Kosher salt

Add mayo, dill pickle juice, cayenne pepper and garlic to a medium bowl, whisking to combine.  Season to taste with salt and more cayenne pepper.

Cayenne pepper can vary greatly in heat (depending on how fresh it is), so start with just a 1/2 teaspoon.  Add 1/4 teaspoon at a time until the aioli is very spicy, but bearable.  I ended up using a total of 1 teaspoon for this batch.  Store aioli in fridge for up to 2 weeks.

Cajun Aioli

mayonnaise

hot sauce (I

tsp smoked paprika ((make sure to use smoked!))

tsp each: garlic powder, onion powder, salt, oregano, red pepper

cayenne pepper (more for additional heat)

Whisk or stir together the 1/2 cup mayo, 1 tbsp fresh lemon juice and 6 dashes hot sauce until it is incorporated and smooth.

Add the 1/2 tsp smoked paprika, 1/4 tsp garlic powder, onion powder, salt, oregano, red pepper flakes, and a pinch of cayenne pepper. Stir until it all comes together.

Serve!

Store in an airtight container, in the fridge, for up to 2 weeks.

Storing

Sriracha aioli with lime juice and garlic is the perfect mix of spicy and creamy. This Asian aioli is the best sauce for shrimp, crab cakes, fish tacos, chicken, burgers, sandwiches, and it’s even great on hot dogs!

Combine all ingredients in a small bowl. Wrap tightly in plastic wrap and refrigerate for 15 minutes. Remove.
