I didn't have a mini muffin pan, so I folded mine like little dumpling purses. I used a regular muffin pan and to prevent them sticking to the pan, I sprinkled some shredded mozzarella in the cups first. The cheese creates a crispy crust and also strengthens the bottom. They are so GOOD!!!

These are good. Gave me an idea to try, though. Make Parmesan fricos/crisps and as they come out of the oven, press them into the small muffin tins to create parmesan cups. Then fill those with the spinach artichoke dip. I do something similar with chopped caesar salad (romaine, caesar dressing, and crushed croutons) to make mini caesar salad cup appetizers, but now I'm going to try with the spinach artichoke dip too.

To the person who asked about using puff pastry instead of crescent rolls; my (personal) experience is that it puffs up too much for mini muffins, but works fine in standard 12 cup pans.

spinach

mayonnaise

vegan cream cheese (, softened)

panko breadcrumbs

Preheat oven to 375° F (190° C).

To a large mixing bowl, add the spinach, artichoke hearts, mayonnaise, cream cheese, lemon juice, breadcrumbs, nutritional yeast, garlic, onion, paprika, crushed red pepper, salt, and pepper. Combine well. Taste for seasoning and add as needed.&nbsp;

Fill the mini phyllo shells using a small spoon. Place each one on a large baking tray. 

Place in the oven and bake for 10-12 minutes, until filling is heated throughout. Serve immediately.&nbsp;Sprinkle with vegan parmesan if desired.
