Dice all veggies into bite size. Finely chop cilantro stems and leaves, leaving some leaves for garnish. 

In a small bowl mix oil, lime juice, lime zest, salt and cilantro. Add a dash of honey or sugar if needed for taste. 

Drain Trifecta shrimp and mix in a bowl with veggies. 

Toss shrimp and veggies in the cilantro dressing and serve.

Korean Fried Chicken {Yangnyeom Chicken}

chicken (about 16 drumettes and wingettes)

salt

black pepper

ginger

potato starch (or corn starch (or deep-frying mix))

onion

garlic

soy sauce

rice wine (or mirin)

chili sauce

gochujang (Korean red chili pepper paste)

corn syrup

sugar (or more to taste)

honey mustard

sesame oil

sesame seeds

Wash chicken wings, and drain thoroughly. Mix with the salt, pepper, and ginger. Marinate for 20 to 30 minutes.

Heat a pan over medium-low heat. Add 1 tablespoon of cooking oil and then the onion, garlic, and ginger. Stir for a minute until fragrant. Add all other sauce ingredients, and stir well. Simmer until it thickens slightly, about 4 to 5 minutes. Turn the heat off.

Remove any excess water from the marinated chicken. Add the potato (or corn) starch to the chicken, and toss well to coat evenly.

Add the oil to a deep fryer, wok, or large pot. Heat the oil to 320°F. Using tongs or chopsticks, drop the chicken in the oil, one piece at a time. Fry them in two batches. Cook until lightly golden, about 5 to 7 minutes, depending on the size of the chicken wings. Remove them with a wire skimmer or a slotted spoon. Drain on a wire rack or in a large mesh strainer set on a bowl.

Reheat the oil to 370°F. Add the chicken (you can do this in one batch for the second frying), and deep fry again, for 2 to 3 minutes, until lightly golden brown. Drain on a wire rack or in a large mesh strainer set on a bowl.

Heat the sauce over medium-low heat. Add the chicken, and stir well until the chicken wings are evenly coated. Sprinkle with sesame seeds to serve.

flank steak (sliced in thin strips against the grain)

water

cornstarch

In a medium bowl add beef, water, cornstarch and soy sauce. Toss to coat. Marinade for 30 minutes.

Heat oil in a large skillet over high heat. Remove the beef from the marinade and sear the beef until just browned, 2-3 minutes. Remove from the pan and set aside.

Add the red pepper and green onion to the pan and cook for 2-3 minutes or until tender. Add in garlic and cook for an additional minute.

Add the beef back to the pan along with the sauce. Cook until thickened, 2-3 minutes.

Fold in the Thai basil and cook until it’s just wilted. Serve immediately with green onions and sesame seeds if desired.

This delicious barbecue  is very easy to do even more so if you use the marinade powder (that&#039;s where I &quot;discovered&quot; this delicious Korean dish), but making it from scratch using a mini food processor or blender makes it almost as easy as opening a packet of  marinade mix.

Dwaeji Kalbi (Sweet and Spicy Korean Pork Barbecue)

kilo Pork Spareribs (2.2 lbs

Brown Sugar (packed)

Soy Sauce

Water

Mirin (sweet rice wine)

pc Red Onion (peeled and finely grated)

pc Apple (small size /

Garlic (minced)

Sesame Oil

Black Pepper

Red Pepper Chili Flakes (or ½ teaspoon Cayenne Powder)

pcs Green Onions (thinly sliced (optional))

SPRINKLE SUGAR

Sprinkle brown sugar over pork and mix well to evenly coat.

LET SIT

Let sit at room temperature for 10 minutes while preparing marinade.

WHISK

In a bowl, whisk together remaining ingredients.

TRANSFER

Transfer pork into a large sealable freezer bag. 

ADD MARINADE

Add marinade, press out excess air from bags, and seal.

TURN BAG

Turn bag over several times to ensure beef is evenly coated.

REFRIGERATE

Refrigerate for at least an hour (for pork cutlets/tenderloin) but preferably overnight (especially if using spare ribs).

HEAT GAS

Heat gas or charcoal grill to medium-hot.

DRAIN

GRILL PORK

Grill pork, turning once, to desired doneness, about 3 to 4 minutes per side.

GARNISH

Garnish with thinly sliced green onions, if desired.

SERVE

Serve whole pieces as a main course or cut into smaller pieces, using kitchen shears, for a starter or party nibble.

Preheat oven to 400°. Line a medium baking sheet with aluminum foil and fit with a metal cooling rack.

Cut onion into 1/2" rings, then separate every other ring, so that each ring contains two rounds of onion. Stir together brown sugar and cayenne pepper on a large shallow plate, then lay bacon on mixture to coat. Wrap doubled up rings with bacon, then set on baking sheet. Bake 30 to 35 minutes, or until bacon is crisp and golden. Serve with Ranch, if using.&nbsp;

Bacon Wrapped Pineapple

bacon (cut in half)

Preheat oven to 400F

Wrap each chunk pineapple in 1/2 slice bacon and secure with a toothpick. Place on a bakings sheet fitted with a baking rack.

In a small bowl, stir together the brown sugar and soy sauce.

Brush each bacon wrapped pineapple in the brown sugar mixture.

Bake for 25 minutes or until the bacon is crispy.

Prepare grill to 350 degrees. Add 6 large handfuls of applewood or cherry wood chips to the smoking boxes (we used 4 applewood and 2 cherries).

Place roast(s) on grill and close lid.

Cook for 5 hours on the grill adding charcoal as needed to maintain heat at least over 300 degrees or once the smoke has stopped, transfer the roasts into a slow cooker (high for 4-6 hours or low for 6-8 hours).
