Cornbread Dressing is a classic southern dish served especially during the holiday season. Moist and delicious, cornbread dressing makes the perfect side dish!

Southern Cornbread Dressing

buttermilk biscuits (or 3 slices of sandwich bread)

butter (sliced)

cream of chicken soup

Preheat oven to 350º F.

Crumble all of the cornbread and biscuits (or white bread slices) into a very large bowl. Add salt, pepper, eggs, onion, celery, butter, cream of chicken soup, and chicken stock. Stir until well-combined.

Pour dressing into two 9x13 baking dishes and bake until lightly browned, about 30 - 45 minutes. To test doneness, shake casserole dish lightly. If the center of the dressing moves, then the dressing is not cooked through in the center. Continue to bake until the dressing is set throughout.

Cornbread dressing with chicken is a traditional dish served at holiday and family gatherings across the South. Crumbled homemade cornbread, sautéed vegetables, hard boiled eggs, shredded chicken are baked in a casserole dish until golden brown.

Southern Cornbread Dressing with Chicken

eggs (slightly beaten)

hardboiled eggs (chopped)

Preheat oven to 450 degrees.

In large skillet, melt butter over medium heat. Add celery and onion and sauté for 15 minutes. Remove from heat and set aside.

Combine cornbread with the breadcrumbs in a large bowl. Pour in the chicken broth. Using a potato masher, begin mashing the bread – adding additional broth as needed – until the mixture is slightly soupy. 

Mix in raw eggs. Add hardboiled eggs, sautéed vegetables, and shredded chicken. Stir until all ingredients are well combined. Season with salt and pepper.

Pour cornbread mixture into a 9 x 13 x 2 inch casserole dish coated with nonstick cooking spray. Place dish on the middle rack of the oven and cook for 1 hour. You can broil for 5-10 minutes if the does not brown.

Remove from oven and let sit for 15 minutes before serving.

Black Folks Chicken And Dressing

Preheat the conventional oven or Instant Pot Omni Plus oven to bake at 350 degrees for 10 minutes (although you may not use all of this time for melting the butter).

Place the 4 tablespoons of butter in an 8-inch skillet and melt in the oven for approximately 5 minutes.

While the butter is melting, combine the Jiffy cornbread mix, sugar, cream cheese, and heavy cream in a medium-size mixing bowl.

Pour the melted butter from the skillet into the mixing bowl and mix all the ingredients together.

Pour the cornbread mixture into the skillet.

Bake at 350 degrees F. In the conventional oven for 20-25 minutes. Instant Pot Omni Plus oven for 15-18 minutes.

When the baking time has finished, allow the cornbread to cool for approx 10 minutes.

Cut the bread lengthwise and then across into 1-inch bread cubes and set aside.

Instructions for the cornbread recipe

Grease an 8″ or similar-sized baking dish and set it aside.

Remove the lid from the Instant Pot and turn on the sauté setting for 8 minutes.

With the lid off, melt ½ a cup of butter.

Add the chopped onion, celery, thyme, rosemary, and sage.

Stir to coat the vegetables in the herbs and melted butter and then sauté until they soften and slightly brown.

Add the shredded chicken, chicken stock, salt, and pepper to the inner pot’s simmer, and stir to combine.

Remove the chicken and herb mixture from heat and set aside.

Allow the mixture to cool to the touch so that it can be mixed with the egg. (You don’t want the egg to cook from the residual heat and scramble!)

While the herbs are cooling off, beat the egg with the parsley in a medium-sized bowl.

Gently fold in the cornbread cubes to coat with the egg.

Pour the cooled chicken and herb mixture into the egg mixture.

Transfer the mixture to the pre-greased baking dish.

Cut the 2 tablespoons of butter into small pats and place them all around on top of the dressing.

Cover the baking dish with foil and bake at 350 degrees F. 35 minutes in the conventional oven. In the Instant Pot Omni Plus oven for 30 minutes.

Uncover and bake until golden, 10-15 more minutes (conventional oven), 10 minutes (Instant Pot Omni Plus oven).

Serve this baked chicken and dressing recipe warm, and enjoy!

Optional – serve with gravy on top.

You will need cooked cornbread for this recipe. You can find my Homemade Cornbread recipe here. You can also use boxed cornbread if you wish. After preparing the cornbread, store it in the fridge overnight and prep the dressing using day old cornbread.

Preheat oven to 350 degrees. Heat a skillet on medium-high heat. When hot, add the olive oil, celery, onions, garlic, and green peppers.

