Instant Pot Swedish Meatballs

lb Ground Beef ((90% lean))

lb Ground Pork

Panko Bread Crumbs

Milk

Onion,

Salt

Pepper

tsp Allspice

tsp Nutmeg

tsp Garlic Powder

Egg, (beaten)

Fresh Parsley, (finely chopped, divided)

Tbsp Olive Oil

Tbsp Butter, (divided)

10 oz cans Beef Consommé ((or good beef broth, 2 1/2 cups))

Dijon Mustard

Worcestershire Sauce

Heavy Cream, (divided)

Flour

Salt & Pepper

In a mixing bowl add ground beef. ground pork, panko, milk (pour over the crumbs), onion, salt, pepper, allspice, nutmeg, garlic powder, beaten egg, and 2 Tbsp of the parsley. Mix together well to combine the ingredients.

Form 30 meatballs and set them on parchment paper.

Turn on the pot's Sauté setting, and when it is hot, add the olive oil and 2 Tbsp of the butter.

Add 15 of the meatballs and brown lightly on outside. Do not cook completely. Remove to a plate and repeat with the second batch.

Add the beef consommé and stir, scraping the bottom of the pot to get up any of the browned bits (deglaze).

Add the remaining 4 Tbsp of butter, dijon, Worcestershire, and 1 cup of the heavy cream (reserve the remaining 1 cup). Stir well.

Cancel the Sauté setting.

Add the meatballs back into the pot. Close the lid and set the steam release knob to the Sealing position.

Press the Pressure Cook/Manual button or dial (High pressure), and then the + or - button or dial to select 4 minutes. When the cook time is finished, let the pot sit undisturbed for 6 minutes (6 minute natural release).

While the meatballs are cooking, mix the flour with the remaining 1 cup of heavy cream. Whisk it well so there are no lumps. Set aside.

Do a controlled Quick Release of the pressure (*A controlled quick release means you release the steam in short bursts, then longer bursts, until you can be sure none of the sauce spews out of the vent with the steam from the intense pressure. Then fully open the vent and let it go).When the pin in the lid drops down, you can open it.

Remove the meatballs to a plate and cover. Turn on the Sauté setting (Med - Normal temp) and bring to a simmer.&nbsp;Whisk in the flour/cream mixture, stirring frequently, until thickened. Cancel the Sauté setting.

Taste the sauce and adjust salt &amp; pepper, if needed. You can either add the meatballs back in, or serve and pour the sauce over them. Garnish with remaining parsley.

Mix together all ingredients for the meatballs. Set aside.

Using a tablespoon scoop or spoon, form meatballs from the ground beef mixture. Heat 12-inch skillet or saute pan over medium heat. Drizzle in enough olive oil to lightly coat the bottom of the skillet to prevent meatballs from sticking. Drop formed meatballs into the heated skillet, turning occasionally to ensure that all sides of the meatball have been browned, about 7-10 minutes. Remove the meatballs from the skillet or saute pan and drain on a plate lined with paper towels.

For the meatballs:

Reduce the heat on the skillet or saute pan to medium-low heat. Melt butter and whisk in flour until it has turned golden brown. Slowly whisk in beef broth and cook until thickened, then add in milk or cream, worcestershire sauce, pepper, and salt. Continue to stir until well-combined. Add meatballs back into the skillet, turning to coat well. Add fresh parsley, if using.

Swedish Meatballs with Creamy Sauce and Homemade Lingonberry Jam

60 ml (1/4 cup) double cream (heavy whipping cream)

500 g (1 lb) ground beef (minced beef)

sea salt

pepper

Herbs de Provence or dried oregano

parsley,

garlic, finely minced

red onion, finely diced

250-375 ml (1 beef stock

ml (1/2 cup) double cream (heavy whipping cream)

soy sauce,

(cornstarch),

parsley, finely chopped

chives, finely chopped

500 g (1 lb) fresh lingonberries

100 ml (1/3 cup plus 1 tablespoon) water

300 g (1 1/3 cup) caster sugar (superfine sugar)

Soak the breadcrumbs in the cream in a large mixing bowl to which you will add everything else later.

Once the breadcrumbs have softened (this will take just a few minutes), add the remaining ingredients for the meatballs into the bowl.

Mix everything together with your hands until it is well combined.

Shape the meatballs. I prefer to keep the meatballs small, but make them as small or as large as you like.

Heat some oil in a large frying pan which you will also use later to make the sauce.

Fry the meatballs until they are golden brown all over. You may need to do this in batches. Don&#8217;t worry if the meatballs are not cooked through completely, as you will continue to cook them later.

Pour the stock into the saucepan and use a wooden spoon to scrape any brown bits from the pan.

Return the meatballs to the pan, and simmer gently on low heat for about 20 minutes.

Slowly whisk in the cornflour (cornstarch) mixture to thicken the sauce to your desired consistency (you may not need all of the cornflour mixture).

Taste for seasoning. If the sauce tastes too concentrated, add a bit of water.

Return the meatballs to the saucepan, and garnish with parsley and chives before serving.

For the Swedish Meatballs with Creamy Sauce

Wash the lingonberries and remove any spoilt berries, leaves and stems.

Place the lingonberries in a medium saucepan, together with the water.

Turn the heat down to medium-high, and continue simmering until the lingonberries have softened and broken down, and the mixture starts to thicken.

If the mixture looks too thick, thin it with a dash of water.

Make sure you stir frequently to prevent the jam from sticking to the bottom of the pan where it can burn easily.

The lingonberry jam is ready when most of the berries have burst and you have a thick, jam-like consistency. If you like your lingonberry jam to have more texture, try not to squash the berries too much as you are stirring.

The lingonberry jam will continue to thicken as it cools.

Serve the lingonberry jam warm or cold with the Swedish Meatballs.

Store any unused lingonberry jam in a sterilised jar and in the fridge.
