Sopa de Coditos is a classic Mexican soup. It’s made up of toasted elbow pasta swimming in a savory tomato sauce. Full of delicious flavors and comforting goodness.

Sopa de Coditos

tomatoes (chopped)

garlic

onion

salt

water ((for blending))

olive oil

lb elbow macaroni ((or 8 oz))

carrot

vegetable broth

calabacita (diced)

water ((for the end))

Add the tomatoes, garlic, onion, salt, and 1 cup water in a blender.

Blend until smooth.

Set aside until ready to use.

Heat olive oil in a large stock pot.

Add the elbow macaroni.

Do not stop stirring.

Toast until golden brown.

Add the carrot.

Cook for 1 minute.

Add the broth.

Bring to a boil.

Simmer for 10 minutes.

Add the calabacita.

Cook for an additional 5 minutes.

Add 1 cup of water.

Stir and serve immediately.

La Sopa de Coditos es una sencilla pero reconfortante sopa de pasta que no puede faltar en ningún hogar mexicano. Es súper fácil de hacer, pasta de coditos con 6 ingredientes  en un caldo de tomate ligero y sabroso.

oz de pasta de codito (ver arriba)

cucharadas de aceite de aguacate (o cualquier aceite neutro)

tomates Roma

cebolla picada

dientes de ajo

chiles de árbol (opcional para condimentar 🔥)

tazas de caldo de

taza de frijoles, lentejas o garbanzos cocidos.

Cilantro

Añada los tomates, la cebolla y el ajo a una licuadora junto con 1 taza de caldo de verduras (o 1 taza de agua con 1 cucharada de caldo) y licua hasta obtener una mezcla homogénea. Reservar.

Poner una olla a fuego medio y añadir el aceite. Una vez que el aceite esté caliente, añadir la pasta y freír hasta que esté ligeramente dorada durante unos 3-5 minutos. Remover constantemente para evitar que se queme.

Añadir el puré de tomate una vez que la pasta esté dorada y dejar cocer a fuego lento durante 1-2 minutos. En este momento, añade las zanahorias cortadas en cubos o las verduras que prefieras.

Vierta el caldo de verduras en la olla y llévelo a ebullición. Una vez hirviendo, reducir rápidamente a fuego lento y cocer durante 3-4 minutos hasta que la pasta esté blanda pero no se deshaga.

Probar y rectificar de sal. Añade frijoles cocidos, lentejas o la proteína que prefieras.

Quick & Easy Sopa de Coditos

Roma tomatoes

white onion, quartered

garlic,

1-2 chipotles in adobo, seeded

elbow macaroni

carrot,

celery, diced

cilantro

½ medium zucchini, diced

Salt & pepper

Lime wedges

Avocado cubes

Hot sauce

Corn tortillas

Vegan queso fresco

Add tomatoes, onions, garlic, chipotles in adobo, and 1 cup of broth to a blender. Mix on high until smooth, then set aside.

Heat olive oil in a stockpot over medium. Add the macaroni in and toast, stirring constantly, until fragrant and golden brown.

Add the carrots and celery, cooking for another 3-4 minutes. Transfer the tomato mixture to the pot and season for another 5 minutes, then pour in the rest of the broth and cilantro sprigs.

Bring everything to a boil, then turn the heat down and simmer the soup for 8-10 minutes. Add the zucchini and simmer for another 5 minutes until the pasta and vegetables are tender.

Taste and season it with salt and pepper to your preference, then serve immediately with a squeeze of lime, cilantro, hot sauce, corn tortillas, etc. Happy eating!
