Tried this the other day and loved it! If you use a couple of 8 oz. packages of diced tofu, found in the produce section of your grocery store, and bottled minced ginger, this goes together in no time. A rice cooker does a great job with brown rice, too, and will keep the rice warm until serving. A quick, healthy dish from Cooking Light.

Ma Po Tofu (From Cooking Light)

(1 lb) package reduced-fat firm tofu, cut into 6 slices

chicken broth

cornstarch

soy sauce

oyster sauce

-2 teaspoon chili-garlic sauce (I use 2 teaspoons)

pork

fresh ginger, grated & peeled

garlic cloves,

green onion, chopped

Place tofu slices on several layers of paper towels, cover with additional paper towels. Place a dinner plate on top of covered tofu; let stand 30 minutes. Remove plate, discard paper towels. Cut tofu slices into 1/2-inch cubes.

Combine broth, cornstarch, soy sauce, oyster sauce and chili garlic sauce, stirring with a whisk.

Heat a large nonstick skillet over medium-high heat. Add pork; cook 4 minutes or until done, stirring to crumble. Add ginger and garlic; cook 1 minute, stirring constantly. Add tofu; cook 4 minutes or until golden, stirring frequently. Add broth mixture to pan. Bring to a boil; cook 1 minute or until mixture thickens. Remove from heat.

Serve tofu mixture over rice. Sprinkle with onions.

Very authentic considering it came from Cooking Light. People that dont like tofu will eat this one up. My mom used to make this for us on those quick dinner nights where she was tired from work. She would pair it with stir fry baby bok choy. We all loved it. The only thing she would add is about 1 teaspoon of sugar to balance out the savory/soy sauce/oyster sauce. She also used water instead of chicken broth. One more thing I would recommend is to be sure to follow the instruction and cut the tofu into 1/2 X 1/2 inch squares. This way they will absorb the delicious sauce; otherwise, most would not like a big chunk of tofu. Other than that, I remember the ingredients to be the same as my mom's.

A pie made with tofu! Though I've made this twice already, no one in my family has guessed there's tofu in it and everyone loves it.

Silky Chocolate Peanut Butter Pie

chocolate chips

tofu,

peanut butter

sugar

vanilla

graham cracker crust

Melt chocolate chips in a small bowl in microwave at high power 90 seconds.

Place tofu, peanut butter, sugar &amp; vanilla in blender or food processor and whirl until smooth.

Cover with plastic wrap and refrigerate several hours until filling is set.

Can garnish with peanuts, melted chocolate or whipped cream.

I used a chocolate pre-baked crust and it was great.  You can't tell that there is tofu in it, but it is a very RICH dessert!

water

liquid smoke (optional)

Braggs liquid aminos (gluten-free if needed

maple syrup

blackstrap molasses

textured vegetable protein (gluten-free if needed for diet)

nutritional yeast

garlic powder

sage

fennel

black pepper

cayenne

oil (for frying)

Stir boiling water with liquid smoke (if using), soy sauce, maple syrup, and molasses.

Meanwhile, mix TVP with dry seasonings; stir to incorporate.  Combine wet and dry mixtures.  Then allow the TVP to absorb the moisture for about 5 minutes while you heat the oil.

Fry mixture in oil in an uncovered frying pan on medium heat, about 5 minutes (or until browned), stirring occasionally.

Way too salty. Cut back on Braggs or all you taste is braggs. It smelled delicious but tasted like braggs. I didn't even use the cayenne because I didn't have it.

Tempeh Bourguignon

pinot noir wine

tempeh,

onion,

carrot,

olive oil, divided

herbes de provence

bay leaf

balsamic vinegar

tomato paste

mushrooms

parsley, garnish

Combine wine, tempeh, onion, carrot, garlic, 1 tbsp olive oil, herbes de provence, and bay in large bowl. Cover refrigerate for an hour.

Heat remaining oil in dutch oven over medium high heat add tempeh and vegetables and cook 5 to 7 minutes or until tempeh is browned on all sides.

Add vinegar and quickly stir to coat evenly.  Add tomato paste and cook one minute.

Stir in red wine marinade, scrape bottom of pot to release stuck brown bits.

Reduce heat to medium low and cover simmering for 30 minutes or until carrots are tender.  Stir occasionally.

Add mushrooms and 3/4 cup water and simmer 10 minutes or until tender.

Remove bay, season with salt and pepper, sprinkle with parsley if desired and serve over rice.

Wasabi Salad Dressing

wasabi paste (Japanese horseradish)

rice wine vinegar

sesame oil

Mix soy sauce, vinegar, and sugar in a bowl until sugar is dissolved.

Add sesame oil and wasabi paste; whisk well.

Like everyone else said &quot;we LOVED this dressing&quot;.  I followed the instructions to the letter and the wasabi is a little strong but we love wasabi so we were happy.  Served this over a green salad with seared tuna.  Thank you for posting.  Made for 213 Zaar Cookbook Tag.

Don't let the healthful aspect of this recipe fool you, it's great! Served like a quiche, it's easy to pair with a veggie and salad for a great meal. Can easily be made vegan.

Savory Cheddar Cheese and Rice Cheesecake

brown rice (cooked)

parsley (or use dried)

scallion (or 1 med. onion)

cheddar cheese

silken tofu

plain soymilk (or milk)

ground pepper

herbs (thyme, sage, basil, rosemary)

hot sauce

pie shell

Combine rice, parsley, scallions (or onions)and cheese.  (You may saute onions first.).

In blender, combine tofu, milk, pepper, spices and hot sauce until well mixed.

(I think it takes even better the next day when the flavors have blended and mellowed.).

Want to make this,  but need some help.  Is it black pepper?  Is it a mixture of herbs, or two tbsps. of each.  Please help!!

Tofu Meatloaf

(14 ounce) package tofu

ketchup

Dijon mustard

parsley

breadcrumbs corn flakes

Garnish with ketchup, BBQ sauce, and/or chopped parsley.

I used this recipe to make balls (ping pong size, 25). Grated the onion, added a big clover of garlic, some italian spices and omitted the persil. Yummy!

I made this with 16oz of extra firm "Italian seasoned" tofu and added 1 egg. The breadcrumbs were also "Italian seasoned". I spread a thin layer of 1/2 ketchup 1/2 honey barbecue sauce on top of the loaf BEFORE baking. Served it to my mom and husband, and both agreed it was the best "meat"loaf they had ever eaten. Adding the ketchup/bbq to to top before baking adds a real nice flavor to the loaf, the extra Italian seasoning via the breadcrumbs/tofu really kicks up the flavor, and the egg helps the loaf hold it's shape.

Not bad. Somehow it just tasted mostly like bread to me. If I make it again, I will probably add an egg replacer, since it didn't stick together all that well. My husband seemed to like it. He will like mostly anything if he can smother it in ketchup :) The only complaint he had was that the onions were too big, and that is my fault not the recipe's. Next time I will chop them much smaller.

Much as I wanted to like this recipe, it just didn't work out very well.  The final product was kind of watery; maybe the tofu should have been pressed before mashing.  Also, I used a 9-inch loaf pan, and that was probably too big.
