Many commercial spiced rums use the spices to cover up inferior rum. At home, you can create a more elegant and bold version, tailored to your taste.

DIY Spiced Rum Recipe

orange

vanilla bean

star anise pod

light rum

gold rum

cinnamon

cloves

allspice berries

cardamom pods

nutmeg

black peppercorns

Zest half of the orange using a zester or peeler, making sure there is no white pith. Split the vanilla bean lengthwise and scrape into a sealable glass jar or bottle, then cut into smaller segments. Break up the anise with a mortar and pestle or by pressing with a spoon. Add these along with all other ingredients into the jar or bottle, cover and shake. 

Let steep for two days, then sample to see if any flavor adjustments are needed (remove anything that seems to be taking over the flavor). Shake daily. Continue to steep and adjust for up to five days total, until desired flavor is achieved. I recommend removing the ginger on the second or third day, as it releases flavor more quickly than other items. 

Once desired flavor is achieved, strain through a fine-mesh sieve to remove the larger items and then strain again through a coffee filter into a bottle.

I have tried many different recipes online to try and find an “authentic” butter beer/hot buttered rum. This is by far the best one. It also works well cooking on high for half the amount of time.

This is absolutely great hot beverage even without the rum made it so my kids could try it also left out the salt. Don't know why it calls for unsalted butter but then ask u to add salt so I just used salted butter. Very good and highly recommended.

oz dark spiced rum

tsp raw sugar

mint leaves

oz lime juice

oz soda water

Muddle the lime juice, sugar, and mint leaves...

Muddle the lime juice, sugar, and mint leaves together in the bottom of a glass.

Add rum and fill the glass with ice.

Top the drink off with soda.

Garnish with mint leaves and a lime wedge.

Orgeat Syrup

Into a cocktail shaker of ice add 0.75 ounces of Apple Pucker, 0.75 ounces Spiced Rum, and 0.25 ounces of Orgeat Syrup. Orgeat (aff link) is an almond-based syrup, you can sub it for regular almond syrup and it will have the same taste.

Shake for 10 shakes and strain into a chilled 1.5-ounce shot glass.

Drizzle caramel sauce over top of the shot in a squiggly pattern overlapping each other. Making the top look like a brain. Serve immediately!

Homemade Spiced Rum Recipe

4-5 inch strip of orange peel (no white pith)

Orange slices & Star Anise (optional)

Combine all ingredients except the vanilla bean in a lidded 1-quart jar.

Split the vanilla bean lengthwise and scrape the seeds into the rum mixture and add the bean.  Cover the jar tightly and shake one minute.

Place the Spiced Rum in a dark place for 2 days.  After 24 hours, shake it again.

Strain the Spiced Rum through a fine-mesh sieve or cheesecloth into a clean bottle.  Throw away the spices.

Spiced Rum will keep indefinitely.  Be sure to store in an airtight, glass container and in a dark, dry place.

Boozy No Bake Eggnog Cheesecake

heavy whipping cream

cream cheese (room temperature)

eggnog

tbsp. spice rum

sugar

graham cracker crust

First start by adding the heavy whipping cream to your stand mixer and whisk until stiff peaks form.  Transfer to another bowl and set this aside.

Then clean out the bowl and in the mixing bowl combine the softened cream cheese and switch your attachment to the paddle. Beat until smooth.

Add in the powdered sugar and eggnog and mix a little longer. Then add in the rum, cinnamon, and nutmeg and give it a few more stirs.

Fold in the homemade whipped cream until well incorporated Then pour the filling into your graham cracker crust. Refrigerate for at least 4-6 hours.

You can top with additional whipped cream or I whipped up some homemade cinnamon whipped cream. See below.

In a mixing bowl (or stand mixer) whisk heavy whipping cream until it thickens and stiff peaks form, then add in some powdered sugar and cinnamon.

Add to a zip-lock bag, cut a end off, and pipe onto the top of the eggnog cheesecake. I sprinkled with some gingerbread cookie crumbs (gingersnaps would work, too).
