(60 ml) mayonnaise

tbsp (15 ml) whole-grain mustard

chives

bread

Boston lettuce,

Salt and pepper

In a bowl, combine the mayonnaise and mustard. Add the chives. Set aside.

Spread the mayonnaise mixture on the bread. Top with the pork slices and lettuce. Season with salt and pepper. Close the sandwiches.

sugar snap peas, trimmed and julienned

mixed cherry and grape tomatoes, halved

red wine vinegar

This Classic Italian Pasta Salad is summer picnic comfort food at its best. Tri-color pasta, veggies, cheese and pepperoni fill this zesty Italian salad.

Italian Pasta Salad

tri-color rotini pasta

sliced olives ((2.25 ounce))

pepperoni

red onion

cheddar cheese

cucumber

tomato

pasta salad seasoning

zesty Italian dressing

Cook the pasta according to package directions and allow it to cool.

Once the pasta has cooled to room temperature, add the olives, pepperoni, onion, cheese, cucumber and tomato. Stir well.

Just before serving, sprinkle the salad seasoning on top of the salad, then pour the dressing over the top. Mix well. Add more dressing, if desired.

Dissolve the Jello in the boiling water. Stir until the powder is completely dissolved.

Add the applesauce and mix well.

Spray an 8x8 baking pan with cooking spray.

Pour the Jello mix in the prepared pan.

Allow to set for at least 3 hours.

Serve chilled with fruit and whipped cream.

This Mexican Street Corn Pasta Salad is loaded with roasted corn, Cotija and cheddar, creamy dressing and jalapeños for a kick of heat.

Mexican Street Corn Pasta Salad

trotolle pasta

corn

red onion (diced)

jalapeño pepper (diced)

cheddar cheese (divided)

Cotija cheese (divided)

sour cream

lime (juiced)

Tajín

Boil the pasta according to the package instructions in a large pot of salted water. Drain and rinse with cold water. Place the cooled, drained pasta in a large bowl.

Cut the corn off of each of the cobs. Add the corn to the pasta.

Add in the diced red onion and jalapeño pepper.

Then add in 1/2 cup of each of the two cheeses.

In a separate small bowl, whisk together the mayo, sour cream, juice of 1 lime and Tajín. (Start with 1 teaspoon of Tajín and add more to taste.)

Pour the dressing over the ingredients in the bowl and mix well to combine.

Top the salad with the remaining cheeses, additional Tajín and freshly snipped cilantro.

Cover and chill until serving.

Store in an airtight container for up to 3 days in the fridge.
