Heat the olive oil in a large heavybased pan. Add the onions and whole garlic cloves. Fry, stirring frequently, for 10 mins, adding the chillies for the final min.

Pour in the wine, turn up the heat and allow it to bubble for 1 min to cook off the alcohol. Stir in the stock, tomatoes, tomato purée and thyme with some seasoning. Add the chicken legs, pushing them under the liquid, then part-cover the pan and leave to simmer gently for 45 mins.

Remove the lid and cook for a further 15 mins until the chicken is tender and the sauce has reduced a little. Serve scattered with parsley, if you like, and pasta or mash.

Combine all the ingredients in the blender or mini-food processor. Mix until you have smooth creamy sauce. Taste and adjust the spice level based on your preference.

Use immediately or refrigerate until ready to use. The sauce will be very liquid right after making it, this is normal, refrigerate the sauce for it to thicken (if you prefer a thicker sauce).

Bang Bang Shrimp

225 g (8 ounces) King Prawns (shells removed and prawns deveined)

tbsp cornflour (cornstarch)

120 ml (1/2 cup) buttermilk

150 g (3 cups) panko breadcrumbs

paprika

tsp salt

tsp black pepper

tsp garlic salt

tsp celery salt

tsp white pepper

120 ml (1/2 cup) sunflower oil

120 ml (1/2 cup) mayonnaise

tbsp sweet chilli sauce

tbsp sriracha chilli sauce

tsp honey

romaine lettuce (shredded)

spring onions (scallions chopped)

tsp dried chilli flakes

Start by making the bang bang sauce. Place the mayonnaise, sweet chilli sauce, sriracha and honey in a small bowl and mix together, then put to one side while you make the crispy shrimp/prawns.

Pat the king prawns dry using kitchen roll/paper.

Place the cornflour in one bowl.

Place the buttermilk and egg in a second bowl and lightly whisk to combine.

Place the panko, paprika, salt, pepper, garlic salt, celery salt and white pepper in a third bowl and mix together.

Dredge the king prawns in the cornflour, then dip in the buttermilk mixture to coat and finally coat the prawns in the panko mixture. Place the coated prawns on a plate.

Heat the oil in a large frying pan over a medium-high heat.

Once the oil is hot, add the prawns.

Cook for 3-4 minutes, turning once, until golden brown. Then remove from the pan and place on a plate lined with kitchen roll to soak up any excess fat.

Place the shredded romaine on a serving plate, top with the crispy shrimp/prawns and drizzle over 3 tbsp of the bang bang sauce.

Sprinkle on the chopped spring onions (scallions) and the chilli flakes and serve.

Pasta with Mussels in a Spicy Tomato Sauce is a real treat. It comes together pretty quickly, it&#x27;s super elegant and tastes absolutely amazing. It&#x27;s a perfect meal for a weeknight dinner or date night in, with a glass of wine.

Pasta with Mussels in a Spicy Tomato Sauce

tbsp Olive oil

Vidalia Onion (medium size, chopped)

Garlic (chopped)

Fresh Thyme (chopped)

Chili Pepper Flakes

Yellow Peeled Tomatoes (14 oz)

Organic Whole Cherry Tomatoes (14 oz each)

Sugar

Freshly Ground Black Pepper (or more to taste)

Parsley

Vidalia Onion (medium size or medium shallot, chopped)

Garlic (crushed)

White Wine

lb Mussels (scrubbed)

lb Bucatini Pasta

Before you start cooking your dish I&#039;d suggest placing the mussels in a bowl with ice water and let them soak for about 20 minutes, before scrubbing them. This will let the sand from the mussels fall to the bottom of the bowl.

Any of your live mussels that happen to be open and don&#039;t close to the touch, should be discarded.

Right before cooking the mussels, remove them from the water, scrub with a brush and remove any beards.

Preparing the Mussels:

In a deep pan or a dutch oven, saute chopped onions with olive oil, minced garlic, chili paper flakes, and fresh thyme, for about 5 minutes.

Add Whole Cherry Tomatoes and Yellow Peeled Tomatoes with their juices to the pan.

Add a teaspoon of salt and sugar and a little bit of freshly grounded pepper. Cover the pot and let cook for 20- 25 minutes.

Making the Spicy Tomato Sauce:

Cook your Bucatini according to instructions. *(see notes below on how to salt your pasta water).

Reserve a cup of pasta water and drain the rest once the pasta is cooked.

