Tried this for dinner for my husband and two little kids because I was looking for something different and a little healthier. It was delicious and my kids loved it. Thanks to the person who suggested sour cream instead of ranch. One of my kids is not a fan of ranch and this was a good alternative. Another good recipe to add to my list  of dinner options.

These were really delicious. Worth the effort. I used light ranch to lower calories. And half the taco seasoning was plenty. I won’t bother filling the boats and broiling just for myself, though they are pretty. I will take the remainder and heat through and melt the cheese - top with sauce. Very good, creative recipe.

Great idea however I am curious how big a package of taco seasoning to use.   I used a package of Trader Joe's seasoning and the heat level was good but the filling ended up way too salty.

Love love love!!! These were absolutely amazing! I did tweak it a little bit for my own preference. I left out the beans, used half a cup of corn and 3c of chicken. For the dressing I used 1c sour cream and only about a tablespoon of ranch. I probably would have used less lime juice as well. I might add a little bit of onion next time too. But overall amazing! Even my picky eater enjoyed these!

For people with celiac disease make sure there is no gluten in the ranch dressing or taco seasoning.l loved these by the way.

Ditch The Tortilla And Make Taco Stuffed Avocados Instead

Healthy shrimp stuffed avocado is an easy appetizer or light lunch. A delicious filling of bay shrimp, crunchy vegetables and sweet mango.

Shrimp Stuffed Avocado + Video

oz bay shrimp ((1 cup))

mango

red onion (diced)

red bell pepper (diced)

jalapeño (seeded and diced)

cilantro leaves (chopped)

lime ((juice, 2-3 tbsp))

salt and pepper (to taste)

Scoop out half of the avocado leaving a "bowl" area in each. Place the scooped avocado into a medium-size mixing bowl and mash with a fork. Season with salt and pepper.

Add the mini bay shrimp, mango, red onion, bell pepper, jalapeño, lime juice and and cilantro to the mashed avocado. Stir to combine and mix thoroughly.

Scoop avocado shrimp mixture into each avocado bowl and serve immediately or cover and chill. Serves 2 people.
