In a small bowl, mix the&nbsp;Maple Vinaigrette.

Break up the kale into small pieces and place in a large bowl.

Pour the dressing over the kale and massage it with your fingertips.&nbsp; This breaks down the kale and makes for a delicious salad green.&nbsp; It only takes a couple of minutes.

Add all of the superfoods&nbsp;to the bowl and toss.&nbsp; Serve!

Large Sweet Potato (roasted)

Large Avocado (sliced)

Almonds

Quinoa (cooked)

oz Spinach

Crispy Chickpeas (or raw chickpeas rinsed and drained)

½ Red pepper (chopped)

Basil (chopped)

tbsp Mint (chopped)

tbsp Dill (chopped)

Lemon juice

Olive oil

tbsp White vinegar or champagne vinegar

Honey

oregano

¼ tsp Sea salt (more

black pepper (to taste)

Make The Lemon Vinaigrette: In a small bowl, whisk together all the ingredients except the olive oil. Then, slowly drizzle in the olive oil and whisk until a creamy emulsion forms. Alternatively, you can add all the ingredients to a small mason jar, seal the lid, and shake vigorously to combine the ingredients. Store the dressing in the fridge until ready to use. (It can last in the fridge for up to one week.)

Assemble The Salad: Add the spinach, or greens of your choice, to a large plate. Top with pieces of remaining ingredients. Drizzle on the lemon vinaigrette, then toss the salad. Serve immediately and enjoy!

To assemble salad, start by adding the kale and spinach to a large salad bowl or mixing bowl. Add the remaining salad ingredients to the bowl except for the avocado.

Make the dressing by adding all dressing ingredients to a mason jar. Cover lid tightly and shake until creamy (about 15 seconds). Alternatively, you could whisk all ingredients together in a bowl, but I find shaking works much better. Taste, and if desired, you can add more salt.

Pour dressing over salad and toss well to combine.

Lastly, chop avocado and add to top of salad. Serve immediately.

Triple Green Superfood Salad with Balsamic Vinaigrette

Add all the dressing ingredients to your blender or food processor. With variable speed units, start with a low speed and then gradually increase it to a higher speed until the mixture is perfectly smooth.

If you don't have a blender or a food processor, simply add all the ingredients to a medium mixing bowl, a dressing shaker or a mason jar and just whisk or shake until everything's well-mixed.

Mix the Dressing

In a large bowl, gently toss the red leaf lettuce, arugula and dandelion leaves together. Add salt and pepper to taste and continue to toss.

Drizzle on dressing to taste and continue to toss the greens.

Scatter the grape tomato halves, carrot slices, red onion, yellow bell pepper and cucumber over the greens.

Add pepper to taste, drizzle on more dressing (if needed), and gently toss the salad to ensure all the ingredients are evenly coated.

If using, sprinkle feta cheese and homemade croutons over the salad. Drizzle with more dressing if desired.
