Paleo Sesame Chicken (Gluten-Free & Grain-Free)

(plus 1 tablespoon, avocado oil)

(skinless chicken thighs

Kosher salt

arrowroot starch

medium yellow onion – diced

red bell pepper – diced

green bell pepper

garlic – finely chopped

ginger

coconut aminos

rice wine vinegar

honey

sesame oil

freshly-cracked black pepper

sesame seeds –

Preheat ¼ cup avocado oil in a cast-iron or non-stick skillet over medium-high heat until oil registers 375F on an instant read thermometer.

Lightly season both sides of the chicken pieces with salt and add to a large bowl along with the arrowroot starch. Toss until completely coated. Working in batches so as not to overcrowd the pan, shake off excess starch and carefully add the chicken pieces to the hot oil. Fry until golden brown, around 3 minutes, then flip and fry until the second side is golden brown and the chicken is cooked through, another 3 minutes. Transfer chicken to a plate and set aside while you fry the remaining pieces.

Preheat a separate pan over medium-high heat. Add the avocado oil and heat until shimmering. Add the onion, red pepper, green pepper, garlic and ginger and cook, stirring, until onions are slightly translucent. Add the coconut aminos, rice wine vinegar and honey. Cook, stirring occasionally, until the liquid has reduced in volume by half. Add the sesame oil, black pepper and cooked chicken pieces. Carefully toss everything to coat.

Transfer the chicken to a serving platter, season with sesame seeds and serve immediately.

Place chicken pieces in a bowl and sprinkle with cornstarch; toss to coat.

Heat vegetable oil in a large skillet or a wok over medium-high heat; add chicken pieces to the hot oil and cook for 6 to 8 minutes, or until browned on both sides and cooked through.

Remove chicken from wok or skillet and set aside.

Turn down heat to medium-low and add garlic and ginger to the skillet; cook and stir for 20 seconds, or just until fragrant.

Turn up the heat to medium-high and stir in the mushrooms and zucchini; cook for 4 minutes, or until fork tender and browned. Stir frequently.

In the meantime, in a small mixing bowl whisk together soy sauce, rice vinegar, and sugar.

Stir chicken back into the skillet.

Add in the prepared soy sauce and stir to coat chicken and veggies.

Stir and cook for 30 seconds to 1 minute, or until everything is heated through and sauce has slightly thickened.

Remove from heat; sprinkle with sesame oil and sesame seeds.

Garnish with scallions and serve.

Heat the oil in a large skillet or wok. Coat the chicken in the salt, pepper and flour. Add the the skillet and cook for about 10 minutes, until browned on all sides and cooked through. Remove from skillet and set aside.

Add the red bell pepper, jalapeno, garlic and ginger. Stir fry for 1-2 minutes, or until red pepper starts to soften slightly. Add the green onion. Stir fry 1 minute.

Add the orange juice, soy sauce, broth, Shaoxing wine, and sichuan peppercorns. Cook for about 1 minute, deg-lazing the pan.&nbsp;

Add the chicken and cook for 2-3 minutes, or until sauce has thickened and chicken is coated. Add the tangerine pieces and mix to coat with sauce. Add additional salt to taste if desired.

Stir to combine together and bring the liquid to a low boil. Slowly add the slurry (cornstarch and water mixture) to the metal bowl and gently stir to combine. The sauce will thicken as it cooks. Give it a few minutes to let the sauce thicken. If after about 5 minutes and the sauce is not as thick as you like it, make some more of the slurry and slowly pour in until the desired thickness is achieved. Remember that the stir fry saucethickens as the recipe cools down a bit.

In a wok or large sauté pan, heat the oil over medium-high heat until it shimmers. Add the chicken in a single layer. Cook, stirring occasionally, until golden brown and cooked through, about 5-7 minutes. Remove from the pan and set aside.

Stir

Add in the carrot, broccoli, bell pepper, mushrooms, and onion. Cook, stirring often, until the vegetables are crisp tender, about 3-4 minutes.

Add in the garlic, ginger and cook for another 30-60 seconds until fragrant.

Pour

Pour the stir fry sauce into the pan and add in the chicken. Cook, stirring often, until the sauce thickens and coats the stir fry.

Serve

Garnish with green onion and sesame seeds, and serve over cooked rice.
