Pre-heat oven to 350F (180C) line 1 or 2 cookie sheets with parchment paper.

In a large bowl whisk together the egg, juice, oil, vanilla and sugar, until well combined.

These were so delicious.  I refrigerated the dough and filling for few hours before working on them.  It was not as messy as I expected.

The cookies are SOO delicious! But I do agree with everyone saying that they are very messy to make! If I try again, I’d probably cool the dough and filling. My turned out more like little biscuits rather than a cookie, but still delicious. I cooked them for 18 min at 350, but had to keep them in for like 15 extra minutes. Not sure if it’s just my oven or what.

The dough was a bit too dry so I had to add water and milk. I made a whipped cream frosting with the strawberry juice you were supposed to drain. I ended up making sandwich cookies from these and it was pretty good! I thought it was a fairly easy recipe and a great way to use up strawberries before they sour!

I agree with others that said the dough was difficult to work with- it was a bit sticky. BUT- as frustrating as these were (to me) to make, they were downright amazing! The lemon zest in the filling really works with the fresh strawberries. So incredibly good!

I wont be making these again. Dont get me wrong. They are super deelish but like others were saying...dough to sticky to work with. Just alot of work but they were yummy!!! Everyone loved them. Giving 5 stars for the yummy effect!! But a big fat ZER0 for convenience and ease cause they sure are not!

Tried this today and it’s oh soo yummy. The recipe is ready to follow, even for a first time baker like me!

Wanted to let everyone know. It isn’t difficult... follow the simple directions. Use a cookie mat, I mixed the butter & flour mix by hand & voila done. The picture isn’t deceiving. ( maybe your new at baking..if so give it time you’ll be a pro in no time) I didn’t shape them as again using a cookie scoop & the mats & that’s it as they shape themselves. Happy baking!!

These were so delicious. A bit more difficult than I thought. Would recommend chilling the filling and trying to keep the batter cool too as it got a bit goopy in my warm kitchen!

Strawberry Cheesecake Cookies

Use a small cookie scoop to place scoops of dough onto the prepared baking sheet 2 inches apart.

Bake in preheated oven for 12-13 minutes, or until cookies are set and golden brown on the edges.

Allow cookies to cool on the pan for 10 minutes, then remove to a wire rack to cool completely.

Strawberry Cheesecake Cookies from Cake Mix! Valentine's Day Treat! (RECIPE LINK IN DESCRIPTION)

These Strawberry Chocolate Chunk Cookies are studded with chocolate chunks and sweet strawberries for a delicious treat!

Strawberry Chocolate Chunk Cookies

unsalted butter (softened)

brown sugar (packed)

vanilla extract

all purpose flour

instant vanilla pudding mix

baking soda

salt

chocolate chunks

Preheat oven to 350 degrees F. and line a large baking sheet with parchment paper or silpat liner.

Cream butter and sugars in stand mixer or by hand in large bowl until light and fluffy. Add egg and vanilla mixing well. Slowly add flour, pudding mix, baking soda, salt, strawberries and chocolate chunks, stirring until dough forms.

Scoop dough with a medium cookie scoop onto baking sheet placing 1 inch apart. Bake for 12 minutes, or until baked through. Remove and let cool for 10 minutes before transferring.

It&#039;s really simple to make these strawberry biscuits. You&#039;ll make a classic sugar cookie dough with butter, sugar and flour and then fold in freeze dried strawberries to add a gorgeous, fresh flavour. Best of all, they take just 5 minutes to bake!

Strawberry Biscuits

110 g slightly salted butter (softened)

100 g white caster sugar (superfine sugar)

eggs

270 g plain white flour (all purpose flour)

tsp bicarbonate of soda (baking soda)

tsp salt

g freeze dried strawberry pieces

Put the butter and sugar in a large mixing bowl. Beat until light and fluffy.

Add the egg and beat again.

Add the flour, baking powder, salt and bicarbonate of soda and mix using a fork or electric whisk.

Add the strawberry pieces and mix briefly until evenly distributed.

Gather into a ball, then turn out onto a floured surface and form into an oblong about 2 cm (3/4 inch) tall and 5cm (2 inches) wide and as long as the dough allows (probably about 30cm / 12 inches). Wrap and chill in the refrigerator for 15 minutes or until firm.

Preheat the oven to 200C (180C fan-assisted, 400F).

Using a sharp knife, cut the dough into slices 1/2cm (1/4 inch) thick.

Place the cookies on a lined baking sheet. They don’t spread very much, so can be placed quite close together.

Bake for 5 minutes, until only just beginning to colour.

Allow to firm on the tray for a few minutes, then transfer to a wire rack to cool completely.

(15.25 ounce) box strawberry cake mix

white chocolate chips

In a large bowl, stir in the cake mix, oil and eggs until thoroughly combined. Fold in the white chocolate chips.

Refrigerate dough for at least 15-20 minutes so that dough is easier to shape into balls and cookies retain their shape and do not spread out. **Dough will still feel slightly sticky and wet when shaped into cookie dough balls but should turn out round and fluffy once baked.**

Preheat oven to 375°F. Line two large baking pans with parchment paper or lightly coat with cooking spray. Set aside.

Shape dough into rounded balls (or use at 2 tablespoon ice cream scoop for even cookies) and place onto prepared baking pans.

Bake for 8-10 minutes or until edges are set. Remove from oven and let cool for 10 minutes, then move to wire rack to cool completely.

