Quick, delicious, bright and creamy salmon dinner prepared in just one skillet and served with an incredible lemon garlic cream sauce!&nbsp;All you need&nbsp;is about 20 minutes and a handful of ingredients.

Pan Seared Salmon with Lemon Garlic Cream Sauce

olive oil

(4-ounces each) skin-on salmon fillets, (room temperature)

salt and fresh ground black pepper, (to taste)

butter

fat free half &

all purpose flour

Parmesan cheese

lemon

garlic, (minced)

dill

thyme

salt and fresh ground pepper

parsley

Heat olive oil in a large skillet over medium-high heat.

Season salmon fillets with salt and pepper and transfer to the skillet, skin-side down, cooking 3 fillets at a time.

Cook for 6 minutes, or until cooked about three quarters of the way through. Do not move the fish around; just let it cook.

Using a spatula, flip the salmon fillets over and cook for 2 more minutes; remove from skillet and set aside.

Repeat with the rest of the fillets and set all aside.

FOR THE SALMON

In the meantime, combine half &amp; half, flour, cheese, lemon juice, lemon zest, garlic, dill, thyme, salt and pepper in a mixing bowl; whisk until thoroughly incorporated.

Add butter to skillet and melt over medium heat.

Add the prepared sauce to the skillet and bring to a boil; lower heat to a simmer.

Place previously prepared salmon fillets back in the skillet.

Cook for 2 to 3 minutes, or until salmon is heated through.

Remove skillet from heat.

Spoon sauce over salmon.

Garnish with lemon slices and parsley.

Serve.

lemon slices for garnish

Skillet Chicken Cacciatore

No way your will look like that if you follow the recipe as written.  First, the tomatos should be a can of diced tomatoes not fresh tomatoes that you dice (I used fresh then had to add a can of tomato paste to get it sufficiently tomatoey).   Second, you need to let the sauce simmer for 15 min or so to allow the sauce to thicken before adding the chicken and covering. Otherwise, it will be more soup/stew.  Third, 4 sprigs of thyme is not at all herby. Add some Italian seasoning or other fresh herbs.

Pan-seared scallops cooked in the most delicious garlicky butter sauce. An easy and simple recipe you can make at home in under 10 minutes!

Garlic Butter Scallops

salt and fresh ground pepper, (to taste)

sweet paprika

unsalted butter, (divided)

garlic cloves, (minced)

lemon juice

lemon slices, (for garnish)

Thoroughly pat dry the scallops with paper towels.

Remove any attached side-muscle on the scallop by pinching and tearing it away from the scallop.

Season scallops on all sides with salt, pepper, and paprika.

Set a large skillet over high heat and add 2 tablespoons butter; cook until sizzling.

Add the scallops in one layer without over crowding the pan. Cook in batches if the scallops do not fit in the pan all at once.

Cook scallops for 2 minutes, or until browned. Do not move them around.

Flip over the scallops, lower heat to medium-high, and continue to cook for 1 1/2 to 2 minutes, or until bottom is golden brown.

Remove scallops from pan and set aside.

Melt remaining butter in the skillet, scraping up any browned bits left on the bottom of the pan.

Stir in garlic; cook for 1 minute, stirring frequently. Do not burn the garlic.

Add wine and cook for 2 minutes.

Squeeze lemon juice into the skillet; stir, and taste sauce for seasonings. Adjust accordingly.

Return scallops to the pan and spoon sauce over scallops.

Garnish with parsley and lemon slices.

Sesame-Ginger Beef

lb. skirt steak, thinly sliced into 1/4" strips

cornstarch

lb. green beans,

soy sauce

tbsp. rice wine vinegar

sugar

green onions, chopped

I really liked it but found it salty. I would try low sodium soy sauce and skip the salt on the beef. You can salt to taste later.

First, let me say this is delicious, and once you have all the ingredients prepped, it does come together quickly. However, does anyone else finds it takes forever to prep all the ingredients? It definitely takes longer than 20 minutes to make.

This was a hit with the family. I would definitely double the recipe to feed a family of four.

Great but we added a little cayenne Pepper and paprika to get more layers of flavor.  Also used toasted sesame oil.

Tasty and quick. I double the sauce thinking it would be extra saucy for putting on rice but it just thickened due to cornstarch. Hubby said needs more sauce lol

So quick, easy and delicious!  I steamed the beans for 3-4 minutes instead of 1 minute, but other than that I followed the recipe. I made brown rice to go with it.  I would double the recipe when making dinner for 4 so there are leftovers. So good. Feeds my Chinese takeout craving for sure.  Highly recommend.

Tastes like takeout but fresher and not as salty. The cornstarch did a great job thickening the sauce. Tasty and healthy. I used yellow squash for the veg instead of green beans, broc would be good as well. Easy.

I think the diced onions protect the shrimp from the skillet and help diffuse the heat for more even cooking. I got great results from 3 minutes for just the onions and four minutes with the shrimp. Appeared as if simmering as shrimp were finishing. I am optimistic about chilled leftovers for shrimp salad tomorrow.

Great mellow taste! Neither the garlic nor the cilantro were overpowering in these amounts. I did have to cook the shrimp for a while longer than what the recipe stated, around 2 min per side or more. I used the 31/40 size shrimp.

Sloppy Joe Mac 'n Cheese

lb. Macaroni

Worcestershire sauce

c. grated mozzarella, divided

Bring an 8-quart stock pot of water to a boil and generously season with salt. Cook pasta according to package directions until al dente. Drain and return to pot.

Meanwhile, in a large skillet over medium-high heat, brown beef, breaking up meat with a spoon. Season with salt and pepper, then drain fat. Add garlic and onions and cook until softened, 2 minutes, then add brown sugar, tomatoes, Worcestershire, and chili powder and simmer, 10 minutes.

Drain pasta and add to skillet over low heat. Stir in parsley and half the mozzarella, then quickly toss together to evenly coat pasta. Top with remaining mozzarella and cover with lid to melt cheese.

Garnish with parsley and serve immediately.

This has become one of our favorites. I have changed it up by doubling everything except the pasta and I transfer it to a baking dish before adding the second round of  mozzarella. It’s already hot so all you need to do is get it brown and bubbly on the top. This takes It from good to Drool worthy!!!

Substitute beef for chicken cubes instead. Tasted amazing although two tbsp of sugar is way too much. Will lessen the sugar next time I make this.
