Sweet and savory bacon wrapped dark chocolate &amp; goat cheese stuffed dates make a fun, delicious appetizer to serve a crowd. These easy bacon wrapped dates have hints of dark chocolate, creamy goat cheese, and crispy bacon. They&#039;re guaranteed to impress guests!

Bacon Wrapped Dark Chocolate + Goat Cheese Stuffed Dates

72% dark chocolate, chopped into pieces (this is optional)

For the glaze:

Cayenne pepper

Preheat oven to 375 degrees F. Line a baking sheet with parchment paper. You’ll want to make sure your baking sheet has some edges, as the bacon does produce lots of grease when cooked.

Split each date in half without breaking them fully apart. Make sure the pit is fully removed and discarded from the date if it already isn’t.

Add a small piece of dark chocolate to your opened date. Spread a small amount of goat cheese mixture inside, and press together to close your date. Repeat with all of your dates.

Next, cut your strips of bacon in half. Take one date and wrap ½ piece of bacon around it. Repeat this step until each date is wrapped in ½ slice of bacon.

Place all bacon-wrapped dates on large baking sheet with the bacon seam side down.

Brush each bacon wrapped date with a little maple syrup. Sprinkle cayenne pepper on each date (use more if you like spicy flavors, and omit or only use a small pinch if you do not like spicy flavors). Stick a toothpick into each date.

Bake in the oven for 10 minutes, then turn date on its side so that the toothpick is parallel to the baking sheet. Bake for 10 more minutes. Then flip dates to other side and bake again for 10 minutes or until bacon is slightly golden brown. Transfer to a plate to cool. Serve immediately. Serves 10, 2 bacon-wrapped dates each.

Cut a slit in each date to remove the pit, then fill each with peanut butter (about 1/2 teaspoon) and a sprinkle of crushed peanuts. Set aside.

Place the dark chocolate and the coconut oil in a microwave safe bowl and melt in the microwave in 15 second increments, stirring between each. It should take longer than 1-2 minutes total.

Using a toothpick, dip each date into melted chocolate and use a spoon to coat the date until completely covered. Place chocolate covered date on a platter lined with parchment. Sprinkle remaining crushed peanuts on top of each date. Place the dates in the fridge to allow the chocolate to set.

Keep leftover chocolate covered dates in a sealed container in the fridge for up to a week.

Here's an easy finger food recipe: goat cheese stuffed dates! They're quick to make, and the sweet and savory combo keeps everyone coming back for more.

Easy Stuffed Dates

Use a knife to make a lengthwise slit into the dates, then remove the pits. Use a spoon to fill them with goat cheese.

Top each with a tiny sprinkle of black pepper, sea salt and the tiniest bit of smoked paprika (just a tiny sprinkle has big flavor). Sprinkle on pistachio dust. If desired, add the tiniest drizzle of honey (again, use a small amount to heighten the flavor; too much and it overwhelms).

A decadent yet healthy 30-minute vegan dessert! Fresh dates stuffed with tahini, dipped in DIY 4-ingredient chocolate, and sprinkled with coconut and sesame seeds.

Tahini-Stuffed Dates (AKA Tahini Bombs!)

cocoa butter*

cacao cocoa powder

Tbsp tahini ((divided // from raw or roasted sesame seeds))

sea salt

Tbsp unsweetened desiccated coconut flake or sesame seeds

Add 2 inches of water to a medium saucepan and bring to a rolling simmer over medium-high heat. Then reduce heat to medium and set a medium glass or ceramic mixing bowl on top, making sure it's not touching the water (this creates a "double boiler").

To the mixing bowl, add finely chopped cocoa butter and coconut oil and let melt, stirring occasionally with a wooden spoon or whisk - about 2-3 minutes.

Once melted, carefully remove bowl from heat (turn off stove top) and add the maple syrup and cacao or cocoa powder. Use a whisk or wooden spoon to mix until fluid and thoroughly combined.

