Cast Iron Skillet Pizza

Place a 9 inch cast iron skillet inside the oven. Turn oven to 550 degrees.

CAREFULLY remove the skillet from the oven and spread the oil in a thin layer across the pan.

On a lightly floured surface, work pizza dough into a 9-inch circle.

Gently place crust inside of the cast iron skillet.

Spread sauce in an even layer across the crust.

Sprinkle thyme and garlic powder over the sauce.

Add cheese and bake for 15-20 minutes or until the cheese is melted and the edges of the crust are dark golden brown.

Broil for 1-2 minutes or until the cheese starts to get dark golden brown spots.

Sprinkle with Kosher salt and garnish with fresh basil leaves. Slice and enjoy!

I made this recipe last night. I make pizza almost every Saturday evening as we have very few good pizza places to choose from. 

I followed the recipe...mostly. I forgot to use a cast iron skillet, as I said, I make pizza most weekends, I am in the habit of using a pizza steel and forgot the skillet step. 

I followed the rest of the recipe and it was GREAT. As I said I often make pizza and was looking for something different. This was it. A far enough departure from the standard pepperoni - sausage - usual topping pizza. 

I highly recommend this recipe and will be saving it to bookmark the site so I can make this again.

Homemade crispy crust, gooey cheese, and all of your favorite toppings are loaded into this cast iron skillet pizza. You'll never order take out again!

oz active dry yeast ((1 pkg))

water ((100 degrees F))

sugar

AP flour

tsp kosher salt

extra virgin olive oil, (plus extra for the bowl)

extra virgin olive oil

garlic, (peeled and smashed)

cornmeal

marinara sauce ((homemade

mozzarella cheese, (shredded)

Tbsp parmesan, (grated)

Tbsp extra virgin olive oil

fontina cheese, (shredded)

Whisk the yeast and pinch of sugar into the water and let stand 5 - 10 mins until it begins to bubble or foam.

In the bowl of a stand mixer fitted with a dough hook, mix the flour and the salt.&nbsp;With the mixer set to low, add the water/yeast mixture and the olive oil.

Knead for about 5 mins, until the dough is smooth. If it's too dry, add an additional tbsp or two of water, mixing well before adding the next. (By hand: stir together all ingredients and knead on the counter for 8-10 mins.)

Turn out onto a lightly floured surface and knead for about 2-3 mins until the dough is very smooth and then shape it into a ball.

Place the dough in a well-oiled large bowl, turning the dough so it is coated on all sides and cover the bowl tightly with plastic wrap.&nbsp;Allow it to rise at room temperature until doubled in size, 1 - 1 1/2 hrs. (Place the bowl in the warmest part of your kitchen.)

Lightly punch down the down and divide the dough into 2 pieces. Roughly shape the divided pieces into balls and cover with plastic wrap.

Pizza Dough

Combine the olive oil and the garlic in a small saucepan over low heat. When the oil begins to shimmer and become fragrant, turn off the heat let the oil come to room temperature with the garlic cloves still in it. After 30 mins to an hour, strain out the cloves and reserve. (Extra garlic oil can be stored in the refrigerator for future use.)

Garlic Oil

Preheat your oven to 500 degrees F or as high as your oven will go. Once the oven is hot, place your cast iron skillet in the oven for about 5 minutes. While the pan heats, stretch the dough.

Working with one piece and leaving the other covered, use a rolling pin or your hands to stretch the dough into a round shape (about 12 inches). If the dough springs back and loses its shape, cover it and set aside for a few mins before re-rolling (this allows the dough to relax).

Take the skillet out of the oven (careful! it will be crazy hot!) and place on a cooling rack or trivet. Sprinkle the bottom with a little cornmeal. Place the stretched dough in the pan and stretch it evenly, a little up the sides of the pan.&nbsp;

Make the Pizzas

Brush the dough with 1 tbsp garlic oil. Place the skillet in the oven and bake for about 2-3 minutes, just until the dough begins to bubble.&nbsp;

Remove the skillet from the oven and spread the marinara sauce evenly over the dough, bringing it right to the edges.

Sprinkle with mozzarella and parmesan, again, bring it close to the edges. Scatter a few torn basil leaves over the pizza and brush the edges with garlic oil. Sprinkle with kosher salt and a drizzle of the garlic oil.

