Swedish Pancakes Recipe

eggs (well beaten)

milk

butter

flour

salt

tsp sugar

sugar

buttermilk

tsp baking powder

vanilla

Beat eggs and add about ¼ cup milk. Add some flour with the salt and sugar; mix.

Add melted butter and more milk. Add rest of the flour and milk; mix well. Wipe griddle with some butter or oil when it is hot. Pour thin layer of batter in pan and move pan until batter is spread all over. When edges are bubbled and browned, it's ready to flip.

For syrup, melt all ingredients in a pot until well mixed. Serve on top of pancake and top with cream, fruit or any other toppings.

Swedish pancakes are made from a thin, egg-rich batter that's cooked in a skillet to produce soft and tender cakes that are folded into a triangle shape. There isn't any sugar in the batter, so they are the perfect vehicle to serve as a bed for your favorite toppings. With a batter that comes together in minutes with a bowl and whisk, and only three ingredients it is sure to be your new favorite pancake for breakfast, brunch, family gatherings, and dessert parties. This is a tried and true family recipe of over 60 years! 

Tried and True Swedish Pancake Recipe

eggs, room temperature

milk, warm to 70 degrees F

Whisk the eggs and milk until well combined. Add flour and salt. Whisk for an additional minute until well incorporated. Do not over mix.

Melt 1 teaspoon unsalted butter in a 9.5- 10-inch stainless steel pan over medium heat. Tilt the pan so the coconut oil or crisco coats the bottom. Pour in about 1/3 cup of the batter, then immediately pick up the pan and swirl it to spread the batter into an even layer on the bottom of the pan. Cook until the pancake has browned slightly on the bottom, 1 to 1 1/2 minutes and carefully slide a spatula underneath the pancake and flip it. Cook the second side briefly, just to set the batter, 15 to 30 seconds more. Tilt the pan and loosen the pancake, then slide it onto a wire rack, or serve directly on a plate and enjoy with toppings.

Continue making pancakes with the rest of the batter, adding more solid coconut or vegetable oil- 1 teaspoon at a time, as needed, to keep them from sticking. Stack the pancakes to keep them warm. To serve, fold the pancakes in four to form a triangle. Serve the pancakes with toppings, as desired. Enjoy!

Swedish Pancakes

all-purpose flour, sifted

In a large bowl, mix together sifted flour, sugar and salt. Set aside.

Next, In a smaller bowl beat the eggs.

Stir beaten eggs into flour mixture.

Add milk and butter. Stir until smooth.

Next, over medium-high, heat a pan or griddle. Spray with vegetable oil as needed.

Use a large spoon to pour batter on griddle. (About 4" pancakes) Cook for 2 to 3 minutes per side.

Authentic Swedish Pancakes Recipe

Grease a griddle or skillet with real butter (not margarine) and set the heat to medium.

Using a stand or electric mixer, thoroughly whisk the eggs in a medium bowl for 3 to 5 minutes until the mixture is uniformly bright yellow and thick.

Add the milk and stir to combine.

In a separate bowl, combine the flour, sugar, and salt. Whisk by hand to ensure even distribution.

Add the dry mixture to the egg mixture, stirring gently with a spatula until smooth.

Spoon the batter onto the griddle in tablespoon-sized batches.

Spread each spoonful until it’s thin and wide, then cook for approximately 1 to 2 minutes or until the bottom turns light brown. Then, flip the pancake and cook for another 1 to 2 minutes until that side is also golden brown.

Repeat until all the batter is gone.

Serve with desired toppings, and enjoy!