Taste and adjust flavor as needed. I added about 2 Tablespoons maple syrup total (amount as original recipe is written // adjust if altering batch size), but it’s completely up to how sweet you prefer your chocolate.

Because the chocolate is quite thin at this point, set in the refrigerator to chill and slightly thicken and make dipping the dates easier - about 15-20 minutes total, removing to stir/whisk occasionally. You'll know it's ready when it's more like pourable hot fudge than melted coconut oil.

Next, carefully remove pits from dates and be careful to keep one side of the date intact, as opposed to splitting it into two separate pieces. You're trying to create a small crevice in the date (see photo) so it's easy to add/contain the tahini. Once pitted, fill with tahini - about 1/2 - 1 tsp depending on size of date.

Add dates to a parchment-lined baking sheet and pop in freezer to chill while chocolate thickens.

Once chocolate has thickened (if it got too thick, briefly microwave or set back over the double boiler to thin), add one date at a time and flip with a slotted spoon or fork to fully coat, then tap off any excess chocolate. Set back on the parchment baking sheet and immediately sprinkle with a little sea salt and either sesame seeds or coconut. Repeat until all dates are coated.

Enjoy immediately. Store leftovers in the refrigerator for 1 week or the freezer for 1 month. Let come to room temperature before enjoying for best flavor/texture.

Line a baking sheet with parchment paper. Cut a slit into the centre of each date, lengthwise, and remove the pit. (Be sure not to cut all the way through as we want to stuff them!)

Stuff the inside of each date generously with peanut butter and sprinkle with the peanuts. Place on the baking sheet.

In a small bowl, combine the chocolate chips and coconut oil. Melt in the microwave in 30 second increments until smooth and combined, mix with a spoon to do so. Drizzle the melted chocolate over the dates to coat. Optional to sprinkle with sea salt.

Refrigerate the stuffed dates until the chocolate has fully hardened, about 30 minutes.

Stuffed Dates Recipe (4 Ways)

Slice open each date and take out the seed. Make sure not to cut the dates all the way through and have them intact on one side.

For goat cheese honey: Fill the dates with goat cheese and dip in the ground pistachios. Then drizzle some honey on top.

For feta and walnut: Stuff the dates with a chunk of feta and top with a piece of walnut.

For nut butter chocolate: Fill the dates with the nut butter and top with a few chocolate chips.

Nuts and coconut: Stuff the dates with a few nuts and top with desiccated coconut.

Roasted Stuffed Dates

(12-oz.) pkg. pitted Medjool dates

(4-oz.) log goat cheese (*soften

cinnamon

Tbsp. extra-virgin olive oil

Preheat oven to 375ºF.Use a small sharp knife (such as a pairing knife) to slice open the dates lengthwise (do not slice all of the way through). Break open date and fill each one with 1 to 2 teaspoons of goat cheese.Arrange dates in a 9x9-inch baking pan, round cake pan, or small baking sheet.

In a small bowl, combine walnuts, rosemary, orange zest and juice, ground cinnamon, sea salt, and olive oil; mix well.

Spoon walnut mixture over stuffed dates, and transfer pan to the oven. Bake for 15 minutes. Remove from oven and let sit for 5 minutes before transferring to a serving platter and drizzling with hot honey. Serve warm.

Make a cut in each date with a knife and remove and discard the pits.

Add a small spoonful of peanut butter to the center of each date, being careful not to overfill the dates.

Add a sprinkle of crushed peanuts and use your hands to gently press the dates to close them slightly.

Use a toothpick to pick up each date and dip into a bowl of melted dark chocolate, then place onto a baking sheet lined with parchment paper and sprinkle with additional crushed peanuts and sea salt.

Place in the fridge or freezer for 30 minutes to set.

Incredible Almond Joy stuffed dates with just 6 ingredients required! All of the flavors of coconutty Almond Joys stuffed into a medjool date and dipped in dark chocolate. Naturally vegan and gluten-free and SO delicious.

