Gently lower the egg, in the shell into the heated water using a slotted spoon or a pair of tongs.

Once time has been reached, crack the egg, removing any additional watery white, if wanted.

Serve with salt and pepper or everything but the bagel seasoning.

The 60 degree egg refers to 60 degrees celsius/140 Fahrenheit for 60 minutes. This is the temperature of the egg throughout. The outer white is watery and fluid, the white connected to the yolk is just starting to set and starting to turn opaque white with a warm runny egg yolk.

It is an egg cooked at 63 degrees (technically 62.8 C) or 145 Fahrenheit for 60 minutes. The 63-degree egg is what most people would consider a poached or soft boiled egg, the holy grail of perfect soft eggs.

The white close to the yolk is set enough to keep the warm yet softly creamy yolk contained so you can slice it with the edge of a spoon. It is up to you if you scoop out the watery white and add it to the soft egg.

Set sous vide machine to 75C/167F. Once temperature is reached, gently place eggs in the bath for 14 minutes.

Remove eggs from sous vide bath with tongs. Immediately place eggs into a bowl of ice water for 5 minutes.

Once chilled, gently crack each egg over a slotted spoon to remove any excess runny whites. Place into individual bowls, or straight onto toast, shakshuka or whatever you are making! Season egg with salt and pepper to taste.

Set sous vide machine to 75C/167F. Once temperature is reached, gently place eggs in the bath for 1 hour.

Once chilled, gently crack and peel each egg. Season with salt and pepper (if necessary), or store in a container in the fridge. Enjoy!

Sous Vide Poached Eggs (with easy Hollandaise)

-2 lemon juice

(68 grams) butter, melted and warm (1/2 stick)

cayenne pepper (optional)

HEAT SOUS VIDE WATER BATH: to 167F/75C, If you&#39;re only making a few eggs, you can use a smaller pot. Note 1 for slower cooked sous vide eggs that can be kept warm for up to 2 hours.

SOUS VIDE EGGS: Lower eggs gently one at a time with a spoon into the water bath to avoid cracking. Immediately set separate timer for 13 minutes (plus or minus 30-60 seconds).

COOL EGGS: When cooking is finished, transfer eggs to bowl of ice water for 30-60 seconds to cool down enough to handle and to tighten up whites.

REMOVE &#39;POACHED&#39; EGGS FROM SHELLS:  Have shallow bowl ready. To crack egg, tap one side of egg firmly on counter (not the side of a bowl). With two thumbs, separate shell over bowl, letting egg slip out. Repeat with remaining eggs, leaving one egg for hollandaise sauce (if making).

MAKE HOLLANDAISE (optional): Crack the one remaining egg into a measuring cup (large enough to fit an immersion blender) or a blender. Add 1-2 teaspoons lemon juice and pinch of cayenne pepper if desired. Blend with immersion blender (or blender) for 10 seconds. Slowly add warm melted butter in a stream while continuing to blend for another 10-20 seconds or until smooth and frothy. Taste and adjust with more lemon, cayenne, salt (if you used unsalted butter).

PLATE AND SERVE: Transfer the eggs using a soup or slotted spoon to your buttered toast or a serving bowl. Drizzle with hollandaise and garnish as desired.

Prepare the perfect ajitama ramen egg, with or without a sous vide. These Japanese soft-boiled eggs are full of umami with a touch of sweetness.  Ajitama are great for much more than just ramen; use them as a snack, on a salad, with rice, or on toast.

Ajitama Ramen Egg Recipe (sous vide and non sous vide options)

Sous Vide Method:Preheat water plus 1 tablespoon of vinegar to 194°F (90°C). Prick a hole on the fat end of the egg with a needle or tack and gently drop in the four eggs (shell-on), cooking for 8 minutes and 30 seconds precisely. Immediately chill eggs in an ice bath for ~15 minutes. Gently crack eggshell all around the egg and peel off shells. Be sure to peel off thin membrane on the surface of the egg white.

Steamed Method:Fill pot with 1.5 inches of water and insert steamer and cover. Boil water to a hard boil.Prick a hole on the fat end of the egg with a needle or tack and add four eggs to steam for precisely 7 minutes. Immediately chill eggs in an ice bath for ~15 minutes. Gently crack eggshell all around the egg and peel off shells. Be sure to peel off thin membrane on the surface of the egg white.

Boiled Method:Fill pot with 4 cups of water plus 1 tablespoon of vinegar. Bring water to a rolling boil. Prick a hole on the fat end of the egg with a needle or tack and carefully add 4 eggs with a slotted spoon. Lower heat slightly to bring water to a simmer. Immediately chill eggs in an ice bath for ~15 minutes. Gently crack eggshell all around the egg and peel off shells. Be sure to peel off thin membrane on the surface of the egg white.

Three Options for Cooking Eggs

Combine mirin and sake in a small saucepan.

Heat saucepan on medium high heat to a boil. Lower the heat to a simmer and add sugar. Stir to dissolve sugar. Simmer for roughly one minute in total.

Remove from heat, add minced garlic, and cool completely. Use the fridge to cool if needed.

Add soy sauce

To Make the Marinade

Place the eggs in a Ziploc bag or airtight container and add the marinade. A Ziploc bag will create the most coverage for the eggs. If you prefer to use a container, you may need to increase the amount of marinade or dilute the marinade with water and marinate it for longer. We want the eggs fully covered in marinade.

If using a Ziploc bag, squeeze excess air out of the bag and seal. Use a clip or rubber band to pinch the bag just above the eggs to help fully submerge the eggs. Refrigerate in marinate for 12 hours. Eggs may be kept refrigerated 3-4 days.

To Marinate the Eggs

Cut In half lengthwise. A sharp knife, clean fishing line, or a wire cheese cutter will help keep the cut clean.

To Serve

Cloudy, light and fluffy is what comes to mind when you take your first bite of these sous vide scrambled eggs.

Pre-heat the sous vide water bath to 75° C / 167° F.

Whisk the eggs, milk, melted butter and any add-ins in a bowl, then pour into a ziplock freezer bag.

Place in the water bath and seal using the water displacement method. Clip the bag to the side of the container to keep the ziplock bag above the water line.

Cook for 16 to 17 minutes, removing every 5 minutes to massage with your hands.

Remove from the bag and season with salt &amp; pepper. Serve immediately.&nbsp;

Is it possible to bag the eggs the night before and leave in the fridge?
Or even cook the night before and reheat in morning? Whats best prtice for reheathing?

This came out delicious! We just did plain scrambled eggs with no add-ins. Put the salt in pepper in after. At first as I pulled it out for the last time, the contents of the bag looked unappetizing and still liquid, but when I opened the bag and looked inside they were the lightest more decadent scrambled eggs I've ever had. Maybe too rich to have every day but man I enjoyed this. Looking forward to experimenting with it some more.

I've never heard of sous vide scrambled eggs. I always use the hot and fast method since scrambled eggs are my go to when I'm rushing to get out of the house in the morning. Next time I have a few extra minutes I'll pull out my sous vide and give this a try!
