Preheat oven to 350 degrees and grease a 9x13 inch pan.

In a large bowl whisk together flour, cornmeal, sugar, baking powder, and salt.

In a medium bowl mix together butter, oil, milk, and eggs.

Add wet ingredients to dry ingredients and mix until combined.

Transfer batter to your prepared pan. Bake for 35-45 minutes until golden and a toothpick inserted in the middle comes out clean or with only a few crumbs (no wet batter).

Allow to cool for 15-20 minutes in the pan before cutting into squares and serving. Serve with butter and honey if desired. Store in airtight container at room temperature up to 3 days or in the fridge for 1 week.

Southern Cornbread Recipe

Heat a 10-inch cast iron skillet in the oven while you preheat the oven to 450°F.

In a large bowl, whisk or stir together the cornmeal, eggs, buttermilk, and melted butter. Stir just until combined; do not over-mix.

Carefully remove the hot skillet from the oven. Add the oil to the hot skillet; spread to coat on the bottom and sides (I use a pastry brush for this).

Pour the batter into the greased skillet.

Bake until golden brown on top and a toothpick inserted in the center of the cornbread comes out clean, about 15 minutes.

Southern Skillet Cornbread

(186 grams) medium grind cornmeal,

(141 grams) all-purpose flour

tsp baking soda

Tbsp unsalted butter, (melted)

Tbsp + 1 Tbsp vegetable oil (or rendered bacon fat (melted), divided)

Place a 10-inch or 12-inch cast iron pan in oven on center rack and preheat oven to 400 degrees for 20 minutes.

In a large mixing bowl whisk together cornmeal, flour, baking powder, baking soda and salt. Make a well in center of mixture.

In a separate medium mixing bowl whisk together melted butter, buttermilk, eggs, and 2 Tbsp vegetable oil or melted bacon fat (mixture may begin to clump as fats gets cold that&#39;s fine).

Pour buttermilk mixture into cornmeal mixture then fold mixture with a silicone spatula just until combined (batter will be lumpy).

Right away using hot pads remove pan from oven and immediately (carefully over sink) swirl in remaining 1 Tbsp oil or bacon fat coating bottom and sides of pan (or use a pastry brush), then pour cornbread mixture into pan and gently spread even.

Return pan to oven and bake cornbread until cooked through in center about 16 to 23 minutes.

Remove from oven and let cool on wire rack for 15 minutes before cutting. Optionally serve with honey butter (recipe below), whipped butter, jam or honey.

Jalapeño Cheddar Cornbread Recipe

scallions (ends trimmed and thinly sliced)

Preheat your oven to 400 degrees F. Set your 10-inch cast iron on the stove.

In a large bowl, whisk together the flour, cornmeal, brown sugar, baking powder, baking soda and salt. Add the shredded cheddar and diced jalapeños and toss the dry ingredients together.

Place the skillet over medium-high heat and add the butter. When melted, swirl it around so that it coats the entire bottom of the pan, as well as the sides. Turn the heat off.

In a medium bowl or a large measuring cup, measure out the buttermilk, whisk in the eggs, and neutral oil. Lastly, pour in the melted butter (some butter remaining in the pan is great! don’t scrape it clean with a spatula). Whisk until combined. Pour the wet ingredients into the dry and mix no flecks of flour remain, being sure not to overmix the cornbread. Pour the batter into the buttered cast iron skillet and immediately transfer to the oven to bake until golden brown on top and until a skewer inserted into the center comes out clean, about 25 to 30 minutes

To Make the Cornbread:

In a small skillet set over medium heat. Add the scallions and cook until bright green and softened, about 1 minute. Add a pinch of salt and mix.

In a small bowl, add the softened butter and scallions. Mix together until combined. Add to a small bowl and sprinkle the top with flaky sea salt.

Serve with warm cornbread.

To Make the Scallion Butter:

This cornbread is delicious. I do add a can of cream style corn instead of the oil and it gives it an incredible texture.

Definitely a 5-star recipe, and the scallion butter was literally like the icing on the cake!!! The recipe was easy to follow. I took it to a work Thanksgiving potluck. I got so many compliments and requests for the recipe. Although I doubled the recipe, I ran out. Now the family is upset that I didn't make enough for them, so I am making it for Thanksgiving this year. Thank you

I felt it was a bit too oily. 😕 Next time I’d omit the vegetable oil and only use the butter

Even my non-cornbread child loved this recipe! We went with a honey butter instead of the scallion butter (because I didn’t have scallions on hand) and it was amazing!

It was ok. A little spongy and not enough sweetness of cornbread. I would definitely add more sugar next time.

This is the best cornbread! I used 3/4 cup of masa harina and 1/4 cup of coarse cornmeal in place of the 1 cup of cornmeal and and extra jalapeno. So good! Thank you!
