Creamy and comforting chicken and stuffing casserole made in the slow cooker. This low prep casserole is bursting with flavor and is the perfect way warm up on a chilly winter evening.

Slow Cooker Chicken and Stuffing Casserole

carrots,

broccoli

1.5 lbs. boneless, skinless chicken thighs

(10.75

(10.75 oz) can condensed cream of chicken soup, NOT diluted

water

butter, melted

Spray inside of a slow cooker with cooking spray.

Place carrots and broccoli at the bottom of the prepared slow cooker.

Season chicken with salt and pepper and place on top of the vegetables.

In a medium bowl, whisk together condensed mushroom soup, condensed chicken soup, and water. Pour sauce over the chicken.

Sprinkle dry stuffing mix over top of the chicken. Drizzle with melted butter.

Put a lid on the slow cooker and cook on LOW heat for 6-8 hours (or on HIGH for 3-4 hours).

Such an awesome recipe!  I ad ground up sausage to it and it’s amazing!! I get tons of compliments on it.

I made this using turkey broth instead of chicken broth and it was very good.  Only one change I will make in the future is to cook it on low for only 3 hrs. stirring half way through.  Four hours was too long for my Ninja slow cooker even on low.   It is still a great space and time saver while you are fixing your other Thanksgiving menu items.  Will use this recipe again!