Place the skillet back in the oven and bake for 10-12 mins, or until the pizza is golden brown and bubbling and the crust is cooked through. Slice and serve hot.

Classic Pizza

Heat the oil in a large nonstick skillet over med/high heat until hot. Add the mushrooms and sprinkle with salt and pepper. Saute until golden brown and the water is released, about 5-8 minutes. Sprinkle with the thyme. Reserve.

Remove the skillet from the oven and sprinkle the mozzarella and fontina cheese over the dough, bringing it close to the edges. Scatter the sautéed mushrooms over the pizza, and then add several small dollops of ricotta. Brush the edges with garlic oil. Sprinkle with kosher salt and a drizzle of the garlic oil.

Preheat oven to 500F. Place un-oiled cast iron skillet in oven to preheat for 20-25 minutes.

Cut dough ball in half, use hands to press out dough into a circle about the size of your skillet.

Have all ingredients ready to go and remove heated skillet from oven. Very carefully use a few paper towels/napkins to spread oil around to coat hot skillet. Carefully place dough circle in pan and adjust to fit edges.

Add sauce leaving room around the edges for crust to form and rise. Sprinkle mozzarella &amp; parmesan cheese over top. Add additional toppings of choice.

Bake for 14-16 minutes – cheese should be bubbling, browned, and crust should be golden brown. Allow pizza to cool slightly then carefully transfer to cutting board. Top with red pepper flakes if desired. See notes for extra toppings.

Either repeat cooking process with other dough ball to make second pizza or freeze second dough ball for later use.

Ditch the pizza stone for this cast iron skillet pizza!  There is no outer crust on a skillet pizza so the toppings go from edge to edge, which means extra cheese, extra toppings, extra delicious!  Crisp bottom, soft chewy center - think of this like a deep dish pizza but not as deep.  Did I forget to mention all you need is 30 minutes?

This easy skillet pan pizza recipe will totally blow your mind! It's a pizza night staple in our house.

Easy Skillet Pan Pizza

(375 g) bread flour

(6 g) kosher salt

(4 g) active dry yeast

garlic (minced)

28 oz can crushed tomatoes

pepper

whole milk (low moisture mozzarella)

shredded fontina cheese, (grated)

provolone cheese, (grated)

oz pepperoni slices ((natural casings are best))

sausages,

parmesan, (for sprinkling)

olive oil, (for the skillet)

In the bowl of a stand mixer, combine flour, salt, and yeast and stir to combine. Pour water and olive oil over the top and mix with the dough hook until combined, about 2-3 minutes. Transfer to a greased bowl or large plastic container, cover with a lid or plastic wrap, and let rise at room temperature for 6-8 hours. This is important for developing flavor, don't rush the process!

While the dough proofs, make your sauce. In a medium saucepan, heat olive oil over low heat. Add garlic, oregano, and crushed red pepper and cook for 1 minute, stirring constantly. Add crushed tomatoes and sugar. Cook over medium heat, stirring occasionally, until thickened and darker in color, about 15 minutes. Season to taste with salt and pepper. Cool to room temperature before using, can be stored in the fridge for up to 1 week.

Mix the cheeses together in a bowl and gather other pizza ingredients. In a small skillet over medium heat, add the Italian sausage and cook until browned, breaking it up into pieces as it cooks. Set aside.

Drizzle 2 tablespoons of olive oil into a 12-13 inch cast iron skillet or cake pan, turning to evenly distribute the oil. Remove the proofed dough from its container and press it into the skillet. If the dough won't stretch to the edges, give it 5 minutes for the gluten to relax and then continue stretching. Once it reaches the edges, cover it with plastic wrap, and allow it to rise for 20 minutes.

Preheat an oven to 500 degrees F. Spread the top with the tomato sauce. Sprinkle with cheese and top with pepperoni and sausage crumbles. Sprinkle the top with dried oregano if desired. Bake for 20-25 minutes until the top is browned and when lifted with a spatula, the bottom is golden brown.

Remove pizza from the oven. Allow it to cool for 5 minutes or so then transfer to a cutting board and cut into slices. Sprinkle with parmesan cheese if desired.
