Swiss Steak  is a perfect family dinner; it’s easy to make and can be cooked either in the oven or in the slow cooker. This dish has delicious tender beef in a rich tomato gravy and is perfect served over rice, noodles or mashed potatoes!

Swiss Steak

½ pounds round steak

flour

paprika

garlic powder

pepper

olive oil (or as needed)

onions (chopped)

carrots (chopped)

tomatoes

beef broth (10 oz)

Worcestershire sauce

cornstarch (optional, see note below)

Preheat oven to 350°F.

Using a meat mallet, pound meat to ½″ thickness.

Combine flour, paprika, garlic powder, pepper &amp; salt to taste. Dredge meat in flour mixture.

Heat 1 tablespoon of olive oil over medium heat in a dutch oven. Brown steaks on each side (adding additional olive oil if needed). Set aside.

Place onion &amp; carrot in the bottom of the pot. Top with browned steaks.

Add remaining ingredients except for cornstarch. Cover and cook for 2 ½-3 hours.

Serve over mashed potatoes.

all-purpose flour

vegetable oil, divided

onion, (cut in half, then thinly sliced)

garlic, (minced)

celery, (diced)

tomato paste

beef broth

smoked paprika

thyme

oregano

salt

black pepper

Set oven rack to lower third of the oven. Preheat to 325°F.

Season each steak on both sides with salt and pepper.

Place flour (1/2 cup) in a shallow dish. Dredge each piece of steak in flour on both sides, pressing to coat then shaking off excess.

Place dredged meat on a flat surface and tenderize using a needling device, until each slice is 1/4-inch thick.

Heat vegetable (4 tablespoons) oil in a Dutch oven or large ovenproof pot with a tight-fitting lid (also ovenproof). Over medium-high heat, without crowding the pan, (I browned 1 steak at a time) brown beef on both sides, about 2 minutes per side. Remove to a plate and repeat with remaining steaks, adding more oil as needed.

Add onion (1 medium chopped), garlic (4 cloves minced), and celery (3 stalks chopped) to pot and saute, on medium-low, until just tender, about 3-4minutes. Stir in tomato paste (1 tablespoon). Stir in beef broth (1 3/4 cups) and canned tomatoes with juice (14 ounces), scraping the bottom of the pot, to lift up all the brown bits.

Add smoked paprika (1 teaspoon), thyme (1/2 teaspoon), oregano (1 teaspoon), salt (1 1/2 teaspoons), pepper (1 teaspoon), and Worcestershire sauce (1 tablespoon) and mix.

Layer the meat back into the pot so it&#039;s submerged by the liquid and cover with the lid. Place in preheated oven and cook until the meat is very tender, 1 1/2-2 hours.

Swiss Steak Over Mashed Potatoes

olive oil

onion

garlic (minced)

lb. stew meat

salt & pepper (to taste)

carrots

tomato juice

bay leaves

peas

Idaho Potatoes

Tablespoons Salted Butter

Cream Cheese

Milk

Salt And Pepper (to taste)

In a large pot or skillet with high sides, sauté onions and garlic in olive oil over medium heat for 2 minutes. Stir in stew meat and sprinkle with salt and pepper. Brown meat completely. Stir in carrots, vegetable juice, bay leaves and thyme. Bring to boil, then cover and reduce to simmer for 1-2 hours.

Peel potatoes and rinse. Cut into even sized pieces and place into a large pot. Cover with cold water and sprinkle salt. Bring to boil, then reduce to simmer. Cook until fork tender, about 20 minutes.

Drain completely and place potatoes back into the hot pot. Mash potatoes with butter, cream cheese, milk, salt and pepper until desired consistency has been reached. Cover to keep warm.

Once meat in stew is fork tender, stir in frozen peas. Taste and adjust seasonings. Serve over mashed potatoes

We used to put the potatoes in during the last half hour of cooking, then some times serve over hot noodles. This looks so good over the mashed potatoes. Will try it next time I make it. Thanks for all the yummy recipes.

Easy Swiss Steak

beef cube steak

salt (My Y'all Salt works great here!)

vegetable oil

unsalted beef broth

1 (.87 to 1-ounce) packet brown gravy mix

Lightly season cubed steak with seasoned salt and dredge in flour.

Heat the oil over medium heat in a large deep skillet or Dutch oven. Sear the steaks in the oil for about 4 minutes on each side or until golden brown. Work in batches if necessary as to not crowd the pan.

Remove steaks from pan and set aside. Add beef broth, packet of brown gravy mix, and can of diced tomatoes with the juice.  Stir well, scraping the bottom of the pan.

Add the steaks back to the pan and bring to a boil. Reduce the heat to a simmer, cover, and cook for 1 to 1 1/2 hours or until meat is fork tender.

This is a fantastic recipe! It truly is easy, affordable, and delicious! I tried it once in the slow cooker - 6 hours on low - but the sauce took on a slight scorched taste (to me anyway). This time I have it cooking in the electric skillet, and it looks and smells wonderful! Thank you for sharing!
