Smoked Buffalo Chicken Wings Recipe

16-20 Chicken Wings,

olive oil

salt

pepper

Frank’s Red Hot sauce

butter

Pat dry the chicken wings with a paper towel.

Place a drying rack over a cookie sheet and place wings on top.

Place into a refrigerator, uncovered, for 1-3 hours to dehydrate (3 hours being optimal).  This is crucial to the end texture of the chicken. This process will prevent the wings steaming when you cook it, which creates a rubbery texture. We’re going for crispy here, trying to emulate the texture of fried wings.

When ready to cook, preheat smoker to 225 degrees, and remove wings from fridge.

In a large bowl, toss the wings with olive oil, salt, and pepper.

Place wings on the smoker for one hour.

Next, increase heat to 350 and let wings cook another 30 minutes. Conditions can change which can lead to more time. The key is to not pull the wings off until you get that crispy outside. You can tell by touch.

Remove from smoker and toss immediately with hot sauce mix.

Serve with your favorite ranch or blue cheese dip.

Bring butter and sauce to simmer (not boil!!) and remove from heat. Place into a large bowl to toss the wings in. *see notes

Bourbon BBQ Smoked Chicken Wings

lbs chicken wings, patted dry

sweet and smoky chicken rub ((or your favorite store-bought rub))

Tbsp vegetable oil

hickory wood pellets

sweet yellow onion (, finely minced)

garlic (, finely minced)

bourbon (use a good quality)

tomato paste

ketchup

brown sugar

apple cider vinegar

Worcestershire sauce

Tbsp liquid smoke

Tbsp kosher salt

tsp black pepper

cayenne pepper

hot sauce ((optional))

Add a drizzle of olive oil to a saucepan over MED heat.&nbsp; Add onion and garlic and cook about 5 minutes.&nbsp; Add in bourbon and continue cooking about 3 minutes.

Add tomato paste and whisk to break it up.&nbsp; Add all remaining sauce ingredients and whisk to combine.&nbsp; Increase heat to MED-HIGH and bring to a boil.&nbsp; Reduce heat to MED-LOW or LOW and simmer for about 15-20 minutes.

Pour sauce through a fine mesh sieve to strain out onion and garlic pieces if you like a smooth, glossy sauce.&nbsp; Set aside and cool.&nbsp; Store leftover bbq sauce in an airtight container in the refrigerator for 2-3 weeks.

BOURBON BBQ SAUCE

Pat chicken wings dry with a clean paper towel.&nbsp; Add wings to a large mixing bowl and toss with vegetable oil.&nbsp; Add rub and massage into the wings, making sure each wing is coated.&nbsp;&nbsp;

Add hickory wood pellets to hopper.&nbsp; Turn on smoker, open lid and set to the SMOKE setting.&nbsp; Heat on SMOKE, with the lid open, for 5-10 minutes, until very smoky.&nbsp; Add chicken wings to oiled grill grates, set smoker to 250 F degrees.&nbsp; Close smoker lid and smoke for 2 hours 30 minutes, or until chicken wings reach an internal temperature of 165 F degrees.&nbsp; Use an instant read meat thermometer to insure accurate cooking temperatures.

Change smoker setting to HIGH and baste chicken wings on both sides with bourbon bbq sauce.&nbsp; Cook wings for 5 minutes, then flip them over and cook 3-5 minutes on the other side.

Select SHUT DOWN on smoker and remove chicken wings to a foil or parchment lined plate or baking sheet.&nbsp; Let rest 5-10 minutes.&nbsp; Turn smoker off and unplug it.&nbsp;&nbsp;

Eat wings as is, or brushed with additional bbq sauce.&nbsp; Dip in blue cheese or ranch dressing and serve with celery and carrots for a traditional experience.

Add a few spoonfuls (almost half) of the sauce to the bag with the chicken wings and massage the bag until evenly mixed, Marinate 1 hour or overnight in the fridge.