Cooking Pasta

In a dutch oven or heavy-duty pot with a cover, combine white wine, chopped onions, crushed garlic, and bring it to boil.

Add mussels and cover it up. Cook for 2-4 minutes, until all the mussels have opened.

After the first 2 minutes remove the mussels that opened up and place them in a bowl; cover the pot and let the mussels cook for couple more minutes. Any unopened mussels should be discarded.

Once all the mussels are in a bowl, let them cool off slightly. Once they&#039;re cool enough to handle, remove about 2/3 of the mussels from the shells and leave the rest in the shells.

Cooking the Mussels:

Check tomato sauce for seasoning and adjust with salt and pepper as needed;

Add the mussels which were removed from shells to the spicy tomato sauce, and gently fold them in.

Add Bucatini to the pot or bowl, cover with sauce and gently mix together; if the sauce is too thick then add a little bit of your pasta water;

Transfer the pasta dish to a serving plate or pan (I like using my cast-iron skillet for the rustic effect).

Add your in-shell mussels on top and sprinkle with some chopped parsley for an outstanding looking dish, and serve.

Assembling the Pasta with Mussels in Spicy Tomato Sauce

Coconut Milk Rice (Nasi Lemak)

lemongrass (, cut)

chicken legs/ thighs (,

coconut milk ((60 ml))

tbsp rice flour

dry anchovies ((100 gr))

red onions (, sliced)

1.8 oz dry chilli,

shallots (, roughly cut)

shrimp paste

water

sunflower oil

tbsp sugar

tamarind juice

basmati rice ((370 gr))

coconut milk ((750 ml))

water ((250 ml))

pandan leaf (, knotted)

shallot (, thinly sliced)

ginger (,

garlic (, thinly sliced)

lemongrass (,

water rice

eggs

cucumber

peanuts

Paste

Blend/pound lemongrass, garlic and ginger into a paste. Set aside.

Marinade

In a bowl add in chicken, pounded paste and the rest of the ingredients except egg and rice flour. Mix everything well. Marinate overnight or at least 4 hours.

Coat

Add egg and rice flour to marinated chicken, coating them well. Set aside.

Heat a pot of oil on medium heat. Fry chicken until golden brown and fully cooked. Place paper towel to drain the excess oil.

Ayam Goreng Berempah (Spiced Fried Chicken)

Blend chilli, shallots, garlic, shrimp paste and ginger with a splash of water ,into a paste. Set aside.

Heat some oil in a pot and fry the anchovies until they are crispy. Place on paper towel, set aside. Then fry the onions until they are soft and golden brown at the edges. Place on a plate, set aside.

Cook

Pour in the blended chilli and add in a splash of water to loosen it up a bit. Cook for 15-20 minutes until the sauce reduces and thickens (stir now and then).

Season

Season with salt, sugar and tamarind juice (a good sambal needs to be a bit sweet with a balance of sour and salty). Add in fried anchovies and onion. Turn the heat off and mix well. Sambal is ready.

Sambal Tumis Ikan Bilis (Anchovies Sambal)

Soak

Soak basmati rice with water for 30 minutes. Drain right before using.

Place the rest of the ingredients in a pot and bring to a boil, then add in rice. Bring it back to a simmer, cover pot with a lid and cook on low heat for 20 minutes. Remove from the heat and leave it for another 10 minutes before fluffing up the rice and serve.

In a large non-stick skillet, melt butter over medium heat. Add garlic and cook until fragrant, about 30 seconds.

Add wine and cook until reduced by half, about 2 minutes.

Stir in Cajun seasoning, paprika, and oregano. Cook, stirring, until fragrant, about 30 seconds. 

Add cream and bring to a simmer. Let it simmer for about 2 minutes or until slightly thickened. Whisk in Parmesan cheese and parsley. Season with salt and pepper to taste. If desired, add lemon juice.

This recipe makes enough sauce for 8 ounces of dry pasta. Use your favorite pasta and toss it immediately after cooking. Add 1/4 cup of reserved pasta water to help the sauce bind better with the pasta.

Made this tonight for dinner to pour over some egg noodles and sliced andouille sausage I cooked up. I didn’t have fresh parsley, so I used dried. It came out great with a powerful punch of flavor, which I love. I used Slap Yo Mama Cajun seasoning, which did make it a tad salty, but still delicious… next time I’ll make my own Cajun seasoning to help reduce the amount of salt. Thank you for this recipe! I’m teaching myself to cook and this recipe will definitely be saved for future dishes.
