot, combine together the pork belly, onions, garlic, bay leaves, black peppercorns, and just enough water to cover the pork.

Bring this to a boil, remove any scum that floats to the surface, and let it simmer for 45-60 minutes, or until the pork belly is tender and cooked through.

Once tender, drain the boiling liquid. Let the pork belly air dry in the fridge for at least one hour to overnight.

Prepare the Pork Belly

Air fry the pork belly at 350 F for around 30-45 minutes until crispy, flipping occasionally to avoid burning. Chop the pork belly into small, bite-sized pieces. Set aside.*If you don't have access to an air fryer, you can either shallow fry the pork in oil or oven bake at 400 F for 30-45 minutes until crispy.

Melt the butter in a pan over medium heat. Saute the onions until soft and translucent, about 5 minutes. Add in the garlic and Thai chilies, and continue to saute for another 2 minutes until the garlic is golden and fragrant.

Add in the chicken liver, and cook until the liver is fully cooked through, about 5-7 minutes.

Finally, toss in the chopped crispy pork belly. Season with calamansi juice, liquid seasoning, oyster sauce, and salt and pepper to taste. Continue to stir fry until the pork is fully coated, and the sauce has reduced slightly, about 3-5 minutes.

Serve over a sizzling plate greased with 2 tbsp of butter. Top with a freshly-cracked egg, red onions, green onions, and chili peppers 4.
