In a medium bowl, mix the masa flour and ½ cup (120 ml) of water together with your hands. Once combined, add the rest of the water and knead until the dough forms a smooth ball.

Heat a large pan or griddle over medium-high heat.

Fry the dough, turning frequently, until just lightly brown about 5 minutes.

Once the dough is cooked, shape the sopes by pinching the sides up to form a wall around the edge. Set aside to cool.

Rip the stems off the dried chiles and discard the seeds. Rinse the chiles, if necessary.

Add the chiles to a small pot of water and bring to a boil over high heat. Once boiling, remove the pot from the heat.

Transfer the chiles and their cooking liquid to a blender and add 1 teaspoon of salt and the garlic. Blend until smooth. Set aside.

Add the tomatoes to a small pot of water and bring to a boil. Cook until the tomato skins split, then remove from the heat and drain, reserving ½ cup (120 ml) of the tomato water.

Transfer the tomatoes to a blender with the reserved cooking liquid, oregano, and ½ teaspoon of salt. Blend until smooth. Set aside.

Heat a large pan or griddle over medium-high heat. Add the skirt steak and season with the meat seasoning and remaining teaspoon of salt. Cook the meat, flipping frequently until seared and cooked through, about 10 minutes.

Transfer the meat to a cutting board and cut into small pieces. Set aside.

Heat the corn oil in a deep, large pan over high heat.

Dip the sopes in the chile sauce, turning to coat completely.

Once the oil is hot, fry the sopes, flipping frequently, until golden brown, about 5 minutes. Drain the sopes on paper towels or a wire rack.

To serve, fill the sopes with refried beans, carne asada, shredded lettuce, tomato sauce, Mexican crema, and queso fresco.

Add masa harina and salt in a large bowl. Mix together with a spoon.

Pour hot water and olive oil into the bowl and mix together until all the water is absorbed.

Using your hands, form the dough into a big ball. The dough should be firm and springy when touched, not dry or super sticky. If the mixture is too dry, add more water in small amounts until the dough is springy and holds together.

Place the dough ball in the bowl and cover it with a clean kitchen towel or plastic wrap. Let the dough rest for 20 minutes. This will help ensure that all the water gets absorbed.

Divide the dough into 14 equal pieces. Roll each piece into a ball with the palms of your hands and place them in the mixing bowl. Cover the bowl with a clean kitchen towel or plastic wrap to keep the balls moist while you're working.

Preheat a griddle or large nonstick skillet over medium-high heat.

Open a gallon-sized zip-top storage bag and cut the seams on each side so that it makes one large rectangular piece of plastic. Alternatively, you can use two large pieces of parchment paper.

Open a tortilla press and lay the plastic (or both pieces of parchment paper) inside of it so that it covers the upper and bottom parts of the tortilla press. (see photos in post for examples)

Place one dough ball in the middle of the tortilla press, close the top and gently press to flatten it out. Open the tortilla press and peel back the plastic bag (or parchment paper) to transfer the tortilla to your hand.

Place the flattened dough onto the hot skillet and cook for 30-45 seconds. Flip it over and cook for another 30-45 seconds. Flip over one last time and cook until beautiful brown marks form.

Transfer the cooked dough to a plate and let it cool for about 30 seconds. When cool enough to handle, pinch the edges around the entire dough using your thumb and index finger to create a rim. (see photos in post for examples)

Cover the sope with a towel and repeat until all the sopes have been formed.

To bake: Preheat oven to 400°F. Transfer the sopes to 2 large baking sheets and bake for 5 minutes to fully cook the sopes.

To fry: Heat vegetable oil in a large skillet over medium-high heat. Once the oil is hot, fry the sopes 2 or 3 at a time, flipping frequently, for about 2 minutes until light golden brown. Drain the sopes on paper towels or a wire rack.

Serve the sopes with desired toppings like beans, cheese, ground beef, shredded chicken, shredded lettuce, salsa and enjoy!

Heat a comal or skillet over medium heat until very hot.

Combine the masa harina, water and salt, kneading in a revolving motion with your hands. Knead for a couple of minutes, until dough is smooth and has no lumps. If it feels too dry, add a bit more water.

Divide the dough into 12 balls, each about 2-inches in diameter. Line the bottom of a tortilla press with circles cut from a thin plastic bag (like the ones from the produce section of your grocery store). One at a time, place a ball of dough onto the plastic lining the bottom of the tortilla press, and top with another layer of plastic. Press down to make a flat disk as thick as a pancake, about 1/4-inch thick (much thicker than a tortilla). You can also flatten and form them by hand. Repeat with all 12 balls.

As you make them, place each sope on the hot comal or skillet. Let them cook about one to two minutes on each side, until opaque and speckled, and they can be flipped without sticking.

Take them off the comal and place them on a chopping board. Using a kitchen towel to protect your fingers, make a rim around each sope by pressing and pinching with your fingers along the edges. Return them to the comal or skillet, and let them cook for one or two more minutes per side, until thoroughly cooked.

If eaten the same day, they may be kept wrapped in a clean kitchen towel. If not, wrap them in a kitchen towel or paper towel, and store inside a closed plastic bag in the refrigerator. They will keep for up to 3 days, afterwards they will turn too hard. Reheat on hot comal or skillet for a couple minutes before eating. They can also be frozen and kept for months.

To make the sopes:

Once the sopes have been thoroughly cooked and warmed, place on a platter and add a generous tablespoon of refried beans, shredded lettuce, crumbled cheese, chopped onion and Quick Roasted Salsita. Salsa may be left on the side for people to add as much as they like.

