Loaded with Mexican flavors, this is a slightly spicy soup with generous chunks of tomatoes, corn, black beans, and chicken.

10 Minute Southwest Chicken Soup

corn, drained, about 1 1/2 cups

tomatoes

chicken broth,

granulated garlic or garlic powder

cumin

kosher salt, adjust

black pepper

cayenne pepper

cooked chicken, chopped bite-size, about 3/4-inch pieces

cheese: cheddar, Monterey Jack, Pepper Jack, or Mexican cheese blend

tortilla strips

sour cream

chopped fresh cilantro

Combine the corn, beans, tomatoes, chicken broth, garlic powder, cumin, salt, pepper, and cayenne in a pot. Bring to a boil and then reduce to medium-high heat. Add the chicken and stir to combine.

Simmer for 2-3 minutes, until the chicken is warm and the soup is steaming. Ladle the hot soup into bowls and add the toppings of your choice. Enjoy!

Place the onion, garlic, cilantro, peppers, jalapeño peppers, white beans, black beans, diced tomatoes, beer, chicken stock, salt and pepper and taco seasonings (paprika, cumin, chili powder, oregano, coriander, and liquid smoke if using) into the slow cooker then stir to blend all the ingredients together.  Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients.

Old El Paso Chopped Green Chiles ((4.5-ounce cans))

"fire roasted" crushed tomatoes

Salt (and pepper)

Set a large 6-8 quart pot over medium heat. Add the olive oil, chopped onions, and garlic. Sauté for 5-6 minutes to soften. Then add whole raw chicken breasts, Old El Paso Chopped Green Chiles, crushed tomatoes, chicken broth, all the spices,&nbsp;carrots, and 1 1/2 teaspoons sea salt.

Bring to a boil, lower the heat, and simmer for 20+ minutes, until the chicken breasts are cooked through. Then remove the chicken with tongs and set them on a cutting board to cool.

Add the chopped cabbage and broccoli to the pot. Continue to simmer to soften the broccoli. Meanwhile, shred the chicken breasts with two forks, and stir it back into the soup. Once the broccoli is tender, taste, then salt and pepper as needed. Serve warm with a generous amount of diced avocado on top!
