These made from scratch strawberry pancakes are perfectly light, fluffy, and crispy around the edges. Topped with fresh strawberries and a lightly sweet strawberry sauce, these homemade pancakes are a perfect weekend brunch recipe.

Strawberry Pancakes with Strawberry Syrup

strawberries

lime juice

white vinegar or lemon juice

Combine strawberries (except for the ones reserved), 1/4 cup sugar and lime juice in small saucepan. Simmer over low heat for ten minutes stirring every couple of minutes. Remove from heat and allow to cool. Sauce will thicken upon cooling.

Combine milk and vinegar in small bowl and set aside for 5 minutes.

Combine flour, 3 tablespoons sugar, baking powder, baking soda and salt in large mixing bowl.

Add melted butter, egg, and vanilla to milk mixture.

Pour milk mixture into flour mixture stirring with whisk just until combined. Gently fold in the reserved strawberries; resisting the urge to over-mix.

Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cup of batter onto the skillet.  Cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

These will have everyone running out of bed to get some breakfast!

Pancakes are a crowd pleaser at any time of year – these summery ricotta versions with strawberries and thyme-scented syrup are no exception. Strawberries not in season right now? Make these ricotta pancakes with roasted grapes and sweet-sour pomegranate molasses instead.

Strawberry and ricotta pancakes

Cut 75g of the strawberries into small pieces and set aside in a bowl. Put another 150g of the berries in a pan with 75g of the sugar, a good splash of water and the thyme. Simmer over a low heat until the strawberries have broken down, then push them through a sieve, collecting the syrup in a bowl and discarding the pulp. Quarter the remaining strawberries.

Beat the egg yolks, ricotta, melted butter and milk together in a bowl. In a separate bowl, mix the flour, baking powder, a pinch of salt, lemon zest and remaining sugar. Make a well in the centre of the dry ingredients, add the ricotta mixture and mix gradually until smooth. Add the chopped strawberries. In a separate, clean bowl, whisk the egg whites until they form soft peaks, then carefully fold into the batter. Set aside.

Grease a non-stick pan with a very small amount of oil and set over a medium heat. When hot, drop large spoonfuls of the batter into the pan. Cook for a minute or so on each side until puffed up and golden, turning carefully with a spatula. Keep the pancakes warm and continue until all the batter is used up.

Serve with the reserved quartered strawberries and the strawberry syrup. Scatter with thyme leaves and dollop with clotted cream if you like.

Using a paper towel, fully wipe the pan with the oil, leaving a thin film of oil over the bottom and sides of the pan. Using a ¼ cup measuring cup or an ice cream scoop that measures ¼ cup, and scoop out pancake batter and portion 3 to 4 pancakes on your pan. Cook until the edges are set and bubbles start to break , and the bottom of the pancakes are golden brown, about 2 to 3 minutes. Sprinkle about 1 tablespoon of chopped strawberries over the top and using a wide spatula, flip the pancakes over. Continue to cook the second side until the bottoms are golden brown, about 1 to 2 minutes longer. Serve pancakes immediately or store on the prepared baking rack in the oven. (If you’re storing pancakes in the oven to keep warm, be sure to store in a single layer and do not stack the pancakes. These fresh strawberry pancakes are easy to make, and you can use everyday pantry items you likely already have on hand! Just throw in some diced strawberries!

Strawberry Pancakes

In a medium bowl, whisk together the flour, sugar, baking powder, and salt.

In another larger bowl, whisk the egg until blended. Whisk in the milk, melted butter and vanilla, then fold in the dry mixture until well combined. Let the batter rest for 10 minutes

Fold the strawberries into the pancake batter.

Heat a large nonstick pan or griddle over medium heat. Spray with nonstick cooking spray.

Using a ⅓-cup measuring cup, pour 3-4 circles of batter into the pan. Cook until the pancakes are puffed on top and golden brown on the bottom, 2-3 minutes, then flip and cook on the other side until risen and cooked through, 1-2 minutes more. Makes 8 pancakes.

Serve with fresh strawberries and maple syrup, as desired.

Strawberry Pancakes are ultra fluffy and buttery soft. They&#39;re filled with fresh strawberries, a hint of cinnamon, and topped with a luscious 10-minute strawberry compote. Perfect for a brunch that feels luxurious, or an easy breakfast for dinner!

Double Strawberry Pancakes

strawberries (if frozen, do not thaw)

all-purpose flour (195 grams)

strawberries, quartered (210 grams)

maple syrup

Make the Strawberry Compote: Stir together the cornstarch and water in a small bowl, making sure the cornstarch is fully dissolved. Add this and remaining sauce ingredients to a pot on the stove over medium heat. Stir, and bring the mixture to a simmer. Once simmering, cook for 5 minutes, stirring constantly. Remove from heat and allow to cool.You can cool the sauce quickly by pouring it into a shallow bowl or pie plate and placing in the fridge for 20-30 minutes.Store in the fridge in an airtight container until ready to use. This keeps for 1 to 1 and 1/2 weeks in the fridge.

Make the Batter: Melt butter in a medium mixing bowl, then whisk in the egg and milk. Stir in the dry ingredients until just combined. We WANT lumpy batter, here!  Get out a griddle (heat at 350 degrees) or a large skillet (heat on the stove over medium to medium- high heat). 

Cook Pancakes: Once your griddle or pan is heated, grease it well using butter or nonstick spray. Pour the batter onto the griddle using a 1/4 cup or a 1/3 cup (for slightly larger pancakes) measuring cup, using the back of the cup to spread the batter out a bit, since it is thick. Place a few strawberry pieces on each pancake. Once the pancakes are a little puffy and the underside is golden, flip the pancakes! (This will only take a 1-2 minutes, so don&#39;t walk away!) Check the underside by lifting the edge with your flipper.Tips: Spraying your flipper with nonstick spray makes flipping pancakes easier (I also use a second spatula to scoot the pancake onto the first one for flipping). If your pancakes are getting darker than you&#39;d like, turn down the heat a bit. Pancakes are done when both sides are golden brown, and no wet batter spots are visible around the edges.

Serve &amp; Store: Serve + Store: Serve warm with the strawberry compote, and lots of butter &amp; maple syrup! Store leftover pancakes in a ziploc bag in the fridge for up to 2 days. Leftover pancakes can also be frozen, in a ziploc bag, for 1-2 months. Reheat by popping them in the toaster or microwaving as if you were heating them up - they&#39;ll defrost nicely.

While the batter rests, hull and dice the strawberries. Spread them over paper towels to dry slightly, then fold them into the batter just before cooking.

Warm a non-stick skillet or griddle over medium heat and grease lightly with butter or cooking spray.

Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes until bubbles form on the surface and the edges look set. Flip the pancakes and cook for another 1-2 minutes until golden brown and fully cooked through.
