garlic passed, through a garlic press

kosher salt

black pepper

fresh flat leaf parsley, finely chopped

thyme,

chives,

lemon

lemon juice

Mix all ingredients in a small bowl with a wooden spoon.

Lay out a piece of plastic wrap and scrape out butter into a log.

Roll in the plastic, seal the ends and refrigerate for one hour.

Remove and roll the plastic to as perfect a round cylinder as possible.

When ready to use, remove from the wrap and cut into thick coins and place on the freshly cooked steak.

I’m a beginner cook and I recently made this steak butter for my family! I’m unsure if I am suppose to cook the steak with this butter? Or do I just cook it like normal and only put the butter on top afterwards. We have yet to use it but all my family says it smells and looks amazing &lt;3

lime rind

lime juice

Cafe de Paris Butter

unsalted butter (slightly softened (7 oz))

tsp dijon mustard

garlic (crushed)

Add slightly softened butter to a bowl.

Then add remaining ingredients to the butter and mix well to combine (I use a fork for this).

Shape into a log and wrap in baking paper or plastic wrap and refrigerate.

Café de Paris - Steak butter sauce

/ 7 tbsp unsalted butter (, softened)

tbsp eschalot ((small), very finely chopped (Note 1))

garlic (, finely minced)

anchovy (, finely chopped (Note 2))

Worcestershire sauce

Dijon mustard

tsp curry powder ((mild, Note 3))

tsp paprika ((plain

tsp kosher / cooking salt

tsp tarragon (, finely chopped (Note 4))

tsp parsley (, finely chopped)

Steaks of choice ((Note 5))

salt per steak

tsp black pepper per steak

tbsp vegetable or canola oil

Place ingredients in a bowl and mix to combine.

Place on cling wrap and roughly shape into a 20cm / 8" log using spatulas or butter knives.

Roll up, then twist ends tightly. As you tighten the ends, the butter will shape into a neat, firm log.

Tie ends if needed to keep the shape. Refrigerate for 3 hours or until firm.

To use - Slice into 0.7cm (1/3&quot;) slices, then let them soften to room temperature (so they melt easier). Place on hot steak so it melts - I use 2 slices each steak. Leftovers - fridge 3 days or freeze 2 months (pre sliced for ease of use).

Cooking Steak:

Bring to room temp: Take the steak out of the fridge 30 minutes prior to cooking.

Dry: Pat steaks dry with paper towels.

Heat skillet: Heat oil in a heavy based skillet over high heat until it is very hot - you should see smoke!

Season: Sprinkle each side of the steak generously with salt and pepper, then immediately place in the skillet.

Cook steak to taste: For 2cm (3/4&quot;) thick steaks, cook the first side for 2 minutes, then turn and cook the other side for 2 minutes (medium rare 52°C/125°F, chart below for other doneness temps).

Rest: Transfer steaks to a warm plate, cover loosely with foil and rest for 5 to 10 minutes, then serve.

Leftovers - fridge 3 days or freeze 2 months (pre sliced for ease of use).

Thyme (pronounced like 'time') is an evergreen herb with culinary, medicinal, and ornamental uses. The most common variety is Thymus vulgaris. Thyme is of the genus Thymus of the mint family (Lamiaceae), and a relative of the oregano genus Origanum.

Add room temperature butter to mixing bowl.

Using the side of a knife, smash the cloves of garlic to remove the skins, then finely chop them.

Finely chop fresh herbs and with blue cheese, garlic, red pepper flakes and salt to bowl of butter. Use a silicone spatula or wood spoon to mix and combine ingredients..

At this point, the butter can be used as-is over cooked vegetables or as a spread for warm bread or rolls. To use as a compound butter, continue with the following steps.

Transfer the steak butter mixture onto sheet of wax paper, approximately 1 inch in from a long edge.

Using your hands, form butter into a cylindrical shape, then wrap it up, using the wax paper to hold the mixture together. Twist the paper on both ends of butter and refrigerate until firm.

Remove from refrigerator, unroll and slice into pieces to top steak.

Roll up and refrigerate or freeze any remaining compound butter.

So good!!! I add a couple of slices to steak tips and mushrooms at the end and it really pulls it all together! It's also great for a hamburger and mushroom topper. Nice to have Keto options!

We have made so many recipes from this site over the summer!  My fiance got a Traeger and we made this butter for one of his meals. It is to die for. I've since put it on many other things!

Now, all I can think about is this and a giant steak! I will have to satisfy my craving and start whipping this butter together soon.