To serve:

Tinned Fish Sopes

240 g (2 packed cups) Heirloom Blue Corn Masa Harina

254 ml (2 cups or 300 grams) warm water

avocados

½ lb smoked trout or other tinned fish

Roma tomatoes, de-seeded and diced

Put your masa harina in a large bowl. Add warm water, starting with 2 cups, and mix, kneading with your hands, for about three minutes. Add more water if needed, a bit at a time, until the dough reaches a Play-Doh-like consistency. Cover with a damp paper towel and let rest while you make the other components.

Portion the masa into 8 equal-sized balls (68 g each).

Using a tortilla press, your hand or the bottom of a glass, press the masa into 1 cm discs and cook on a preheated comal or griddle, flipping after about a minute and a half, until each side gets a bit of char.

Remove from the heat and pinch around the edges to create a base for the sope (careful not to burn your fingers!).

Mash the avocado in a bowl or molcajete and season with lime and salt to taste. Reserve.

In a bowl, break the fish into large pieces and mix in the tomatoes, cucumber, Serrano, carrots, lime and salt to taste.

Reheat the sopes (pinched ridge side-down) until the base is crispy. To the base of the sope, add the guacamole followed the fish mixture. Garnish with pickled red onion and hot sauce to taste and enjoy.

Mezcla la masa harina con la sal y las 2 cucharadas de aceite y poco a poco ve agregando el agua. Si necesitas más agua pon de muy poquito en muy poquito. La idea es que te quede como playdough o plastilina suave.

Calienta el sartén o comal donde los vas a hacer. Para que no se peguen los sopes, el comal tiene que estar super caliente.

Mientras se calienta el sartén o comal forma con la masa una bolita y ponla entre dos pedazos de plástico. Con un plato que tenga fondo plano aplástala hasta que te quede un círculo como de 2 o 3 mm de grueso. También puedes usar una máquina para hacer tortillas.

Pon cada tortillita en el comal o sartén hasta que se vea seco por encima. Dále la vuelta y deja hasta que esté cocido. En cuanto lo saques, pellizcale la orilla para formar un borde.

Repite este proceso con toda la masa preparada. Cuando estén listos los sopecitos ponles frijolitos, luego la lechuga, la salsa y la crema.También puedes ponerle cebolla morada, cebolla encurtida o rebanadas de chile.

Add the masa harina and salt to a large bowl and whisk. Then, pour in 1 &frac12; cups of warm water and mix together with your hands.

Knead the dough to form a ball that&#39;s sticky enough to stay together, but not coming off on your hands too much. Keep mixing and pressing with your palm for a few minutes.

If the dough appears too crumbly, add a tablespoon of water at a time until the texture resembles play dough. If it becomes too sticky, add in a little more masa harina.

Dough

Break off pieces of the masa to form small balls (about 60-65 grams each, or the size of a golf ball). Roll each piece of dough in between your palms until smooth. Cover them with a tea towel on your counter or a cutting board.

Rolling

If you have a tortilla press, cut a zip-top bag or wax paper into 2 pieces that will fit into the press (one for each side of the sope).

Open the press and place a dough ball in the center on a piece of plastic. Place the other piece on top and close the press down quite gently to form tortillas about &frac14;-inch thick.

If you don&#39;t have a tortilla press, place your ball of dough between the same 2 pieces of plastic on your counter. Press the dough down with the bottom of a baking dish or flat plate.

Pressing

Preheat a cast-iron skillet up to medium. Then, add a sope in and cook on the first side for 60-70 seconds. Flip and cook for another 60-90 seconds, or until brown spots are forming and it&#39;s puffing slightly.

Remove from heat and let rest while you add in the next batch of sopes. After about 30-60 seconds, pull a little dough from the inner portion of the cooked sope out to the edge with your thumb and index finger. Do this all the way around to form a ridge. Cover the sopes with a tea towel, and repeat this process with the rest.

Cooking

Heat about a &frac14; cup of neutral oil in the same skillet over medium. Fry each sope on both sides for about 30 seconds, or until they are light gold in color. Remove from heat and transfer to a paper towel-lined plate to get rid of any excess oil.

Serve your sopes with a layer of refried beans on the bottom. Top them with optional garnishes like salsa fresca, avocado, vegan queso fresco, vegan Mexican crema, cilantro, lime juice, or hot sauce. Happy eating!

Place the other plastic piece on top and close the press down to form tortillas slightly thicker than normal (about 1/8-inch thick).

If you don't have a tortilla press, place your ball of dough between the same 2 pieces of plastic on your counter. Press the dough down with the bottom of a baking dish or flat plate.

Preheat a cast-iron skillet or comal up to medium. Cook each tortilla for about 60 seconds on the first side, or until brown spots are forming and the edges are curling up.

Flip and press down on the tortilla lightly until it starts to puff up, about 80-90 seconds. Remove from heat and keep warm while you continue cooking the other tortillas.

After ~30 seconds, pull a little dough from the inner portion of the cooked tortilla to form a small ridge around the outside. Pinch around the middle portion as well to form little craters (similar to an English muffin).

Lightly brush the bottom of your skillet with oil, then add the pinched tortillas back in. Drizzle each one with a little refined coconut oil or other vegetable oil. Continue cooking for another 2-4 minutes until crispy.

While in the pan, top each picadita with either salsa roja or salsa verde. Garnish with queso fresco, diced white onion, or Mexican crema. Happy eating!