Matcha Frog Thumbprint Cookies with Strawberry Ganache

all-purpose flour ((180 grams))

salt ()

unsalted butter, softened ((1 stick butter/8 tbsp))

sugar ((50 grams))

egg, room temp ()

tsp vanilla extract

matcha powder ()

tbsp white chocolate, melted ()

heavy cream

tbsp freeze dried strawberry powder

pink or red food coloring, optional

edible markers

In a stand mixer using the paddle attachment (can alternatively use hand mixer, whisk, or fork!), mix the butter and sugar on medium speed until combined. Scrape bottom of bowl.

Add in the egg, vanilla, and matcha powder. Stir until combined.

Dump in all of the flour and salt, mixing until no dry spots remain.

Preheat oven to 350°F/177°C and line two baking trays with parchment paper or silicone mats.

Use small cookie dough scoop to gather dough (about 1 ½ tablespoon each). Shape it into a very smooth ball, then place onto lined baking tray. Repeat for about 16 cookies, making sure you have leftover dough for the eyes.Place balls about 3-4 inches apart. They will not spread much while baking.

Using your thumb, pinky, or thin end of a rubber spatula, press heart indents into the cookie dough balls. The deeper the cavity, the more strawberry ganache you&#39;ll be able to fit in later on! *Tip: If the dough cracks on the sides, you can use your fingers to smooth it out.

For the frog eyes, take about 1 tsp of dough and split it into two equally sized balls. Place them on top of the frog heads, making sure the doughs are completely touching. You can even use your finger to smooth out the sides where the dough meet. This ensures the eyes don&#39;t fall off after baking.

Bake for 11-13 minutes. Cookies should have slightly firm edges and retain their green color. They should not be browned.

Let cool on pan for about 5-10 minutes, then transfer to wire rack.

For the cookie dough:

Add the white chocolate and heavy cream into a microwave-safe bowl. Microwave for 30 seconds, then stir. Microwave at 10-second intervals, stirring in between, until the chocolate is completely melted.

Stir in the freeze dried strawberry powder. If you want a deeper color, add in a drop of oil-based red or pink food coloring.You’ll want to use oil-based food coloring or the chocolate will seize up and become lumpy. However, if you don’t have oil-based food coloring, you can try mixing in a tsp of neutral oil (canola, vegetable) at a time! The chocolate should come back together. Maaagic.

If the ganache seems too liquidy, add in a few pieces of white chocolate chips and melt. If it&#39;s too thick, add a splash of heavy cream.

Use a small spoon to fill each cavity with ganache.

For the strawberry ganache:

Draw on the eyes and mouth with a black edible pen. Add blush with a red edible pen.

Strawberry White Chocolate Cookies

Using a stand mixer or an electric hand mixer, combine the butter with the sugars until creamy.

Add the egg and vanilla; mix until just combined.

Add the flour, baking soda, and salt; mix until just combined.

Fold in the white chocolate chips. Crush the strawberry pieces gently by hand, not into powder but just into small chunks. Fold strawberry pieces into the dough.

Roll into balls (9-12 total) and bake on a parchment-lined baking sheet for 9-11 minutes depending on the size of your cookies. I usually do this in two batches. At 9-10 minutes, the cookies will be puffed up slightly &#8211; they&#8217;re not going to stay like that! You&#8217;ll want to let them sit out for a few minutes so they can sink back down and firm up into soft, dense, buttery, delicious little miracle cookies.

I didn't realize this recipe calls for salted butter, which I never buy for baking thanks to every other recipe using unsalted. They were okay, but I think they would be better with that extra salt! Take note and don't make my mistake!

Wow these are delightful. Didn’t have salted butter so I just added a little extra salt to the recipe. The whole family was a big fan…especially my 3 year old. I had to hide them at one point.

I probably wouldn’t have tried this recipe if it wasn’t on the spring bucket list, I’m not a fruity cookie person, but I’m glad I did. They are yummy with just a hint if strawberry. Next time I will add more berries and I will chop the berries with a knife rather than trying to crush with my hands. Crushing resulted in too much powder/ super fine pieces and I really like the chunks of strawberry.

Made these with salted butter but without the 1/2 tsp of salt, but heed the suggestion and use both salted butter and salt!
I was burned once a long time ago when I started baking and had used salted butter by accident plus the requisite salt and it came out way too salty, so I was cautious here. The salt will really bring out the flavors more, we sprinkled some on top afterwards.
Delicious and chewy goodness as promised. In the future i I'll probably add more strawberry and increase bake time by a minute to suit my taste.

This is a perfect spring recipe! Reminds me of those strawberries and cream hard candies (anyone else?). I used a 2 tablespoon cookie scoop and got 12 cookies per batch - baked one batch for 9 minutes and froze another for a day when a fresh cookie is called for.

I tried these and even at 12 mins they were almost raw and there is wayyy too much baking soda. For a recipe with this much flour, I’d expect a third of the amount. I wanted to love these but won’t be making again sadly.

I made these today following the recipe exactly but subbing Trader Joe’s brand gluten free flour and they came out amazing. A little flatter than the POY photos but incredibly tasty.

Uhmmm so I added some macadamia nuts and my life is forever changed.  Now I have to whip up another batch for my kiddo and husband because this one is not going to make it to the evening.  Absolutely delicious!  Followed the recipe as written plus added 1/2 cup of chopped up macadamia nuts

These were OK. The cookie batter was yummy, but the freeze-dried strawberries turned gummy and chewy and they added very little flavor to the cookie. It looks like I'm the only one that has had this problem so far, so I'm wondering what I did wrong. I followed the directions exactly (spooning in flour, gently crushing strawberries to have minimal powder, etc.).

You want to know how good these are? In the words of my husband: “this may be the best cookie I have ever had.” Followed by, “yeah, you’re never allowed to make another variety of cookie ever again.”  THAT GOOD.