Place the chicken wings in a smoker set to 250 degrees for two and a half hours. Flip them halfway through. Brush with the sauce during the last half hour. Check the internal temp to make sure they are at 170 degrees before serving.Note, these can also be baked in the oven: Place wings on a lined baking sheet and put in a 400 degree oven for 45 minutes, flip them halfway through. Brush with the sauce during the last half hour.

Toss the cooked wings with the remaining sauce and garnish with sesame seeds if desired.

How to make the best Buffalo Wings on your smoker or pellet grill

Want to know my secret for making the best Smoked Chicken Wings every time? Cover them in the best chicken wing seasoning, then cook them low and slow, and finish them over high heat. Using my tested and perfected method will give you flavorful, juicy, tender meat inside and crispy skin on the outside every time!

Smoked Chicken Wings

chicken wings (party wings – separated drums and flats)

Preheat a smoker to 225°F with hickory, mesquite or pecan pellets, or wood chips.

If the wings were frozen, make sure that they're fully defrosted and pat them completely dry (this will help them get a crispy skin on the outside.)

Drizzle the olive oil evenly over the wings and rub the oil into the wings.

Sprinkle the chicken wing seasoning evenly over the wings, then rub it onto all sides of the wings.

Place the wings in an even layer on the grill grates in the smoker and smoke the wings for 2 hours.

Remove the wings from the smoker and finish them in the oven, in an air fryer or on the smoker at a higher temperature, to achieve a crispy skin on the outside

Place them in an air fryer basket in an even layer. It’s very important that each wing has space around it, so that the air can circulate around the wings and get them crispy.

Cook the wings for 3 minutes at 400°F, flip and cook for an additional 3 minutes at 400°F.

To finish the wings in an air fryer

Preheat the broiler in the oven to high.

Arrange one rack in the oven about a third of the way from the top of the oven.

Place the wings in a single layer on a foil-lined baking sheet.

Place the wings under the broiler for 2 minutes, flip and broil for another 2 minutes on the other side.

To finish the wings in the oven

Remove the wings from the smoker and cover loosely with foil.

Turn the heat on the smoker up to 400°F.

When the smoker has heated up, place the wings back on the smoker for 3-4 minutes per side to crisp up the skin.

To finish the wings on the smoker

Toss the wings with sauce, or serve the sauce on the side for dipping.

If tossing the wings in sauce, add the wings to a large bowl, pour in the sauce and use tongs to toss the wings until they’re fully coated in the sauce. Make sure the sauce is room temperature or warm. If you toss the cooked wings in cold sauce, it will cool down the wings.

In a mixing bowl, combine mayo, sweet chili sauce, hot sauce, minced garlic, red pepper flakes, lemon zest, lemon juice, and honey.

Whisk the ingredients together until smooth and set aside.

Making The Bang Bang Sauce:

Pat the chicken wings dry using paper towels.

Apply a thin layer of mustard over each wing to act as a binder.

In a separate bowl, mix together salt, pepper, garlic powder, onion powder, smoked paprika, and chili powder.

Generously season the wings with the spice mixture.

Allow the wings to marinate for 15-20 minutes.

Preheat the smoker to 250 degrees F.

Add the hickory wood chunks to the smoker.

Place the wings in the smoker and let them smoke for 60-90 minutes or until they reach an internal temperature of 165 degrees F.

Once smoked, transfer the wings to a baking sheet.

Smoking the Chicken Wings:

In a skillet, pour canola oil to a depth of at least 2 inches and heat it to 350 degrees F.

Carefully add the smoked wings to the hot oil, frying them for 60-90 seconds on each side until golden brown.

Remove the wings from the skillet and drain any excess oil on paper towels.

In a large mixing bowl or saucepan, add the wings.

Pour the prepared Bang Bang Sauce over the wings, tossing them gently to ensure they're well-coated.

Transfer the sauced wings to a serving plate.

Garnish with freshly chopped chives and serve hot.
