Steak Frites

russet potatoes, (about 3 pounds)

Refined peanut oil for frying, about 5-6 inches

1 (2 to 21/2-pounds) ribeye steak,

salt

olive oil

unsalted butter

black pepper

Garlic aioli,

Peel the potatoes and slice them lengthwise into ⅓ -inch thick sticks

Alternatively you can use a mandolin slicer that has a ⅜ -inch setting

Add the potatoes to the ice water and soak for 15 minutes

Drain and pat completely dry.Attach a deep-fry thermometer to the side of a large, heavy pot

Add the peanut oil to the pot over medium high heat

Once the oil reaches 300°F, working in batches, carefully add the potatoes to the hot oil, and cook until beginning to soften but not browned, 3-4 minutes

Transfer the potatoes to a paper-towel-lined sheet pan.Meanwhile, heat a large skillet over high heat

Pat the steak dry and season all over with 2 teaspoons salt

Once the oil is just smoking, add the steak and cook until medium-rare (see Note) about 4-6 minutes per side

Transfer the steak to a cutting board and top with the butter

Increase the peanut oil temperature to 350°F

Working in batches, return the potatoes to the hot oil and cook until golden brown and crispy, about 5 minutes

Transfer the fries to the paper-towel-lined sheet pan

Season with remaining ½ teaspoon salt and pepper to taste

Serve with the frites and garlic aioli on the side.

Your steak fries recipe was good using the cooking technique. However, a triple wash will get rid of all the starch on the surface keeping them from sticking together. If the white is milky then there is still starch on the surface.

Very good recipe. I would make it for dinner everyday if I could.

Butter: Add the butter to a stand mixer with the paddle attachment and whip on high speed until light and fluffy, about 5-7 minutes.

Next, add the rosemary, thyme, green onions, garlic, lemon zest, lemon juice, salt, and pepper until combined.  Set aside.

Fries: Add the fries to a container of cold water and move them around with your hands to remove some of the excess starch.

Drain and rinse the potatoes again and drain off any excess water.

Place them in a deep fryer or a pot of oil at 300° for 3 minutes. Remove them from the oil and set them on a sheet tray lined with parchment paper. They can hold for several hours like this.

When you&#39;re ready to serve them, turn the heat to 350° and cook for 3-5 more minutes or until well browned and crispy. Toss them with salt in a large bowl and serve.

Steak: Season the steak on both sides with salt and pepper.

Add the oil to a large frying pan over high heat. Once smoking, add the strip steak and turn the heat down to medium. Press down on it using tongs or a spatula for 15 to 20 seconds. Then, let it cook untouched for 2 to 3 minutes.

Flip the steak over, add the thyme, garlic, and butter, and cook for 2-4 minutes while basting it with a spoon.

Rest the steak for 3-4 minutes before slicing and serving with some the butter and fries.

This recipe comes together in under 45 minutes and is fantastic to serve up to family or guests at an entertaining event.  It’s something you may see in a restaurant, however, if you make this you may never eat it again because it’s just that delicious.

Ingredients for this recipe: 

For the Butter:

• 3 softened unsalted sticks of butter
• 1 tablespoon minced fresh rosemary
• 2 tablespoons minced fresh thyme
• ¼ cup sliced green onions

• 2 12-ounce New York strip steaks

• 8-10 sprigs of fresh thyme
• 8-10 garlic cloves
• 4 tablespoons unsalted butter
• sea salt and pepper to taste

Serves 4

Prep Time: 15 minutes

Cook Time: 12 minutes

Procedures:

CHEF NOTES:


• This recipe can be adapted by using the desired steak of your choice as well as your desired herb butter.
• There is plenty of herb butter leftover that can be frozen for up to 3 months.  Use it as you need it in on steak, chicken, fish, pork, vegetables or pasta.
• Figure about 1 russet potatoes per person unless you really love fries than do 1 ½ per person.
• If you’d like your steak a little more done add 1 minute per side of cooking and 1 extra minute of rest to get a medium internal temperature. 
• This is not meant to be re heated or frozen, you should eat it the second it is finished.

Classic Steak Frites Recipe

A juicy seasoned steak over crispy French fried potatoes, topped with tangy maitre d'hotel butter and served with sauteed garlic mushrooms and onions.

Steakhouse Steak Rub

French fries (, cooked)

maitre d'hotel butter

Prep Beef

Season the steaks with the Steakhouse Steak Rub and set aside.

Heat a cast iron pan or heavy skillet over high heat until smoking. Make sure you turn on the vent or have proper ventilation. If the skillet is not nonstick or cast iron, add a small amount of high smoke point oil like peanut oil.

Cook Beef

Add the seasoned steaks, cooking for 2-3 minutes on each side, longer if you like a medium-well done steak. This will also be highly dependent on the thickness of your steaks. Remove and allow to rest for 5.

Plate

To plate, place French fries on the bottom, top with your steak and finally compound butter.