Almond Joy Stuffed Dates

medjool dates, pitted ((as uniform in size as possible))

coconut butter

coconut

almonds ((or sub pre-roasted, unsalted))

dark chocolate ((60-70% cacao))

coconut oil ((if oil-free, omit))

Maldon sea salt

If using raw almonds (vs. pre-roasted), preheat the oven to 350 F (176 C) and place 20 raw almonds on a small baking sheet.

While the oven preheats, pit your dates and set on a small plate. Make a “well” in the center of each date to hold in the coconut butter, and close the ends together by pinching. Set aside.

Add coconut butter to a small mixing bowl. It should have a creamy, spreadable consistency. If too firm, very briefly heat in the microwave in 5-second intervals. It melts quickly, so don’t heat until liquid. If it’s too liquidy, simply place in the refrigerator for 5-10 minutes to allow it to firm up. If it’s melted, it will spill out of the dates.

Place almonds in the preheated oven and bake for 8 minutes (be careful not to burn).

Add the desiccated coconut to the coconut butter and mix well. Then scoop ~1 tsp of the coconut butter mixture and form it into a small log shape before placing it into each pitted date, pressing down with your spoon (or clean fingers) so it’s “stuffed” inside the date. Repeat until all dates have been filled.

Remove almonds from the oven and transfer to a clean towel or small bowl to help them cool. Let cool for 5-10 minutes, or until they can be easily handled.

Place a roasted almond in the center of each coconut-filled date. The almond should be pressed slightly into the coconut, but not fully submerged in the coconut filling.

Transfer dates to the freezer to chill for ~10 minutes, or until the date and coconut butter are slightly firm to the touch and the almonds stay in place.

Add 1 inch water to a small saucepan and bring to a low boil over medium heat. Once boiling, reduce heat to low / simmer. To a small glass or metal bowl, add chocolate and coconut oil. Carefully place the bowl on top of the saucepan with simmering water. Heat, stirring occasionally with a spatula or spoon, until melted and no lumps remain — ~5 minutes. You can also melt the chocolate in a heat-proof bowl in the microwave in 20-second increments.

Once chocolate is fully melted, turn off the heat and set aside to slightly cool for a couple of minutes.

Remove dates from the freezer. Using a fork or clean fingers, carefully and quickly dip dates — one at a time — into the melted chocolate. Work quickly as the coconut butter can melt. Tap or shake off excess and set back on the plate from earlier (using parchment paper can help with removing the dates later, as well). As they cool, a little chocolate will pool around the sides — that’s normal.

Once all dates are dipped, option to garnish with Maldon sea salt for a salty-sweet crunch or a sprinkle of more desiccated coconut (or both!). Set dates back in the freezer to chill for another 10 minutes, or until the chocolate is completely hardened.

Store leftovers in the refrigerator for up to 2 weeks or in the freezer up to 2 months. Best enjoyed at room temperature.

these were super tasty and simple. i didn’t have coconut butter around so i just subbed my vanilla almond yogurt &amp; packed that into the dates w the shredded coconut &amp; ate after 5m in the fridge.

I found this recipe a month ago but finally made them yesterday. They are so yummy. I ended up making about 30 of them to use up the last of the jar of coconut butter and all of the dates. It worked perfectly so it was meant to be! I wasn't wild about the taste of the almonds once I'd toasted them, and just ate the 20 of them plain and added raw almonds to the dates. 😂That's just a personal preference, though. I will definitely make these again. I occasionally buy date/almond/coconut rolls at the grocery store but they're pretty expensive. These taste the same with chocolate added (how can you go wrong with chocolate???), cost less, and are easy to make. Just a piece of advice to others: don't wear a white t-shirt when making these! I wore an apron yet somehow still managed to get chocolate all over my shirt, even inside the apron! 😬
