The spring onion is a signature ingredient of Chinese cuisine - especially when combined with the delicate flavours of ginger and soy.

Soy fish with spring onion and ginger

Fried minced beef kofta

  This is an egyptian cuisine. Minced beef with an asian touch ^_^ marinated with onions and soy sauce . This goes well with tahini sauce,pita bread or plain rice and veggie salad.

Directions: Mix all ingredients except the oil and veggies. marinate for30 minutes or more . then form into a fingerlike or balls . roll unto your prepared coating .

Heat the oil in frying pan and dip in your kofta one at a time . don't overcrowd them to get a better result .

Meanwhile , prepare your favorite green veggies in a serving tray and place directly your fried kofta on it . Decorate it with some slice tomatoes and lemon and your done!

Hong kong style steamed fish

¼ cup of spring onion strips

Prepare a wok with water, boil it. If the fish is thick, make sure you cut a few strips on the meat or butterfly it. Put it into a plate, scatter ginger strips, spring onions and coriander.

When the water is boiling, put in the fish, start the timer (max 10 minutes for 600 g fish, add 2 minutes for every 200 g)

While steaming, prepare the seasoning sauce: mix the hot water with rock sugar, chicken cube and light soy sauce. Heat in the microwave for 1 minute.

Using a fork or chopstick, dig into the thickest part of the fish to check its doneness.

It is suppose to be cooked 99% with a speck of red remaining in the flesh. If not, cook another 1 minute and then check again.

When it is cooked, take out the fish into a new plate. Pour away ALL the fishy juices and herbs. Don't worry; you wont regret pouring it away. Pour the seasoning sauce all over the fish.

Garnish with ginger strips, lots of spring onions and coriander. Quickly heat up the oil until smoking , Pour this cooking oil over fish. You will hear a very satisfying sizzling sound!

Getting prepped up front is the key to success when it comes to a stir-fry. It might seem stage-y, but when you combine all the different elements in one joyful bowl at the end you’ll be so pleased you went to all that effort. Also, everything here is quick to do, so it’s not a long one in terms of total time. I’ve given you quantities for the veg I used, but you basically want about 600g of crunchy veg in total (as well as the salad). When it comes to the actual stir-frying, it’s best to do no more than 2 portions at a time so you can retain maximum control. Happy cooking!

ml (4 c. à thé) de sauce soya

ml (4 c. à thé) d'eau

2,5 ml c. à thé) de vinaigre de riz

2,5 ml c. à thé) de mirin

2,5 ml c. à thé) d’huile de sésame

2,5 ml c. à thé) de gingembre râpé finement

340 g (3/4 lb) de tofu mou, coupé en quatre

ml c. à soupe) d’oignon vert ciselé

ml c. à thé) de graines de sésame grillées

Dans un petit bol, mélanger la sauce soya, l’eau, le vinaigre, le mirin, l’huile de sésame et le gingembre. 

Déposer le tofu dans 4 petits bols. Répartir le mélange de sauce soya sur le tofu. Chauffer au four à 
micro-ondes de 15 à 30 secondes. Garnir de l’oignon vert et des graines de sésame. Servir aussitôt.