Saute until the onions are translucent, fragrant, and the vegetables are soft. Remove the vegetables from the pan. Set aside to cool while prepping the remaining ingredients.

Place day old cornbread in a large mixing bowl. Use a large spoon and/or your hands to break down the cornbread. You want to fully crumble it.

Add in the sauteed veggies, ground sage, poultry seasoning, salt, and pepper. Mix well. Stop and taste the mixture here. This is where you want to adjust the seasoning and spice if necessary to suit your taste. Before adding the eggs, taste the dressing.

Slowly pour in the chicken broth. The chicken broth quantity noted above is a guide. You have to really monitor the dressing as you prepare it to determine how much broth you will need and if you will need more or less. Start with a little chicken broth and then stir until the dressing is thick. Add more when needed. You should get the consistency of thick oatmeal.

My cherished family recipe for Southern Cornbread Dressing is wonderfully moist and seasoned with onions, celery, and sage.

white cornmeal (sifted)

baking powder

buttermilk

cooking oil

onions

butter ((1 stick))

Egg Bread (recipe follows)

chicken (or turkey) broth or stock

saltine crackers (or leftover biscuits

Preheat the oven to 450 degrees.

Sift together the cornmeal, baking powder and salt. Add buttermilk and eggs, alternately.

Pour the cooking oil into an iron skillet and place it into the hot oven. Let the batter rest while the skillet and oil are heating (about 5 minutes).

Quickly pour the batter into the hot skillet and return immediately to the oven. Bake for 20-25 minutes.

Allow the egg bread to cool completely before proceeding.

Make the egg bread:

Preheat the oven to 400 degrees.

Chop the onions and celery.

Melt the butter over medium heat in a large sauté pan. Add the onions and celery cooking slowly until tender but without browning at all. Sprinkle with the 1/2 tsp. salt while cooking.

Meanwhile, crumble the egg bread into a large baking dish. Add the soup and broth and mix well using a potato masher or large fork to break up the egg bread to a fine texture.

Add the sautéed vegetables, salt, pepper and poultry seasoning. Taste and adjust for more salt if needed.

Lightly beat the eggs and add to the dressing mixture. Your mixture should be fairly “soupy.” If you think it’s too thin, you can add some additional bread, crackers, etc. to thicken it. Be sure to crumble them well and incorporate them into the mixture.

Bake for 35-45 minutes or until the dressing is golden brown on top and cooked throughout.

10 3/4 oz can cream of chicken with herbs soup or cream of chicken

eggs (beaten)

sage (may adjust to taste)

tsp black pepper

Preheat the oven to 350°F. Spray a 12 x  8 inch baking dish with cooking spray. Set aside.

In a skillet over medium high heat melt butter, with diced onion and celery. Season lightly with salt and black pepper to your taste. Cook for 5-7 minutes until the vegetables begin to soften and brown.

Meanwhile, place cubed cornbread and Italian bread into a large bowl. To the bowl add sautéed onion and celery, soup, eggs, sage, poultry seasoning, salt, pepper, garlic and onion powder.

Gradually add stock stirring until all of the chicken stock is used and ingredients are fully moistened.

Pour cornbread mixture evenly into the prepared baking dish.. Bake for 50-60 minutes until the top is golden and baked through.

Serve immediately drizzled with turkey gravy.

This Southern Cornbread recipe is homemade and made with cornmeal and buttermilk, and served with melted butter. This is a classic no-sugar soul food staple great for Sunday dinners, holidays, and Thanksgiving spreads.

Preheat oven to 400 degrees.

Add the cornmeal, flour, baking powder, and salt to a mixing bowl. Stir to combine the ingredients.

Add the eggs, 1/4 cup melted butter, and buttermilk. Stir to combine.

Do not over mix the batter. Over-mixing will lead to cracks in the crust and cornbread will fall apart and crumble. Mix well enough to combine the ingredients.

Place a 10 inch cast iron skillet on medium heat. Add 2 tablespoons of butter. Allow it to melt and then grease the entire skillet including the edges.Alternatively, you can bake the cornbread in an 8x8 baking dish (greased).

While the skillet is hot, pour the mixture into the cast iron skillet.

Remove the pan from the stove and place it in the oven to bake for 20-25 minutes or until a toothpick can be inserted and return clean.

Allow the cornbread to cool for at least 20 minutes.

Slice the cornbread into servings.
