This spicy homemade condiment goes great on everything!

Chinese Chili Sauce (辣椒醬)

oz Fresno chili pepper

Chao Tian Jiao peppers

garlic

tbsp oil

tsp vinegar

tsp sugar

salt

bean sauce

tsp sesame oil

Prepare garlic & chili peppers

Smash, peel, and mince the garlic. Set aside.

Fry garlic & peppers

Turn the stove up to the highest heat. Once the wok is hot, turn the heat down to medium or low. Add the oil, and let it warm up to 250° F (121° C).

Season sauce

Add vinegar, sugar, salt, and ground bean sauce. Mix well to incorporate the seasonings, and cook for an additional 40-50 seconds.

apple cider vinegar

sugar

water

red chili pepper

cooking sherry

lime juice

honey

cornstarch

Fill

Put the apple cider vinegar, sugar, water, red chili pepper, minced garlic, sherry, lime juice and honey into a saucepan.

Boil

Simmer

Boil again

Increase heat to medium again and return to a boil.

Mix the 3 tablespoons of water and 1 tablespoon of cornstarch.

Thicken

Add to the pot and stir until sauce has thickened.

Cool

Remove from heat and cool to room temperature.

Refrigerate

Store in a mason jar or other glass container in the refrigerator for a week.

Serve

Serve with fresh spring rolls, chicken or fish.
