Delicious potato salad made with eggs and mayonnaise!

Southern Potato Salad

Russet, Yukon gold or red potatoes

sweet pickles (chopped, or sweet relish)

sugar

apple cider vinegar

garlic powder

green onions (finely diced)

celery (finely diced)

Kosher salt (to taste)

Black pepper (to taste)

Add the potatoes to a large pot and cover with cold water. Set over high heat and cook just until fork tender. Be careful to keep an eye on the potatoes because if they overcook they will get mushy.

When the potatoes are soft, drain them in a strainer and let them cool while you prepare the other salad ingredients.

In a large mixing bowl add mayonnaise, yellow mustard, chopped pickles, sugar, apple cider vinegar, and garlic powder. Whisk to combine.

Add the potatoes to the mixing bowl along with the diced hard-boiled eggs, green onions, and celery. Stir gently to combine.

Taste and season with the desired amount of kosher salt and black pepper.

This Classic Southern Potato Salad Recipe is great to take to a potluck. It&#039;s made with tender, steamed potatoes and a mayonnaise dressing.

Prepare the potatoes by cutting them into bite-size pieces.

Put the cubed potatoes into a steamer basket over boiling water and cook until fork tender. 

While the potatoes cook, chop the celery and onions and add them to a large bowl along with the sweet pickle relish and pimiento. 

In a small bowl, mix the mayonnaise, mustard, salt and pepper.

Drain the potatoes very well. You can even return them to the hot pan for a few minutes to allow all the water to evaporate. You want them quite dry but still warm.

Combine the drained, cooked potatoes in a large bowl with the celery, scallions, pickle relish, and well-drained pimiento.

Add the mayonnaise mixture and gently toss until well combined.

Spoon into a serving dish and dust with paprika.

Serve warm or chilled.

Add cool water to a pot. Add the potatoes and chicken base. Mix very well. Let the water come to a boil. Do not overcook. Boil for 15 minutes or until the potatoes are easily pierced with a fork but not mushy. Drain the potatoes and place them into a large bowl. Set to the side for 15 minutes.

Add cool water to a pot. Add the eggs and salt the water. Once the water comes to a rolling boil, remove the pot from the heat. Let the eggs sit in the hot water for about 10-12 minutes. Once eggs are done, cut each in half. With a spoon, scoop the egg from its shell.

In a bowl, add the mayonnaise, mustard, celery, green onions, salad cubes and pimientos. 

Add the eggs and dressing to the COOLED potatoes. Carefully combine dressing and eggs with the potatoes. Add sugar, salt and pepper for taste. Combine again. Cover and chill in the fridge for an hour or until you&#39;re ready to serve.

This recipe is best served up to two days in advance.

First, boil the eggs. Place them in a pot and cover them with cold water by 1 inch. Bring the water to a boil over high heat. Then, let them sit in the hot water. As soon as the water begins to boil, turn off the heat and cover the pot. Leave the eggs in the hot water for anywhere from 10-12 minutes, depending on how you like your eggs. The 10-minute eggs will have vibrant, creamy yolks, while the 12-minute yolks will be paler and opaque, with a chalkier texture. Finally, move them to an ice bath. When the time is up, drain the eggs and transfer them to a large bowl of ice water to stop the cooking process. Leave them in the ice bath for at least 14 minutes before you peel the eggs. If making them ahead leave them in the shells and store them in the fridge. Don&#39;t skip the ice bath first! It’s crucial for stopping the cooking process and making the eggs easy to peel at a later time.

Boil potatoes: Peel and cut each potato in half or quarters (if really large) depending on the size). Place in a large pot and cover with 1 inch of water. Add 2 teaspoons kosher salt and bring to a simmer. Simmer until fork tender all the way through, about 20 minutes. Drain well.

Mix Potato Salad: While potatoes are boiling, mix together mayo, sour cream, yellow mustard, garlic pickles, dill relish, and garlic powder in a large serving bowl. (Likewise, you can mix everything in the pot you cook the potatoes in once drained; I often do this to keep the serving dish nice and clean).

Pour drained hot or warm potatoes into the bowl on top of the mixture, add in chopped eggs, and mix until combined. Taste and add salt to taste as needed (adjust seasonings to preference) and mix until combined.

Top with sliced eggs and garnish with parsley flakes (or fresh parsley) and paprika.

Serve warm or cold. Our family loves this potato salad served warm and then enjoys leftovers cold.
